Abstract

AbstractFood service is good if patient acceptance of food ≥ 80%. Patients acceptanceaffected by taste, habits/preferences eating, and appetite. Animal protein is a dish that rich of protein value as needed in the process of wound healing in surgical patients.The objective of this study is to determine differences in the acceptability of animaldishes based on taste, habits/preferences eating, and appetite in the various classes of inpatient surgical patients at Cengkareng Hospital. This study was a cross sectional study. Samples were obtained by purposive sampling technique. The statistical test used Mann-Whitney test. The study was conducted on 192 surgical patients.Based on the statistical test, there is difference of patients acceptance for animal side dish based on taste and appetite (p=0,001) and habits/preferences eating (p = 0.022). Logistic regression results obtained taste protective of acceptability. This means that good taste can prevent a lack of food acceptance in patients (OR = 0.761). Taste is the dominant factor that can affect the animal side dish acceptance in surgical patients in hospitals Cengkareng than taste, habits/preferences eating and appetite.Keywords: Food acceptance, taste, animal dish. AbstrakPelayanan makanan dikatakan baik jika daya terima pasien ≥ 80%. Daya terima pasien dipengaruhi antara lain oleh cita rasa, kebiasaan/kesukaan makan, dan nafsu makan pasien. Lauk hewani merupakan hidangan tinggi protein yang dibutuhkan dalam proses penyembuhan luka pada pasien bedah.Tujuan dari penelitian ini untuk mengetahui perbedaan daya terima lauk hewani berdasarkan cita rasa, kebiasaan/kesukaan makan, dan nafsu makan di berbagai kelas rawat inap pasien bedah di RSUD Cengkareng. Penelitian ini merupakan studi cross sectional. Sampel diperoleh dengan teknik purposive sampling sebanyak 192 sampel.Uji statistik yang digunakan adalah Mann-Whitney.Berdasarkan hasil analisis diperoleh ada perbedaan rata-rata daya terima lauk hewani berdasarkan cita rasa dan nafsu makan pasien (p=0,001) dan kebiasaan/kesukaan makan (p=0,022). Hasil uji regresi logistik didapatkan cita rasa protektif terhadap daya terima. Artinya cita rasa yang baik mampu mencegah kurangnya daya terima pada pasien (OR=0,761).Cita rasa merupakan faktor dominan yang dapat mem-pengaruhi daya terima lauk hewani pada pasien bedah di RSUD Cengkareng dibandingkan cita rasa, kebiasaan/kesukaan makan dan nafsu makan.Kata kunci: Daya terima, cita rasa, lauk hewani.
