Abstract

 Abstrak Penelitian ini adalah dari melaksanakan Februari hingga April 2017. menyalak dari tujuh spesies bakau yaitu ,. Ceriops decandra (Griff.) Ding Hou;  Ceriops tagal ( Perr.) CB Rob .; dan Bruguiera cylindrica ; Bruguiera gymnorrhiza (kiri) Lam; Rhizophora stylosa Griff .; Rhizophora mucronata Lam .; dan Avicennia marina (Forsk.) Vierh. Analisis fitokimia dan profil KLT dari ekstrak kasar kulit kayu yang dibandingkan. Analisis kualitatif menunjukkan bahwa Gonggongan Ceriops decandra (Griff.) Ding Hou, Ceriops tagal ( Perr.) CB Rob.,Bruguiera cylindrica, Bru guiera gymnorrhiza ( Kiri ) Lam, Rhizophora stylosa Griff. , Rhizophora mucronata Lam ., Dan Avicennia marina (Forsk.) Vierh. memiliki beberapa metabolit sekunder yang penting, yaitu senyawa Fenol, Tanin, dan Flavonoid. Flavonoid hanya ada di Avicennia marina (Forsk.) Vierh. Profil KLT menunjukkan bahwa dibandingkan DENGAN Nilai R f standar , Terdapat doa Titik hati kromatogram Ekstrak kasar  Rhizophora stylosa Griff. sama dengan nilai standar (nilai RfFlavonoid-glikosida turun antara = 0,18; 0,26; 0,30) menunjukkan bahwa Rhizophora stylosa Griff mungkin mengandung Flavonoid-glikosida dan asam fenolat ( nilai R f asam fenolat, 0,63-0, 84). Sedangkan Avicennia marina (Forsk.) Vierh mungkin mengandung asam fenolat. Namun, masih ada senyawa yang belum diketahui yang perlu diidentifikasi dalam penelitian lebih lanjut. Kata kunci: mangrove, fitokimia, Kromatografi Lapis Tipis

Abstract

Society is now vulnerable to various diseases. people need to be educated in the selection of foods that are healthy and good for the body. β-carotene is a healthy food that is good for the body. The study was conducted to determine the content of β-carotene compounds in fruit (Arenga piñata). Samples were obtained from Baumata village. The study used Thin Layer Chromatography (TLC) and Spectrophotometry methods. The research data were analyzed according to linear regression equations and relevant reference studies. The results of the study using the TLC method showed that the Rf value for palm fruit was 0.943 and the Rf value for the standard β-carotene was 0.544. Spectrophotometric test showed the content of β-carotene compounds from palm fruit extract at a wavelength of 470 nm had a concentration of 26.18 ppm with absorbance of 0.055. As for the standard β-carotene concentration of 35.83 ppm with an absorbance value of 0.080. Based on the results of the study it can be concluded that the palm fruit (fro) contains β-carotene. The presence of β-carotene in palm fruit can be used as a healthy functional food choice for the community as well as a choice of sources of vitamin A.

Abstract

ABSTRAK Ekosistem lamun merupakan salah satu ekosistem di laut dangkal yang mempunyai peranan penting dalam kehidupan biota laut dan merupakan salah satu ekosistem bahari yang paling produktif, sehingga mampu mendukung potensi sumber daya yang tinggi pula. Fungsi ekologis ekosistem lamun adalah sebagai produsen, pendaur unsur hara, penstabil substrat, penangkap sedimen, habitat dan makanan serta tempat berlindung organisme laut lainnya. Tujuan dari penelitian ini adalah, untuk mengidentifikasi pigmen dan mengetahui kandungan pigmen yang terdeteksi pada lamun Enhalus acoroides (Linnaeus f.) di Perairan Pantai Amadoke Desa Akle Kecamatan Semau Selatan Kabupaten Kupang. Metode yang digunakan dalam penelitian ini adalah metode Survei, Kromotografi Lapis Tipis, dan metode Spektrofotometer. Lamun ini mengandung pigmen terlihat pada hasil analisis spektrofotometer pada ekstrak pigmen total lamun dan pemisahan pigmen lewat uji Kromotografi Lapis Tipis (KLT). Dalam proses ekstraksi digunakan pelarut aseton untuk penggerusan dan perendaman. Dan pada uji spektrofotometer untuk kandungan klorofil a menggunakan panjang gelombang 645 nm dengan pigmen total 226,85 µg/mL, klorofil b 664 nm dengan pigmen total 368,69 µg/mL dan karotenoid 470 nm dengan pigmen total. 2.923,70 µg/mL. Pada pengujian pigmen lewat KLT terdapat sembilan noda yaitu, klorofil a dengan nilai Rf (0,78, 0,84 dan 0,08) klorofil b dengan nilai Rf (0,04), klorofil c dengan nilai Rf (0,12), feofitin dengan nilai Rf (0,22 dan 0,88), fukosantin dengan nilai Rf (0,48) dan karotenoid dengan nilai Rf (1,00). Kata kunci : E. acoroides (Linnaeus f.), pigmen, klorofil dan KLT ABSTRACT Seagress ecosystem is one of the shallow marine ecosystem that has an important role in the life of marine and is one of the most productive marine ecosystem, so that it can support the high potential of high resources as well. The ecological function of seagress ecosystem is as a producer, nutrient recycler, substrat stabilizer, sedimen capture, food and shelter of other organisme. The purpose of the research was to identifi the pigment and determine the pigment content in Enhalus acoroides (Linnaeus f.) seagress in Amadoke waters beach Akle of village, South Semau.The research use survey method, thin layer chromotographic and spectrophotometer methods. This seagress contains pigment, seen in the result of spectrophotometric analysis in total seagress extract and pigment separation through thin layer chromotography test. In the pisment used acetone for steaming and soaking. The spectrophotometric test for the content of chrolophyll a (λ 645 nm), chrolophyll b (λ 664 nm) and carotenoid (λ 470 nm), respectivelly are 226,85 µg/mL, 368,69 µg/mL and 2923,70 µg/mL. Nine pigments found based on the Rf valuef of TLC analisis are chrolophyll a (Rf 0,78, 0,84, 0,08), chrolophyll b (Rf 0,04), chrolophyll c (Rf 0,12), feofitin (Rf 0,22 dan 0,88) and carotenoid (Rf 1,00)

