Abstract

Background: Wasting and stunting status in children impacts growth and development. One of these efforts is providing supplementary food and local food-based recovery with regional specialties. The local plants can be fortified with food additives. Objective: To determine the effectiveness of fortification of Moringa leaf powder in soy milk to improve the nutritional status of children under five. Methods: The research design used a quasi-experimental design with a pre-test and post-test control design group approach. This study used total sampling with 15 children under five in the intervention and control groups. The intervention provided was education with toddler nutrition booklets and the provision of 100 CCs of soy milk that had been fortified with 0.32 mg. It was given for two consecutive months with a frequency of three to four times weekly. The control group was given education and nutrition booklets for toddlers. Results: The results of this study showed that there was a significant difference between the mean difference in body weight (BB) in the intervention group and the control group (p-value: 0.001 CI: -0.911-(-0.245)). However, the difference in mean height (TB) in the intervention group and the control group showed no significant difference (p-value; 0.157; CI 2.244 – 0.38)). There was a significant increase in nutritional status in the intervention group (p-value: 0,009 CI: (-1.159 – (-0.174) Conclusion: Fortification of Moringa powder in soy milk can increase the weight of toddlers with poor nutritional status.

Abstract

Background: Hypertension is the leading risk factor for cardiovascular disease development. Although hypertension in adults and the elderly is more common, adolescent hypertension has increased in the past two decades. Hypertension at an early age affects cognitive performance and increases the risk of cardiovascular diseases and premature death in the future. The risk factors of hypertension are often related to urban populations' unhealthy lifestyles. Objectives: To investigate the risk factors of hypertension among urban adolescents. Methods: This case-control study matched by age and sex was conducted between January – July 2021 in Tangerang City, Indonesia, involving 66 adolescents. Blood pressure was measured two times using Omron® automated sphygmomanometer. The BMI defines nutritional status for age. High-sodium food sources, fruit and vegetable, and coffee consumption were assessed using an SQ-FFQ. The statistical analysis used was a Chi-square test (95% CI). Results: The results show there is a significant relationship between nutritional status [p=0.001, OR (95%CI)= 6.133 (2.111 – 17.824)] and high-sodium food source consumption [p=0.001, OR(95%CI)= 6.824 (1.958 – 23.782)] with hypertension. There is no significant relationship between coffee [p=0.613, OR (95%CI)= 3,200 (0,315 – 32,475)], fruit [p=0.071, OR(95%CI)= 2.604(0.911– 7.445)] and vegetable [p= 0.125, OR(95%CI)= 2.222(0.795 – 6.211)] consumption with hypertension. Conclusions: Overweight and sodium consumption increases the risk of adolescent hypertension. These factors can be modified and improved by increasing a healthy lifestyle, mainly in the urban. Future strategic interventions addressing adolescents' unhealthy lifestyles (high consumption of fat, sodium, sugar, and low physical activity) should be considered.

Abstract

Background: The development of Industry 4.0 makes it easy to access everything, such as food and beverages. Online food order platforms are often used among students nowadays. The COVID-19 pandemic has caused changes in purchasing behavior through online order services, especially with the policy of limiting community activities. Beverages such as boba, several types of tea, and coffee are often ordered online. Consumption for a long time and high frequency can increase body mass index, obesity, and the risk of non-communicable diseases. Objectives: This study aimed to determine the impact of the development of online ordering behavior of consuming sweet drinks (SSB) during the COVID-19 pandemic among college students in Surabaya, Indonesia. Methods: This was an observational study using a Mixed Method research design. A quantitative study with a Cross-Sectional research design and a qualitative study through an FGD was done. Results: Based on the results of the descriptive test, it was shown that tea was the most frequently purchased (daily) through online orders (12.95%). Discount greatly influences the respondents' reasons for ordering online (68.4%). Through FGD, most respondents considered promos being the biggest motivation to order. Conclusions: Currently, most 'modern' drinks are included in the SSB category. Consumption of SSB with repeated frequency for a long time will impact nutritional status. Government policies and related parties are needed to minimize the impact of SSB consumption habits, especially with the current pandemic.

