Abstract

Super red dragon fruit peels extract (Hylocereus costaricensis) can be used to increase the macro-nutrients of dry noodles food consumption were more variable for the wider community and encourage the diversification of business people as well as meeting the needs of macro nutrients. Based on this background, it was required to investigate the effect of dragon fruit peel extract introduction dry noodles production in terms of levels of DPPH and consumers acceptance. The purpose of this study was to determine the addition effect of super red dragon fruit peels extract (Hylocereuscostaricensis) for DPPH and consumer acceptance of dry noodles. The experimental design used was the single randomized design (SRD). The data analysis was done as ANOVA with confidence interval of 5% and 1%. If significance is detectted, further data analysis is continued by LSD. For organoleptic test using Friedman test. The best treatment using the modified method of de GarmoSusrini.The conclusion of this study was that the addition of super red dragon fruit peels extract (Hylocereuscostaricensis) very significant effect on DPPH and consumer acceptance of dry noodles. The best treatment was the addition of super red dragon fruit peels extract of 20 ml with the following characteristics: moisture content of 4.567%; intensity of the red color (a +) 18.133; antioxidant (DPPH) 2.348%, ash content of 1.904%, the protein content of 14.661%, and the average of panelist preference level for color4.70; flavor 4.80; aroma 4.30; texture 4.90 which was between like and really like.Keywords: Antioxidan, DPPH, dragon fruit peel, dry noodle

Abstract

Nasi adalah makanan pokok bagi sebagian besar masyarakat Indonesia. Salah satu cara untuk menanggulangi usia pendek produktivitas padi Indonesia adalah untuk membuat nasi analog. Analog Beras tepung mocaf berdasarkan lebih dikenal sebagai moca friceis satu produk yang telah dikembangkan Badan Ketahanan Pangan (FSA) untuk Jawa Timur untuk mengantisipasi krisis pangan akibat cuaca ekstrem. Dalam rangka memenuhi nilai gizi kebutuhan protein dari konsumen akan memerlukan penambahan sumber protein dalam pembuatan beras mocaf. Salah satu alternatif sumber protein adalah konsentrat protein dari daun kelor. Berdasarkan latar belakang tersebut, maka perlu penelitian tentang pengaruh penambahan sifat Moringaleaf concentratesonphy sicochemical dan organoleptik beras mocaf. Tujuan dari penelitian ini adalah untuk mengetahui pengaruh konsentrasi pada sifat fisik kimia daun kelor dan organoleptik moca FRICE. Tujuan dari penelitian ini adalah untuk mengetahui pengaruh konsentrasi pada sifat fisikokimia daun kelor dan mocafrice organoleptik. Desain eksperimental yang digunakan adalah arandomized rancangan dengan asingle (RAT). Dalam penelitian ini terdiri dari perbedaan satu pengobatan factoris dalam penambahan moringaleaf konsentrat (A) dengan penambahan lima sub-faktor berkonsentrasi Moringa daun 0%, 2%, 4%, 6%, 8% / dan 10% (w / w). Analisis data dilakukan dengan ANOVA interval kepercayaan 5% dan 1%. Jika ditemukan pengaruh pada satu variebelthen diikuti oleh sedikitnya uji perbedaan yang signifikan (LSD). Untuk uji organoleptik menggunakan uji Friedman. Pengobatan terbaik menggunakan methodde dimodifikasi Garmo Susrini. Kesimpulan dari penelitian ini adalah bahwa penambahan protein daun kelor berkonsentrasi efek yang sangat signifikan pada chemicall fisik dan sifat organoleptik mocaf beras. Pengobatan terbaik adalah penambahan ekstrak kelor protein daun konsentrat sebesar 4% (w / w) adalah penambahan 4 g protein daun kelor berkonsentrasi di 100 gram tepung mocaf dengan karakteristik sebagai berikut kadar air 12,06%; kadar protein 3,66%; abu konten 1,84%; kadar serat kasar 2,86%; waktu memasak 127,64 sandaver kedua usia warna 4,5; merasakan 4.30 dan bau 3,50.

