Abstract

The rsearch of coconut fiber has been carried out to determined isotherm sorption and rate of weight decrease during drying. Isotherm sorption was done by adjusting room water activity which are 10%, 35%, 65%, 90% and 99%. The calculating data of research show linier regression with equation Y= 0.336156 X - 0.02038, R2= 0.9743, C=15.49 and m0=3.16. decreasing weinght of fiber was studied to find out the effect of amount of layer (1, 3 and 5 layers) and drying temperature (50 C, 60 C and 70 C). The result show that the temperature has no significant effect while amount of layer very significant to the dryness of fiber. The highest k value was found in the 1 layer treatment between 0.47912 - 0.85270, while the lowest k value found in the 5 layers treatment those are vary between 0.16770-.19793.

Abstract

The study on the effect of oil extraction methods of red fruit using of amount water on the characteristic of red oil has been conducted. There were two methods used in this study,i.e:wet rendering using the water and dry rendering using the steam. In wet rendering the process was included a traditional process nd developed/modified of traditional process by using comparison between red fruit and water are1:2 anf 1:4;mean while dry rendering consist of blenders-steam-press and steam-blender-press.The result showed that the best treatment of oil extraction for red fruit were using the developed/modified of traditional process by using comparison between red fruit and water in 1:4 with have characteristic of red oil were followed :the yield of oil 4.61%,moisture content 3.54%,free fatty acid 2.96%,oleic acid 57.41%,beta-caroten 604.53 part per million (ppm) and a-tocoperol 416.82 ppm;mean while the best treatment for dry rendering (stem-blender-press)have resulted characteristic of red oil as follow :the yield oil 10.19%,moisture content2.14%,free fatty acid 2.84%,oleic acid 58.12%,beta-caroten 655.17 ppm and a-tocoperol 453.28 ppm.The result of analysis red oil not indicated content of trans fatty acid.

Abstract

Curcuma is a jind of spices which is usually in household as food and it is also useful in the traditional medicine.Curcuma contents curcumin which usually used as a coloring agent for food. The curcuminoid can be extacted from spice by using an organic solvent. In this experiment extraction was done by using ethyl ethanol with the concentration of 70,82 and 95% and particle sizes of 20,40,60 and mesh. The extraction was carried out at  40 degree C for 5 hours. The result showed that the yield increased with the increase of solvent concentration and the increase of particle size. The curcumin content also increased with the increase of solvent concentration and particle size. The highest result of oleoresin was 28.11% with the curcumin content of 7.50%.

Abstract

Garlic, obtained from Central Java, was distilled using cohobation method. The distillate was collected within 2.5 hrs. after first drop of oil produced. The treatment given was the storage of minced garlic at room temperature for 0,1,2,3 and 4 days before distillation. The highest yield, 0.122%, was obtained from garlic of 1 day storage. The refractive index of the oil ranged from 1.5701 to 1.5795, while the specific gravity was 1.0907 - 1.1123.

Abstract

Design and performance testing study of the dryer and the clarifyer equipments of Virgin Coconut Oil (VCO) has been done for producing better quality of the product. The power of the electrical motor for stirrer of the dryer used was 5 hp and it has reduced from 1500 rpm to 300 rpm using gear box T.S. 80 type and finally become 4 rpm on the stirrer in order to running well. Electrical motor connected to the timer apparatus to change the rotation of the dryer which automatically work well so that the grated coconut meat to be dried accepted the heat energy uniformly. The flow direction of the refinery of oil and the fluid (mix of the oil and water) from the bottom of the refine equipment was raised up and then went down to the bottom, so that the oil product did not break to the treatment of heat. According to this indicated that the stirrer apparatus could worked well. Analytical result shows that the VCO moisture content is 0,11 %, free fatty acid is 0,22 % and lauric acid is 49,92 %. The whole of equipments system process is running well. Drying rate of water at 70 C, condition is 7,9% (w/w) per hour, heating efficiency is 18,99% at 6 hours drying time, capacity of dryer 231,1 kg per batch, efficiency of the refinery oil per batch 97 %.