Abstract

ABSTRACTPalm trees (Arenga pinnata (wurmb.) Merr.) Are plantation crops that have the potential to be cultivated in the future, because they have high economic value and are prospective for commercial development given the diverse uses. Enau is a plant that was developed from generation to generation on Timor Island. Communities in the village of Nekmese still manage traditional palm trees. Vitamin C or ascorbic acid is one of the vitamins made from hexose derivatives which is water soluble and easily oxidized. The purpose of this study was to determine the vitamin C content of palm meat (A. pinnata). This research was conducted in May 2019 at the TPH Laboratory of the State Polytechnic of Kupang. Determination of vitamin C content in the sample is determined by titration using a solution of iodine. From the results of the study showed that the content of vitamin C in the flesh of the most palm fruit is found at a temperature of 5 ° C and 10 ° C while the content of vitamin C which is the least amount is at a temperature of 15 ° C.Keywords: palm plant and vitamin C

Abstract

ABSTRACTPumpkin (Cucurbita moschata (Duch.) Poir ) is one of the vegetables that is rich in β-carotene as a precursor of vitamin A and has a fairly high carbohydrate content. Pumpkin processing can be done to produce various kinds of products, one of which is cake. Cake is a baked dough and liquid dough made from flour, sugar, salt, ingredients, shortening, milk, eggs, and aroma enhancer. This study aims to determine the levels of β-carotene contained in pumpkin cake and to determine the acceptability of β-carotene in pumpkin cake. This research is an experimental research. The experimental design used was Completely Randomized Design (CRD) with 1 control 4 treatments and each treatment was repeated 3 times. The research phase consisted of making flour and making cake. Data collection methods include organoleptic tests and β-carotene tests. Data were analyzed using analysis of variance / ANOVA to determine differences in quality, and if there is an influence then proceed with the Tukey test. Organoleptic test results show that the best treatment of pumpkin cake in terms of color is A1 with a value of 3.88, in terms of aroma namely A0 with a value of 3.92, in terms of texture is A0 with a value of 4.28 and in terms of taste is A0 with value of 4.16. As for the β-carotene test, the treatment of pumpkin cake with the highest β-carotene content was found in A4 with an average of 0.262 and the lowest level was in A0 with an average of 0.018. Based on research data, pumpkin flour is worthy of being used as an alternative source of flour because the resulting cake meets SNI quality standards both in terms of color, taste, aroma, texture and β-carotene content.Keywords : Cake, Pumpkin, β-Carotene, Organoleptic

Abstract

ABSTRACTMangrove plant is one of the coastal ecosystems that dominates the coastal area and has the potential to be developed in the prevention of various diseases both infections in aquaculture and as a natural treatment medium for humans, because the secondary metabolite compound contained can be efficacious as an anti-bacterial. The purpose of this study was to determine the effect of A. marina mangrove bark extract against the growth of E. coli and the optimum concentration of A. marina mangrove bark extract in inhibiting the growth of E. coli bacteria. The method used in this study is a laboratory experimental method with 4 treatments namely a concentration of 55 mg/mL, 60 mg/mL, 65 mg/mL, 70 mg/mL and 1 control without administration of extract with 3 replications. Observation result of inhibition zone diameters were statistically analyzed using a one-way analysis was performed using the SPSS program version 16.0. the results showed that the rough extract of A. marina mangrove bark affected the growth of E. coli bacteria. This can be seen from the concentrations used starting from 55 mg/mL, 60 mg/mL, 65 mg/mL and 70 mg/mL having average inhibition zones ranging from 26 mm, 27.33 mm, 27.66 mm and 28.66 mm. thus the higher the concentration of the extract used, the greatervthe inhibition formed. Abstract

Jackfruit seed is usually thrown away after being consumed as fresh fruit or being processed as a jackfruit crackers and other food product. Jackfruit seed consist of carbohydrate (36,7 g/100 g) and also as a source minerals. The availability of jackfruit seed was found abundance but the use of it not maximize yet.  The flour from jackfruit seed can be used an alternative for making food product. The flour extracted from (40,891) jackfruit seed have longer storage time and easy to turn it to other product. The aim of this research was to measure water content, protein content and potassium level from jackfruit flour. The method used during the research was experimental research which is to compare the treatment between boiled and fresh jackfruit seed. The findings showed that water content of boiled jackfruit seed are higher (43,844 unit) than the flour of the fresh jackfruit flour (40,891 unit).The protein content are lowest of flour of boiled jackfruit seed with the value of 7,51 and highest of fresh jackfruit seed with value of 7,72. The potassium content the flour of boiled jackfruit seed was higher with the value of 0.062 than the flour of fresh jackfruit seed with value of 0.006. Kata kunci: Biji Nangka,  Kadar Air, Kadar Kalium, Kadar Protein, Tepung Biji Nangka.
