Abstract

Abstrak Latar belakang: Hati ayam merupakan salah satu makanan sumber Fe yang sangat dibutuhkan untuk mencegah anemia. Masyarakat mengenal dua jenis ayam, yaitu ayam ayam ras dan ayam buras. Ayam ras mendapatkan pakan konsentrat sedangkan Ayam buras mendapatkan pakan yang bervariasi yaitu dedak, jagung, kacang-kacangan, biji-bijian, daun-daunan, dan makanan asal hewan misalnya bekicot. Ayam memperoleh besi dari pakannya dan menyimpannya didalam tubuhnya. Tempat penyimpanan terbesar besi didalam tubuh adalah hati sehingga dimungkinkan hati ayam ras dan ayam buras tersebut mengandung besi dengan kadar yang berbeda. Tujuan: Untuk mengetahui apakah terdapat perbedaan kadar Fe pada hati ayam ras dan ayam buras. Metode : Teknik pengambilan sampel dilakukan secara purposif dari Pasar Sore Padang Bulan. Sampel berbentuk padat diubah ke bentuk larutan melalui proses destruksi  basah. Penetapan kadar dilakukan dengan menggunakan spektrofotometer serapan atom dengan nyala udara-asetilen pada panjang gelombang 248,3 nm. Hasil penelitian: Kadar besi pada hati ayam ras yaitu (7,16 ± 0,077) mg/100gr sedangkan pada hati ayam buras (24,94 ± 0,039) mg/100gr. Kesimpulan: Kadar besi dalam hati ayam ras dan ayam buras berbeda secara sigifikan.   Kata kunci: hati ayam ras, hati ayam buras, besi,  spektrofotometri serapan atom Abstract Objective: Chicken liver is one of the food sources of Fe are needed to prevent anemia. People recognizes two types of chicken is ras and buras. Chicken ras get a chicken feed concentrate while chicken buras getting the feed varies such as bran, corn, nuts, whole grains, leaf herbs, and foods of animal origin such as snails. Chicken get iron from his feed and store it in his body. The site storage of iron in the body is liver so it is possible that ras and buras chicken liver containing iron with different levels Purpose: To determine whether there are differences in the levels of Fe between ras and buras chicken liver. Methode: The sampling technique is purposif. Solid sample turned into a solution through a process of wet destruction. The determination of Fe was conducted by using atomic absorption spectrophotometer with air-acetylene flame at the wavelength of 248.3 nm. Research results: Level of iron in ras chicken liver is (7.16 ± 0.077) mg/100gr while in buras chicken liver is (24.94 ± 0.039) mg/100gr. Conclusion: Levels of iron in the ras and buras chicken liver is significantly different. Keywords: ras chicken liver, buras chicken liver, iron, atomic absorption spectrophotometry.
