Abstract

Potato and sweet potato starch were formulated to be a product of BST exhibiting prebiotic activities. The BST were developed under different rasio of potato and sweet potato starch (A1 = 25:75; A2 = 50:50; A3 =75:25). The BST dough were mixed and prepared under different temperature of mixing (B1 = 60 °C; B2 = 70 oC and B3= 80 oC). Based on the overall sensory evaluation, the best formula was of potato and sweet potato starch 75:25. However, higher values of prebiotic index and short chain fatty acid content were observed from the formula of potato and sweet potato starch of 25:75, compare to that of the rasio 75:25. The possible reason of this was that the sweet potato contain higher resistant starch. Keywords: starch, prebiotic, retention RS, prebiotic index, SCFA

Abstract

Durian seeds contain mucus which is water-soluble polysaccharides (WSP) that is both hydrocolloids. Hydrocolloid material can improve the quality of food products in terms of viscosity, stability, texture, and appearance. Crude extract WSP contain high protein by 19,984 % db. High level protein in crude extract WSP durian seeds can produce the physico-chemical properties, especially as a thickener and stabilizer for coconut water sauce. The purpose of this research is know the influence of the addition crude extract WSP from durian seeds for physical and sensory of coconut water sauce and get better formulation which favored. This research is application of crude extract WSP for coconut water sauce production. The concentration of the addition of crude extract WSP is 0 % (T0), 0.1 % (T1), 0.2 % (T2), 0.3 % (T3), and 0,4 % (T4) for each treatment. The result of analysis indicates that the addition of crude extract WSP showing real influence on viscosity, total dissolved solids, and sensory properties. The addition of crude extract WSP showing not real influential for color intensity (chroma) and lightness. The addition of crude extract precise in manufacture of coconut water sauceis the treatment T2 based on the storage stability test for 4 weeks, with a viscosity value of 85.05 mp; 0Brix 67.67 total dissolved solids; 19.89 chroma color intensity; and lightness 41.34o. The addition ofcrude extract WSP durian seeds favored by organoleptic tests at weeks-0 is the T4 treatment with avalue of aroma, flavor, and color are respectively 3.44; 3.92; and 3.84 (hedonic scale rather like to like). Viscosity value sand over all impression are respectively 4.40 and 4.16 (hedonic scale like to really like).Keywords: durian seeds, water-soluble polysaccharides, hydrocolloids, coconut water sauce

Abstract

Star apple is a seasonal local fruit that is commonly found in East Java, Indonesia. This fruit contains high fiber and antioxidants, however the utilization was not optimal specially at the harvest season, so it requires for further processing. Star fruit apple processing into fruit leather would expected to resolve this problem. Plasticity is an important parameter in fruit leather quality which can be influenced by binding agent, sugar, and acid composition. Therefore, the aim of this study was to determine the best concentration of binding agent that can produce star apple fruit leathers with good characteristics and preferred by consumers. The concentration of CMC and carrageenan used in this study were 0.1%; 0.3%; 0.5%. Physicochemical data were analyzed by ANOVA (α = 5%) and DMRT, while preference were analyzed using Chi-square test (α = 5%). The best treatment determination was using scoring analysis. The result showed that 0.3% carrageenan was the best treatment to produce star apple fruit leather with 54.48 lightness; 348 g/ 2 mm texture; 17.99 KPa tensile strength; 9.03% elongation; 2.68% syneresis; 22.49% water content; and 6.11% crude fiber content. While the color, aroma, texture, taste, and overall preference were as follows 73.33%; 63.33%; 73.33%; 60%; and 66.67% respectively. Keywords: CMC, carrageenan, fruit leather, star apple

Abstract

Gembolo is plant tubers that potentially applied in food as the tubers has a high content of glucomannan which can improve the texture of food products. Gembolo flour can be used as substitution for wheat flour in the manufacture of dried noodles. Blanching improved the brightness of gembolo flour. This study aimed to determine the substitution and blanching treatment which produced dried noodles with the best physical, chemical, and organoleptic characteristics. Parameters that analyzed in this research were color, rehydration, expand ability, cooking loss, elasticity, moisture content, ash content, fat content, protein content, carbohydrate content, and organoleptics. The best treatment based on effectivity test was A1B1 (10% substitution concentration of gembolo without blanching flour) with the following characteristics: L (Lightness) 55,40, rehydration 140,47%, expand ability 127,64%, elasticity 25%, cooking loss 6, 00%, moisture content 9,53%, ash content 1,50%, fat content 1,54%, protein content 14,46%, carbohydrate content 73,24%, scores for preference color 3,16, texture 3,16, taste 3,64 and overall preference 3,20.Keywords: gembolo flour, substituent, dried noodle
