Abstract

Penelitian ini bertujuan untuk mengetahui masa simpan produk stik rumput laut Kappaphaycus alvarezii difortifikasi dengan tepung udang rebon (Mysis sp.) dalam kemasan polipropilen. Penelitian dilaksanakan pada bulan Desember 2015 sampai dengan Januari 2016. Metode yang digunakan adalah Accelerated Shelf Life Testing (ASLT) melalui model Arrhenius produk disimpan pada suhu (30ºC, 40ºC dan 50ºC). Analisis yang digunakan adalah pengukuran nilai Thiobarbituric Acid (TBA). Hasil penelitian disimpulkan bahwa umur simpan stik udang rebon pada tiga suhu penyimpanan sesuai batas kritis nilai TBA produk pangan oleh FDA (Food Drug Administration) United States berdasarkan reaksi ordo nol, jika disimpan pada suhu 30ºC umur simpannya adalah 138,88 hari, pada suhu 40ºC umur simpannya adalah 133,96 hari, dan pada suhu 50ºC umur simpannya adalah 129,49 hari. This study aims to determine the shelf life of Kappaphaycus alvarezii seaweed stick fortified by rebon shrimp flour (Mysis sp.) in polypropylene packaging. The study was conducted from December 2015 to January 2016. The method used was Accelerated Shelf Life Testing (ASLT) through the Arrhenius model the products were stored at temperatures (30ºC, 40ºC and 50ºC). The analysis used is the measurement of Thiobarbituric Acid (TBA) values. The results of the study concluded that the shelf life of rebon shrimp sticks at three storage temperatures is in accordance with the critical limit of TBA values of food products by the United States FDA (Food Drug Administration) based on zero order reaction, if stored at 30ºC the shelf life is 138.88 days, at 40ºC the shelf life is 133.96 days, and at 50ºC the shelf life is 129.49 days. Abstract

Penelitian ini bertujuan untuk mengetahui keberadaan Salmonella sp. pada Yelowfin Tuna (Thunnus Albacores) yang dipasarkan di Kota Gorontalo. Dilakukan pengujian Total Plate Count (TPC) dan pengujian Salmonella sp. Hasil penelitian menunjukkan bahwa sampel tuna segar terkontaminasi mikroba dengan jumlah tertinggi 3X106 CFU/g sehingga tidak memenuhi Standar Nasional Indonesia ikan segar (2729-2013). Sampel tuna loin dan tuna tumis negatif Salmonella sp., sedangkan tuna segar positif Salmonella sp.. This study aims to determine the presence of Salmonella sp. in Yelowfin Tuna (Thunnus Albacores) in Gorontalo City markets. Total Plate Count (TPC) and Salmonella sp. tests were conducted. The results showed that fresh tuna samples were contaminated with microbes with the highest amount of 3X106 CFU/g therefore failed to meet the Indonesian National Standard of fresh fish (2729-2013). Samples of loin and sauteed tuna were negative from Salmonella sp., while fresh tuna samples were positive. Katakunci: Salmonella sp.; Yellowfin Tuna; Thunnus albacores; mikroba; TPC. Abstract

Penelitian ini bertujuan untuk menentukan perbandingan kuantitas es curah : ikan yang terbaik untuk mempertahankan mutu organoleptikdan mikrobiologis ikan nike (Awaous melanocephalus) segar dalamcool box berinsulasi yang dipasarkan berkeliling. Penelitian ini menggunakan metode Rancangan Acak Lengkap (RAL) faktorial dengan 2 kali ulangan. Penelitian ini terdiri dari 2 faktor,faktor I adalah perbandingan es curah : ikan nike(1) 1:1 denganwadah tanpa insulasi sebagai kontrol dan (2 1:1; 3 1:2; 4 1:3) dengancool box berinsulasi, sedangkanfaktor II yaitu lama pemasaran (1 = 10 Jam, 2 = 20 jam dan 3 = 30 jam). Parameter yang diamati yaitu mutu organoleptik dan TPC. Hasil penelitian menunjukkan bahwa perlakuan 2dengan 2, dan perlakuan 3dengan1mampu mempertahankan mutu organoleptik dengan nilai 7 sesuai dengan SNI 01-2729.1-2006.Perlakuan 2 memiliki rata-rata nilai log TPC 5.64 cfu/g, sedangkan lama pemasaran 1 memiliki rata-rata nilai log TPC 5.40 cfu/g. Perlakuan tersebut mampu menghambat pertumbuhan bakteri, di mana rata-rata nilai log TPC berada di bawah batas maksimum jumlah cemaran mikroba yang ditetapkan dalam SNI 01-2729.1-2006 (5x105 cfu/g atau nilai log TPC 5.70 cfu/g) sehingga masih layak untuk dikonsumsi.

Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh perendaman larutan belimbing wuluh (Averrhoa bilimbi L), jeruk nipis (Citrus aurantifolia Swingle) dan cuka aren (Arenga pinnata) yang mengandung asam terhadap karakteristik mutu kimiawi tepung ikan manggabai (Glossogobius giuris). Rancangan penelitian ini adalah Rancangan Acak Lengkap Tunggal (RAL) dengan 3 ulangan. Hasil analisis sidik ragam menunjukkan bahwa perendaman dengan larutan asam (belimbing wuluh, jeruk nipis dan cuka aren) memberikan pengaruh nyata terhadap karakteristik kimiawi berupa kadar air, abu tak larut asam, protein dan lemak. Secara keseluruhan, perlakuan yang menggunakan perendaman larutan jeruk nipis (T3) menghasilkan kualitas tepung ikan terbaik berdasarkan SNI dengan kadar air (2,74%), kadar abu tak larut asam (0,94%), kadar protein (40,17%) dan kadar lemak (2,15%). This study aims to determine the effect of immersion of starfruit solution (Averrhoa bilimbi L), lime (Citrus aurantifolia Swingle) and palm vinegar (Arenga pinnata) containing acid on the chemical quality characteristics of manggabai fish flour (Glossogobius giuris). The design of this study was a single Complete Random Design (CRD) with 3 replications. The results of analysis of variance showed that soaking with acidic solution (starfruit, lime juice and palm vinegar) had a significant effect on chemical characteristics such as water content, insoluble ash, acid, protein and fat. Overall, the treatment using lime solution immersion (T3) produced the best quality of fish flour based on SNI with water content (2.74%), acid insoluble ash content (0.94%), protein content (40.17%) and fat content (2.15%). Abstract

This study aims to determine the effect of the type of packaging and storage time at room temperature on the quality of shredded eel (Anguilla sp.) Especially in TBA (Thiobarbituric acid). The main research used the experimental method. Especially to determine the TBA value using a Completely Randomized Design (CRD) 3 × 4 factorial and 2 replications. TBA value of shredded eel during storage increased. The results of the analysis with the use of different packages during storage have a very significant effect on the increase in TBA values. The highest TBA value in eel shredded for up to 56 days storage was TBA in plastic jars of 0.3849 mg / kg and the lowest in vacuum plastic packaging of 0.1439 mg / kg. Abstract

This research aims to determine the best substitution for lindur fruit flour (Bruguiera gymnorhizza) on the quality characteristics of Kolombengi cake. This research consisted of 3 stages, namely making lindur fruit flour (Bruguiera gymnorhizza), formulation of Kolombengi cake and characterization of the organoleptic and chemical quality of Kolombengi cake. The treatment in this research was a concentration of lindur fruit flour (Bruguiera gymnorhizza) of 30%, 40% and 50%, which is a substitute for wheat flour in making kolombengi cakes. Analysis of the data used for chemical testing uses analysis of variance (ANOVA), then the determination of the selected product is carried out using the Bayes test. The research results showed that the kolobengi cake which was substituted with lindur fruit flour with a concentration of 40% was the selected product which contained 12.52% water, 1.12% ash, 5.28% protein, 2.35% fat and 78.74% carbohydrates.
