ANALISIS LOGAM BERAT Pb PADA SAUS TOMAT DAN SAUS CABAI YANG BEREDAR DI KOTA SURAKARTA SECARA SPEKTROFOTOMETRI SERAPAN ATOM

Abstract

ABSTRACT Saus adalah cairan kental yang terbuat dari tomat atau cabai yang mempunyai aroma merangsang mengandung air dalam jumlah yang besar, asam, gula, garam dan pengawet. Penelitian ini bertujuan untuk mengetahui ada tidaknya logam timbal serta untuk mengetahui berapa kadar cemaran logam timbal tersebut dengan menggunakan alat Spektrofotometer Serapan Atom kemudian dibandingkan dengan ketentuan SNI. Sampel dipilih secara acak. Sampel ditimbang sebanyak ± 5 gram kemudian dikeringkan kemudian dimasukkan ke dalam muffle furnace dan diabukan. Abu dimasukkan dalam beaker glass, dilarutkan dalam larutan aquaregia ± 5 ml kemudian dipindahkan ke dalam labu takar 10,0 ml. Sampel dalam bentuk larutan dianalisis dengan alat spektrofotometer serapan atom (SSA). Hasil penelitian menunjukkan bahwa sampel A, C, D mengandung Pb sedangkan sampel B tidak mengandung Pb. Kadar logam timbal (Pb) sampel A = 0,55695 ± 1,947 x 10-1, sampel B = 0,00 mg/kg, sampel C = 0,49995 ± 8,93 x 102 mg/kg dan sampel D = 0,51198 ± 0,2 mg/kg. Kadar logam timbal (Pb) dalam semua sampel saus tomat dan saus cabai yang dianalisis tidak melebihi batas maksimum ketentuan SNI 01-3549-2004 (A dan B) yaitu 1,0 mg/kg dan SNI 01-2976-2006 (C dan D) yaitu 2,0 mg/kg. Kata kunci : saus, logam timbal (Pb), SSA ABSTRACT Sauce is a kind of thick liquid which made of tomato or chili, it has a strong aromatic and taste that contains a lot of water, sour, sugar, salt and concentration stuff. The experiment to knowledge there or not of lead and to knowledge how much concentration of lead by using Atomic Absorbtion Spectrofotometric and then it will be compared with SNI. This method taken with random. Sample weighed in ± 5 grams and it is dried in the ovened kept in the muffle furnace and burned it out. The ash put into the beaker glass and the nex dissolved ± 5 ml of aquaregia and then put into dosage flask 10 ml. The liquid analized with the Atomic absorbtion Spectrofotometric. Sample contains of timbale is A, C, D and sample B not contains of timbale. The content of sauce are . All the content of tomato and chili sauce not more than 1,0 mg/kg (sample A and B) and 2,0 mg/kg (sample C and D) so can be declared that they still fill requiremdent that decided by SNI.
