Abstract

Quality is an absolute requirement used by product to compete in the global market. Therefore, as the competition is getting more tight , high-quality gambier products become an absolute demands that must be met. One of the steps that must be taken is continuous technological improvement. In this study, quality analysis of various raw gambier samples of Lima Puluh Kota regency and the Padang City in West Sumatera, and Musi Banyu Asin regency in South Sumatra was done. The results of dimensional measurement and weighing samples of Bootch Gambier, Lumpang Gambier, Wafer Block and Stick Gambier showed that the quality of raw gambier were very various. The variation occured because the drying process and storage of gambier were not good enough. The proximate analysis data showed, in terms of ash content, only two types of Gambier samples (Bootch CVR Gambier and Wafer Block CVR Gambier) that met quality requirements, whereas the Coin Gambier and Bootch CVA Gambier had a very high ash content (38.93 percent and 75.64 percent).

Abstract

Krisis pangan global merupakan salah satu masalah terpenting masyarakat dunia yang perlu diantsipasi dan dicari solusinya yang lebih baik, mengingat krisis tersebut dapat menyebabkan kelaparan, kemiskinan dan kerentanan sosial yang semakin kompleks, atau bahkan perang memperebutkan sumberdaya bahan pangan. Kecenderungan gagal panen akibat anomali cuaca mengisyaratkan agar pemerintah dan masyarakat harus cerdas mencermati kejadian, sumberdaya dan potensi pangan lokal, agar mampu memanfaatkannya secara optimal. Mengingat beras adalah komoditas penting yang rawan politis, maka selain diperlukan usaha peningkatan produksi dan produktifitasnya, juga diperlukan gerakan nasional pengurangan konsumsi beras yang lebih memaksa, bukan hanya sebatas himbauan seperti dahulu. Oleh karena itu diperlukan penggalakkan nasional penganekaragaman menu pangan non beras, dan penganekaragaman varitas tanaman, ikan atau ternak yang lebih bermanfaat bagi ketahanan pangan masyarakat Indonesia. Gerakan tersebut bukan hanya melibatkan peranan pemerintah, tetapi juga harus melibatkan seluruh lapisan masyarakat, agar konsep penngembangan produksi pangan dan konsumsi yang berkelanjutan dapat dilaksanakan. Agar kinerja gerakan tersebut efektif, efisien dan terpadu, diperlukan pemantauan produksi dan konsumsi pangan global dan dalam negeri sehingga dampak krisis pangan global akan dapat diantisipasi dengan baik. Kebijakan pemerintah yang seyogianya diperbaiki adalah memperkuat pengembangan produksi pangan domestik, mengembangkan industri pengolahan dan industri pengawetan yang mengubah komoditas-komoditas unggulan daerah menjadi ragam pangan yang citarasanya enak, tahan simpan dan terjangkau harganya, serta industri distribusi (rantai pasok) yang efektif dan efisien.Global food crisis which is the most important problem faced by humankind needs proper and urgent solution, since the crisis might lead to the problems of hunger, poverty and complex social tensions, or even war in securing food supplies. The sharp spike in hunger has hit the lowest income people in developing countries, including Indonesia. The failure of harvest due to the weather anomaly gives an indication that government and community have to cleverly observe the evidence, and find the local food resources and potency to be optimally utilized. Considering that rice is very important political commodity, its production and productivity have to be increased, along with the national movement for the community to reduce the consumption of rice. Therefore, a national program of non-rice food diversification is urgently needed, coupled with the diversification of cultivated varieties of plant, animal or fish to increase food security in Indonesia. The above movement should not only involve government institutions, but embraces all layers of the society, so that the concept of sustainable food production and consumption can be accomplished. To ensure the effectiveness, efficiency and integration of the movement, a good monitoring of global and domestic food production and consumption should be done, so that the impact of global food crises can be anticipated well. However, the Indonesian government should also improve its policy on the strengthening of domestic food security, by developing food processing and preservation industries which convert prime local commodities to various food meals with excellent taste, long shelf live, inexpensive, as well as improving food supply chains in the domestic market.
