Abstract

This research was conducted to determine the effect of the ratio of yellow sweet potato flour to potato starch and drying time on the quality of instant pumpkin soup. This study used a factorial Completely Randomized Design method with 2 factors, namely: the ratio of yellow sweet potato flour to potato starch (T): (50%:50% ; 60%:40% ; 70%:30% ; 80%:20 %) and drying time (L): (18 hours ; 21 hours ; 24 hours). The results showed that the ratio of yellow sweet potato flour to potato flour had a highly significant different effect on water content, protein content, fat content, crude fiber content, carbohydrate content, water absorption, organoleptic value of aroma, taste, texture, and organoleptic value of general acceptance. Drying time has a very significant effect on moisture content, fat content, protein content, crude fiber content, carbohydrate content, water absorption, color value (ohue), and texture organoleptic value. The interaction between the ratio of yellow sweet potato flour to potato starch and drying time had a highly significant different effect on the moisture content, carbohydrate content, and water absorption capacity of instant pumpkin soup powder.

Abstract

The scarcity of palm plants has resulted in brown sugar producers choosing raw materials other than palm sap, namely palm sap. Palm sap is a concern of brown sugar producers as an alternative raw material for brown sugar production so that the business of making brown sugar continues. The purpose of this study was to analyze the structure of production costs and income of brown sugar farmers from palm sap, analyze the feasibility of making brown sugar from palm sap and analyze the factors that affect the income of brown sugar farmers from palm sap in Air Batu District, Asahan Regency. . This study uses a survey method. The method of determining the sample used is using purposive sampling method using certain criteria. The research sample was 15 farmers who were included in the criteria in Air Batu District, Asahan Regency. The distribution of the sample of farmers, namely; 5 people in Pinanggripan Village, 3 people in Lake Sijabut Village, 4 people in Sijabut Teratai Village and 3 people in Hessa Bay Water Village. The research data analysis method is hypothesis testing using the methods of cost analysis, income analysis, business feasibility analysis and multiple linear regression analysis. The results of the analysis of the costs and income of the business of making brown sugar from palm sap are profitable. The results of the production BEP analysis show that the production of brown sugar is an average of 5,501.67 Kg per month, where the production is greater than the calculated BEP of 5,281.67 Kg, so the brown sugar business is declared feasible to be cultivated. The results of the BEP price analysis show that the production price is an average of Rp. 12,000/Kg where the price of brown sugar is greater than the BEP calculation of Rp. 11,281,62/Kg, so the brown sugar business is declared feasible. The results of multiple linear regression analysis showed that the results of the classical assumption test for all research variable data did not experience problems. Sugar production, capital, number of plants and sap production simultaneously have a very significant effect on the income of brown sugar farmers from oil palm sap in Air Batu District. Sugar production and capital partially have a very significant effect, while the number of plants and production of sap partially have a very significant effect on the income of brown sugar farmers from oil palm sap in Air Batu District.

Abstract

Taratak Nagodang Village, Simalungun Regency is one of the dragon fruit producing villages in Ujung Padang District, Simalungun Regency, which has been cultivated by 45 farmers. The problems in this village are the lack of extensive marketing network and the weak bargaining position of farmers at harvest time. The purpose of this study was to determine the dragon fruit marketing channels, the amount of margin received by each marketing channel and the marketing efficiency of dragon fruit in Taratak Nagodang Village, Ujung Padang District, Simalungun Regency. The research was conducted in Taratak Nagodang Village by taking a sample of 16 people. The analytical method used is the formula: Margin: HP – HB and the efficiency formula: Ep = (TB/TNB) × 100%. Based on the results of the study it was concluded that there were 2 (two) marketing channels for dragon fruit that occurred in Taratak Nagodang Village, namely, the first channel: farmers consumers and the second channel: farmers collectors retailers consumers. The margin obtained in the first channel is Rp. 0,- and the margin obtained in the second channel is Rp. 8.000,-/Kg. Of the two marketing channels, the farmer's share obtained for the first marketing channel is 100% and for the second channel the farmer's share is 64.7% so that the first channel is more efficient because it is higher than the second marketing channel, even though the marketing channel one is more efficient, but in fact the marketing channel the second is more chosen by dragon fruit farmers in the village of Taratak Nagodang because it is faster in the sales process and does not want to bear the risk of losses for storage costs.
