Abstract

The crab meat analogue products using alginates and proteins such as soybean. A mixture of sh added alginate croslinking with calcium chloride making gel and water retention. The purpose of this study to analysis macronutrient from the effects of alginate addition to the characteristics of the crab meat analogue. The formulation was made from the combination of alginate from Sargassum sp. The formulation was applied to the surimi from silver giddy (Gerres Kapas Blkr) to make crab meat analogue with different concentrations (0.25%, 0.5%, 0.75%, 1%). Parameters used to study the effects were moisture content, total ash, protein content, fat content, thiobarbituric acid value and sensory evaluation. The chemical analysis, moisture content, and ash content analysis showed a signi cant difference among the treatments, while the thiobarbituric acid value showed no difference among the samples. Based on sensory evaluation, the most preferred product was formula A (0.25% alginate) in terms of texture, taste, juiciness and overall acceptance with the characteristics of 2.47% ash content, 75.98% moisture content, 0.47% fat content, 12. 07% protein content, thiobarbituric acid value of 0.69 μmol/g. Abstract

Pada penelitian ini, telah dilakukan verifikasi uji potensi antibiotik produk erythromycin ethylsuccinate (EES) dengan metode cylinder plate. Hasil pengujian menunjukkan potensi antibiotik, simpangan baku relatif (SBR) uji presisi, uji akurasi, dan R2 uji linearitas yaitu 107,03%, 0,95%, 105,00-108,70 %, dan 99,90% berturut – turut. Dari hasil pengujian, dapat disimpulkan bahwa produk EES telah memenuhi syarat keberterimaan yang telah ditetapkan dalam standar acuan USP 41 2018 dan AOAC 2016.

Abstract

Tujuan dari penelitian ini adalah untuk mengetahui pengaruh material titanium dioksida (TiO2) food-grade terhadap degradasi pewarna metilene blue (MB) di bawah sinar matahari. Massa material TiO2 pada larutan MB divariasi untuk mengetahui berapa jumlah TiO2 yang dibutuhkan. Hasil degradasi terbaik ditunjukkan oleh sampel dengan penggunaan TiO2 sebanyak 5 g dengan waktu 2 jam. Dari data – data yang diperoleh juga didapatkan hasil bahwa sinar matahari tidak berpengaruh banyak terhadap proses degradasi MB dengan kata lain TiO2 foodgrade tidak memiliki aktivitas fotokatalitik.

Abstract

A research related to the production of  alkali treated cottonii (ATC) had been carried out in order to study the effect of chopping step and drying techniques on the quality of ATC produced. Four treatments were applied in the experiment, namely was copping before sun drying (treatment A); chopping after sun drying (B); chopping before mechanical drying (C); and chopping after mechanical drying (D). The quality parameters of ATC measured were gel strength, moisture content, viscosity, yield, and whiteness. The results showed that the quality of ATC was significantly affected by chopping step and drying technique, especially in ATC gel strength, viscosity and yield. However, the effect of chopping step and drying technique was insignificant to ATC moisture content and whiteness. Chopping seaweed before drying resulted in higher gel strength of the ATC but lower in yield, while chopping after drying tended to result in lower gel strength but higher viscosity and yield.
