Abstract

Generally, ginger is used by people in Batu Busuk Village for various purposes, for example as a mixture of food and drink ingredients. Red ginger has many benefits that are useful for health. During this pandemic period, the public's need for ginger has increased so there is a need for innovation in processed ginger products, one of which is instant red ginger powder. The processing of red ginger is combined with sugar and other spices can be added as a complement so that it becomes red ginger powder called ginger next level (JNL). Processed red ginger can later be used as a nutritious drink for health. Processing red ginger into red ginger powder increases the value of the quality of the food product in addition to its very useful properties. Red ginger powder can be an alternative food product for people who want to consume ginger drinks with an easy presentation that is brewed with warm water. In addition, the processing of red ginger powder can also be a profitable entrepreneurial field for the people in Batu Busuk Village. Through a demonstration of processing red ginger powder, it is hoped that it can provide an idea for an entrepreneurial product for nutritious drinks for the community in Batu Busuk Village.