Abstract

Background: Coconut water is one of the natural food products that is widely available around the world. This commodity provides nutritional content that could increase rehydration status and improve health. The application of coconut water to health, including improving type 2 diabetes metabolism, has gotten research interest in recent years. Objectives: This narrative review paper aimed to summarize several articles about the nutritional content and the mechanism of the potential bioactive component in coconut water to improve type 2 diabetes metabolism. Methods: This study design was a narrative review of several articles from five databases search: PubMed/MEDLINE, Scielo, PsycINFO, Microsoft Academic, and Google Scholar. Discussion: Coconut water includes several biologically active components such as protein, amino acid, fatty acid, mineral, vitamin, and phenolic compounds. The recent discovery of nutrient content, especially antioxidant properties, and arginine in coconut water, signifies a good potential in improving type 2 diabetes mellitus. Antioxidant and arginine altered blood glucose, glycated hemoglobin, serum creatinine, blood urea, albumin, albumin/globulin ratio, liver function enzyme, lipid profile, antioxidant status, and lipid peroxidation without any significant hepatocellular damage. Arginine enhanced the nitric oxide synthase activity in the liver and arginine levels in the plasma. In mammals, the arginine-nitric oxide system, which includes AMPK, cGMP, PGC-1α, and PI3K, can maintain blood glucose homeostasis, increase insulin sensitivity, and prevent diabetes-induced oxidative stress. Conclusion: Coconut water can help to improve metabolism in type 2 diabetes mellitus conditions through antioxidant activity and arginine content.

Abstract

Background: Optimal nutrition care in hospitalized children is essential to improve the prognosis of diseases. One strategy is the implementation of Pediatric Nutrition care (PNC) in all hospitalized children. Objectives: to compare the macronutrient calculation in PNC with Angka Kecukupan Gizi (AKG). Methods: A cross-sectional study was conducted in hospitalized children aged six months to 18 at the Pediatric Ward Sanglah General Hospital, Denpasar, Bali, from January to December 2020. Macronutrient calculation in PNC using Recommended Daily Allowance (RDA) was compared with AKG in all subjects during hospitalization. The difference was analyzed using a paired-t test with significance if p-value < 0.05. Results: A total of 97 subjects were included, 52 male (53.6%) and 45 female (46.4%). Most of the subjects were aged above five years old (58.8%), well nourished (49.5%), had acute diseases (60.8%), and length of stay of fewer than seven days (66%). The mean calculation of carbohydrates, lipids, and protein according to RDA and AKG were 162.3 g vs. 250 g (p<0.001), 56.2 g vs. 65.9 g (p<0.001), and 60.9 g vs. 40 g (p<0.001), respectively. Conclusions: Protein calculation using RDA is significantly higher, conversely to carbohydrate and lipids is lower. Sick children commonly need more protein against their diseases, so using RDA to calculate the macronutrient requirement is recommended.

Abstract

Background: Dyslipidemia is a lipid metabolism disorder that causes changes in plasma lipoprotein function and/or levels of Triglycerides (TG), total cholesterol (TC), Low-Density Lipoprotein (LDL), and High-Density Lipoprotein (HDL). Administration of Medium Chain Triglyceride (MCT) is a non-pharmacological therapy that effectively improves lipid profiles and reduces the risk of dyslipidemia. Objectives: This study aimed to conduct a literature study regarding the role of MCTs in improving lipid profiles in dyslipidemic conditions. Discussion: MCT has a role in improving the lipid profile. One food source that contains MCT, which has a role in improving total blood cholesterol, TG, and LDL levels, is Virgin Coconut Oil (VCO). About 60% of MCFA in VCO consists of 52% lauric acid and 12% myristic acid, which can benefit lipid metabolism. In addition, foods containing MCTs have a role in lowering blood cholesterol levels and reducing TG levels. Not only do they play a role in reducing total cholesterol, TG, and LDL levels, but MCTs also increase HDL concentrations. Conclusions: MCTs have a role in improving lipid profiles in dyslipidemic conditions, namely by increasing HDL levels and lowering TG,  total cholesterol, and LDL levels.

Abstract

Background: Unhealthy dietary patterns and low physical activity during a pandemic can be risk factors for depression. Objectives: This study aimed to analyze the correlation between dietary patterns and physical activities toward depression levels during the pandemic among SMA N 1 Manyar Gresik students. Methods: This research used observational with a cross-sectional study design at SMA N 1 Manyar Gresik. The sample was 78 students from the 12th grade. The sampling technique used was simple random sampling. The data obtained were then analyzed using the Kendall Correlation test to determine the correlation between dietary patterns and physical activities on the depression level. Each variable was obtained by analyzing the Food Frequency Questionnaire, Food Recall 2x24 hours, International Physical Activity Questionnaire-Short Form, and Modified Beck Depression Inventory-II. Results: The results showed relationships between diet and depression levels. Diet was assessed from the frequency of the type of food that dominated in the last month and macronutrient intake. There were relationships between the frequency of food consumption that dominated in the last month and the depression level (p=0,003; r=0,319) and between macronutrient intake and depression level. Conclusions: The results showed the need to increase food consumption from the minimally processed foods group by paying attention to macronutrient intake and performing physical activity in moderate to high-intensity categories according to the recommendations of the adolescent age group to prevent depression.

