Abstract

Tapioca cake is solid residue from tapioca extraction process consists of high fiber and remaining non-extracted starch. Tapioca cake can be used as a source of fiber-rich food ingredient. The researchwas aimed to analyze the effect of particle size and washing frequency of ground tapioca cake on physicochemical properties of the resulted flour. The flour was prepared by grounding the tapioca cake usingdisc mill, sieved to different particle size (40–60, 60–80, 80–100, and >100 mesh) and then washed withdifferent frequencies (without washed (0), washed 1, 2, 3, 4, 5, and 6 time). The physicochemical propertiesof flour evaluated were moisture content, starch content, total dietary fiber content, and rheologicalproperties. The results showed that different particle size of ground tapioca cake with and washing frequencyinfluenced the starch content, total dietary fiber content, and rheological properties of tapioca cakeflour. Ground tapioca cake with particle size of 60–80 mesh and washed four times resulted in the flour withmoisture, starch, and total dietary fiber content of 9,81, 27,36, and 44,12 percent; respectively, and withrheological properties of peak viscosity of 3266 cP, breakdown viscosity of 801 cP, and setback viscosityod 1725 cP.

Abstract

The critical moisture of corn cookies was 0,0674 gH2O/g solid. The sorption isotherm of corn cookies was evaluated using six equation models i.e. Hasley, Chen-Clayton, Henderson, Caurie, Oswin and Guggenheim-Anderson-de Boer (GAB). The best equation model to describe corn cookies sorption isotherm phenomenon was GAB. Calculation results showed that the shelf life of corn cookies packed in metalized polyethylene and stored at 85 percent relative humidity was 298 days.

Abstract

Physiological growth index is the representation of plant response to environmental factors. The application of phosphate fertilizers (P2O5) and phosphate solubilizing bacteria (PSB) are environmental factors that can be controlled to optimize plant growth. The effect P2O5 and PSB to sweet potato physiological growth indices has been investigated in the experimental field of the Faculty of Agriculture, Padjadjaran University in June 2014 to October 2014.The trial was designed as 5 x 4 factorial experiments in the randomized complete block and laid out in split-plots arrangements with two replications. The main plots were five sweetpotato varieties (Awachy 1, Awachy 2, Awachy 4, Awachy 5, and Kuningan Putih), while four combination P2O5 + PSB fertilizer levels (36 kg/ha P2O5 without PSB (BP0), 36 kg/ha P2O5 + PSB (BP1), 27 kg/ha P2O5 + PSB (BP2) dan 18 kg/ha P2O5 + PSB (BP3) constituted the sub-plots. The experimental results showed there were variation in crop dry weight (CDW), leaf area index (LAI), net assimilation rate (NAR) and crop growth rate (CGR) caused by a varieties factors. Variety Awachy 5 have the largest physiological growth indices. The application of 18 kg/ha P 2O5 + BPF (BP3) combination increase CDW, LAI, NAR and CGR on sweet potato varieties.

Abstract

Development of instant rice-corn is intended to provide an alternative of staple foods besides rice. Fortification of fiber (fiber addition) is done to replace the fiber loss during grinding and milling process aswell to improve the nutritional quality of instant rice-corn. In this study, the treatment is the addition of different fiber types on instant rice-corn, which is: without fiber (A), fiber agar-agar powder addition (B) and fiber agar-agar powder & carrot porridge (C). This study aimed to examine the sensory evaluation, chemicalcharacteristics, and costs of production of instant rice-corn. Based on the sensory evaluation, the productis accepted by the panelists with an assessment of rather preferred. Instant rice-corn with fiber agar-agarpowder & carrot porridge is the best treatment with chemical characteristics: water content 7,38 percent,ash content 1,04 percent, protein 5,06 percent, carbohydrate 69,90 percent, and crude fiber 3,48 percent.Costs production of 10 kilograms of instant rice-corn is Rp 116.348,00, the selling price is Rp 157.070,00per kilogram with a profit margin of 35 percent.

Abstract

Diabetes is one of the degenerative diseases that continue to increase from year to year and becomea global health problem. Diabetics need a food diet to maintain a normal blood glucose level. The adequatepattern of food consumption is a good solution for the diabetic people. Tempe is a food rich in bioactivecomponents that potentially to be antidiabetic through various mechanisms. The fermentation process ofsoybean to tempe can improve the health nutrition and reduce antinutrient substances that can be harmfulto health. The consumption of tempe as a part of good diet supported by good processing can be analternative therapy solution in the treatment of diabetes disease.

Abstract

Indonesia experiencing production surplus of onions, meanwhile the market price still fluctuating. There is an indication that the onion’s supply chain/distribution has not run well. Therefore, supply chain analysis is needed to determine the distribution of onions. Cold storage is the best storage technology to maintain onion`s quality and increasing the value added. The purpose of this research is to map the supply chain of onion in Bantul and determine the economic feasibility of onion’s cold storage in Cirebon so that the results of this research can be used as a reference for the development of cold storage facility in Bantul. This research uses supply chain performance analysis method, marketing efficiency, Hayami value added method and basic cost analysis. The analysis shows that there are four patterns of marketing channels in Bantul, the highest marketing margin held by retailers by Rp 4.500,00 and farmer’s share is highest in grade A as big as 66,67 percent, π/c value was centrally in distribution access no 4 by 13,90. The operational cost of cold storage is Rp 769,00/month/kg. The additional cost of cold storage is Rp 9.993,00/kg and traditional storage is Rp 6.900,00/kg with initial cost of Rp 35.000,00