Abstract

Buah mangrove jenis lindur (Bruquiera gymnorrhiza) mengandung energi dan karbohidrat cukup tinggi melampaui berbagai jenis pangan seperti beras, jagung singkong atau sagu. Nugget lindur merupakan alternatif diversifikasi olahan yang belum banyak dilakukan. Tujuan dari penelitian adalah mengetahui pengaruh penambahan tepung lindur terhadap karakteristik nugget ikan yang dihasilkan, serta mengetahui konsentrasi tepung lindur yang tepat untuk menghasilkan nugget yang mempunyai karakteristik baik sesuai dengan standar nasional tentang nugget (SNI 01-6683-2002). Penelitian menggunakan metode eksperimen Rancangan Acak Kelompok (RAK) faktor tunggal, terdiri dari 5 perlakuan kombinasi penambahan tepung lindur dan tepung panir dengan konsentrasi : P1 = 0% dan 30%, P2 = 10% dan 20%, P3 = 15% dan 15%, P4 = 20% dan 10%, P5 = 30% dan 0%, dengan 3 kali ulangan pada masing-masing perlakuan. Penelitian meliputi analisis fisiko kimia tepung lindur dan nugget lindur ikan lele dumbo yaitu intensitas warna menggunakan Chromameter, kadar air, karbohidrat, lemak, protein, dan serat kasar. Analisis organoleptik meliputi rasa, warna, aroma dan tekstur. Hasil analisis tepung lindur adalah kadar air 9,24%, lemak 2,97%, protein 2,79%, karbohidrat 84,20%, serat kasar 23,83%, sedangkan intensitas warna L (Lightness), a+ (kemerah-merahan) dan b+ (kekuning-kuningan) berturut-turut adalah: 53,00; 23,00; dan 9,60. Perlakuan kombinasi tepung lindur dan panir pada konsentrasi yang berbeda berpengaruh sangat nyata pada nilai kadar karbohidrat, intensitas warna L, dan a+, berbeda nyata pada nilai warna b+, tapi tidak berbeda nyata pada nilai kadar air, protein, dan lemak. Kadar karbohidrat dan serat kasar cenderung meningkat dengan penambahan konsentrasi tepung lindur, sedangkan kadar air, protein, dan lemak menunjukkan nilai yang variatif.

Abstract

The study's goals were to determine the impact of community empowerment for the springs and forest preservation in the Arjuna mount area from the environmental communication perspective. The quantitative descriptive research method was used, with the study population covered communities around the forest and springs that were domiciled in three villages, namely Leduk, Jatiarjo, Dayurejo Villages, Pasuruan-East Java, Indonesia. Data was gathered from respondents with a questionnaire and analysed using SEM (structural equation modelling) to find an overview of respondents' responses about community participation in preserving the Arjuna mount forest. Human resources around the forest, namely the level of education and employment, contribute to the success of revegetation of forests; family economic conditions such as personal and family income, ownership of fields and rice fields for business, and livestock and fisheries businesses assist successful forest revegetation; social characteristics of the community around the forest such as cooperation and kinship between community members contribute to forest revegetation; community institutions, namely forest village community institutions, are a vehicle for the community to revegetate forests successfully; the availability of village community facilities and infrastructures such as paved road access, transportation and communication networks, education and health facilities contribute to the successful revegetation of Arjuna mount forest.

Abstract

Snakehead fish was a fish that has a high albumin content. Snakehead fish was used in the health sector known as medicinal freshwater fish, to accelerate the process of healing wounds after surgery and childbirth. The purpose of this study was to analyze the relative mobility (Rf) of the snakehead fish (Ophiocephalus striatus) albumin isolates by steaming at different temperatures and times. The research method for analyze the relative mobility (Rf) of the snakehead fish (Ophiocephalus striatus) albumin isolates by using gel filtration column chromatography, was detected by the SDS-PAGE electrophoresis method. Electrophoresis was carried out at a constant voltage of 125 v/ slab. Gel staining was carried out with Commasie Brilliant Blue R-250 in methanol-acetic acid-water. A standard protein mixture consisting of: myosin (200.0 kDa), β-galactosidase (116.3 kDa), phosphorylase B (97.4 kDa), bovine serum albumin (66, 2 kDa), ovalbumin (45.0 kDa), carbonic anhydrose (31.0 kDa), trypsin inhibitor (21.5 kDa), lysozyme (14.4 kDa) and aprotinim (6.5 kDa). The data analysis of this research was descriptive analysis to see the photos of the electrophoresis results. Meanwhile, for the analysis, the measurement of albumin isolation by gel filtration Sephadex G-75 was carried out with a divided plot design. The results showed that SDS-PAGE electrophoresis with the most complex amount of protein was albumin isolate, the effect of the steaming temperature was 40 oC for 30 minutes, located in 5 ml of the 1st fraction, 5 ml of the 2nd fraction and 5 ml of the 3rd fraction, with values of relative mobility (Rf) 0.0833 to 0.6944.

Abstract

This Community Service Activity (PKM) has partners who are a group of goat breeders located in the Dayurejo Forest Village on the slopes of Mount Arjuno, Prigen District, Pasuruan Regency, East Java. Of the 14 problems faced by partners, cultivating a cage and five goats worth giving to the community is the main priority that has been mutually agreed to be carried out on an area of ​​approximately 14 m2. The purpose of doing community service by supporting goat breeders is to provide a view that in the future if it is carried out diligently, the welfare of the breeder will be achieved slowly but tends to be more certain. The presence of five goats supported by the Abdimas Team is a form of implementing community service after implementing ANSOS with partners with the aim of supporting the forest economy in the future, including for families of farmers.