Abstract

Background: Obesity is a global problem which increasing simultaneously. The high-fat accumulation in the body will result from mild chronic inflammation. Developing a local drink based on seagrapes (Caulerpa racemose) is thought to have a high antioxidant capacity and the potential to become an alternative therapeutic drink for obese people. Seagrapes are easily damaged, so proper drying is needed to maintain antioxidant potential and assisted by adding gum arabic to increase the acceptability. Objectives: To analyze the antioxidant capacity and sensory of sea grapes powder drink (Caulerpa racemose). Methods: The design experiment research was utterly randomized and only used one gum Arabic treatment with a 2.5, 5, and 10% concentration and three replication as sea grapes powder drink samples. The samples were analyzed to seek the antioxidant capacity of DPPH (2,2-diphenyi-1-picrylhydrazyl), CUPRAC (Cupric Ion Reducing Antioxidant Capacity), and FRAP (Ferric Reducing Antioxidant Power). Then research data were analyzed by employing ANOVA  and Duncan's follow-up test. Results: The higher concentration of gum Arabic has significantly increased the antioxidant capacity. DPPH, CUPRAC, and FRAP values in 10% gum Arabic concentration were 13.21±0.1 mg/100 g, 25.26±0.5 mg, and 2.89±0.3mg/g. Based on the sensory test results, the panelists preferred the 10% gum Arabic concentration because the color is lighter, can minimize odor and viscosity, and taste better. Conclusions: Seagrapes powder drink with a concentration of 10% gum Arabic has the potential as a therapeutic obesity with the highest antioxidant capacity and is sensory acceptable.

Abstract

Background: Adolescents tend to use online food delivery service applications rather than going to food stalls or restaurants to buy food, but most of the food and drinks offered contain high levels of fat, sodium, and sugar but are low in other nutrients. Currently, WhatsApp ranks first in the social media category with the most active users, with teenagers being one of the users. Previous studies have not yet analyzed behavior change and the effectiveness of each medium in the same study. Therefore, the authors are interested in conducting research by providing nutrition education interventions through WhatsApp through digital posters, audio, and video. Objectives: Analyzed the effect of nutrition education through social media on nutritional knowledge and menu selection in food delivery applications. Methods: This research design was quasi-experimental. This research was conducted in Bekasi in 2022, with the research sample being teenagers using food delivery applications and WhatsApp. The number of samples in this study was 111, divided into three groups: audio, poster, and video. Knowledge improvement was assessed by the results of pre-test and post-test questionnaires, while changes in menu selection were seen from the results of 2x24 hour Food Recall. Nutrition education was carried out four times with a frequency of 1 time a week through the WhatsApp group. The effect of nutrition education on knowledge and menu selection was analyzed using the Wilcoxon test, paired t-test, and Kruskal Wallis. Results: There was an effect of knowledge of balanced nutrition, so there was a significant difference in nutritional knowledge (p<0.05) in the subjects of the entire intervention group after being given the intervention. Likewise, the menu selection in the food delivery application experienced a positive change after the intervention (p<0.05). The subject began to choose nutrient-dense menus in the food delivery application. However, there was no difference in effectiveness between educational media (p>0.05). Conclusions: There is an effect of nutrition education using audio, poster, and video on menu selection in food delivery applications.

Abstract

Background: In diabetes mellitus patients, one of the efforts to control normal blood glucose levels is to eat low glycemic index foods. Rice is an Indonesian staple food that contains carbohydrates. Several methods of processing could affect the glycemic index of rice.   Objectives: To analyze the glycemic index of rice processed by several methods. Methods: The design used was quasi-experimental. A total of ten people with criteria of healthy, aged 19-29 years, having normal body mass index and blood glucose levels were used in this study. Subjects were given five treatments. Treatment: 1) was given glucose as a reference, 2) was given rice that was traditionally processed and just cooked, 3) was given rice that was traditionally processed and had been stored at room temperature (25°C) for 12 hours, 4) was given rice that was electronically processed and just cooked, and 5) was given rice that was processed in a modern way and had been stored for 12 hours in magic com at hot temperature. Among the treatments, there was a gap of 7 days. Results: Traditionally processed rice has a glycemic index of 21.6, increasing to 24.7 after being stored at room temperature for 12 hours. Meanwhile, processed electronic rice has a glycemic index of 22.9 and increases to 36,4 after being stored in a rice cooker (hot temperature) for 12 hours. Conclusions: The four rice groups processed by various methods had low glycemic index values. Rice stored for 12 hours had a higher glycemic index value than freshly cooked rice.
