Abstract

Tujuan dari penelitian ini untuk menemukan dan menentukan jenis dan konsentrasi filler yang berbeda untuk menghasilkan sosis daging babi yang dapat diterima oleh konsumen ditinjau dari segi fisik, dan organoleptik. Sosis merupakan salah satu produk olahan yang dapat digunakan sebagai bentuk pengolahan daging segar dan dapat meningkatkan nilai gizi.. Penelitian ini telah dilakukan pada tanggal 20 Juli sampai 20 Agustus 2010 di Laboratorium Teknologi Hasil Ternak Fakultas Peternakan Universitas Sam Ratulangi Manado. Materi penelitian yang digunakan terdiri dari daging dan lemak babi sebanyak 5400 gram, bahan pengikat (susu krim), 3 jenis filler yaitu tepung tapioka, tepung maizena dan tepung sagu, dan juga bumbu-bumbu. Rancangan percobaan yang digunakan adalah Rancangan Acak Lengkap (RAL) yang terdiri dari 9 perlakuan dan 3 ulangan dan pengukuran dengan metode Hedonik dengan menggunakan skala Hedonik. Data dianalisa dengan menggunakan Analysis of Variance dan jika terdapat perbedaan diantara perlakuan maka dilanjutkan dengan uji Beda Nyata Jujur Hasil penelitian ini menunjukan bahwa sosis yang menggunakan jenis tepung tapioka pada konsentrasi 9% menghasilkan sosis daging babi yang memperlihatkan sifat fisik dan organoleptik yang lebih baik dibandingkan dengan perlakuan yang lain. Secara umum semua filler yang digunakan dapat diterima oleh panelis dan didukung oleh sifat fisik dan kimia. Dari hasil penelitian ini dapat disimpulkan bahwa sosis yang menggunakan jenis filler tepung tapioka pada konsentrasi 9 % menghasiulkan sosis daging babi yang memperlihatkan sifat fisik dan organoleptik yang lebih baik dibandingkan dengan perlakuan yang lain.

Abstract

Tujuan penelitian ini adalah untuk mengetahui tingkat perkembangan gonad, kualiatas telur dan ketahanan hidup larva ikan Nila (Oreochromis niloticus). Ikan Nila diberi perlakuan dengan salinitas 0, 10, 20, dan 30 o/oo. Ikan nila dengan berat badan 140-200 g masing-masing dipelihara dalam akuarium sebanyak 36 ekor ikan betina dan selama percobaan ikan diberi pakan dengan pellet komersil dua kali sehari. Parameter uji yang diukur untuk mengetahui kinerja reproduksi ikan nila, diameter telur, fekunditas, derajat tetas telur, dan ketahanan hidup larva. Rancangan percobaan yang digunakan adalah model eksperimental dengan menggunakan Rancangan Acak Lengkap (RAL), yang terdiri atas 4 perlakuan dan 4 ulangan salinitas, yaitu 0, 10, 20, dan 30 o/oo. Data yang diperoleh dianalisis dengan uji F kemudian dilanjutkan dengan uji Tukey. Hasil penelitian menunjukkan bahwa perlakuan salinitas 10o/oo merupakan perlakuan yang terbaik karena memberikan respon yang tertinggi padadiameter telur, fekunditas, derajat tetas telur, dan ketahanan hidup larva.

Abstract

ABSTRACTParturition Behavior and Estrus of Sulawesi spiny rat Maxomys hellwandii (Jentink, 1879).This research is aimed to study the parturition behavior of wild Sulawesi spiny rat involvingobservations of pre-parturition, parturition and post- parturition behaviors. In this study, 15female white tail rats at the ages of 60 days old were used to evaluate their estrus. Animals weremaintained in cages made of glass at size of 1m x1mx1.5m. The covers of cages were made ofram wire and completed with feeder and drinker. For estrus observation, animal cages weremade of plastic trays of 39 cm x42 cm x15 cm. The phase of estrus cycles observation was doneby collecting sample of vagina smear from the animals. The determination of cycles phase wasbased on the cell types that were obtained from preparation vagina smear. The results showedthat about six hours before parturition, the animals were nervous and urinated 4 to 9 times asthey showed agonistic. The parturition process needed 3 to 8 minutes. The deviation times ofsuckling progeny were 8-12 seconds. The progeny at the ages of 1 to 5 days old slept againsttheir mother nipples. For the estrus, the results showed that estrus cycle of wild white tail ratswas ranging from 3 days to 5 days, consisted of pro estrus (12 hours), estrus (12 hours), metestrus (18 – 12 hours) and di-estrus (45 - 54 hours).Key Words: Parturition Behavior, Estrus, Maxomys hellwandii.

Abstract

Kelelawar pemakan buah adalah satwa liar yang berperan sebagai penyerbuk buah-buahan dan penyebar biji-bijian. Namun kelelawar pemakan buah dijadikan bahan pangan. Dikhatirkan populasi kelelawar akan menurun dan beberapa jenis kelelawar endemik akan terancam punah. Oleh karena itu perlu dicarikan solusinya. Salah satu solusi adalah penyuluhan dan budidaya kelelawar. PKM budidaya Kelelawar di desa Boyong Atas bertujuan mengajarkan ibu-ibu kelompok Pinasungkulan dan Mangimbali untuk membudidayakan kelelawar. Metode yang digunakan adalah penyuluhan dan demostrasi cara budidaya kelelawar. Hasil pengamatan menunjukkan bahwa minat ibu-ibu untuk membudidayakan kelelawar sangat tinggi, karena  ibu-ibu mempraktekkan apa yang diajarkan. Hasil pengamatan terhadap pakan kelelawar menunjukkan bahwa pakan efektif diberikan pada sore hari. Jenis pakan yang disukai adalah pepaya masak. Kesimpulannya bahwa kelelawar dapat dibudidayakan karena dapat beradaptasi dengan kandang dan pakan yang diberikanFruit bats are wild animal that function as pollinators and spreaders of plant grains. However in North Sulawesi province, Minahasa region particularly, fruit bats are used as food. The bat population will decline and some endemic bat species threatened will be extinction, if hunting to be continued. Therefore it is necessary to find a solution. One of solution is education and cultivation. The Society Partnership Program in Boyong Atas village was aimed to teach women in the Pinasungkulan and Mangimbali groups to make bat breeding. The methods used were community outreach and demonstration of bat cultivation. The observation showed that mothers' interest was very high, because mothers practice what had been taught. Observation of bat feeding time showed that effective feed was given in the afternoon. The type of preference feed of bats was ripe papaya. In conclusion, bats can be cultivated because they can adapt well in captivity as well as the feed provided

Abstract

THE EFFECT OF WHITE TURMERIC (Curcuma mangga Val.) ADDITION ON CHICKEN MEAT AGAINST WATER CONTENT, pH AND MICROORGANISM NUMBERS. The purpose of this research was to determine the effect of the addition of white turmeric (Curcuma manggaVal.) on chicken meat at cold storage (4oC). This research used Split Plot Design with 2 treatment factors based on completely randomized design. The Main Plot contains of 4 treatments (A0 = without storage, A1 = 3 days storage, A2 = 6 days storage, A3 = 9 days storage) and the Sub Plot contains of 4 treatments (B0 = without white turmeric, B1 = 4% grating of white turmeric, B2 = 8% grating of white turmeric, B3 = 12% grating of white turmeric). The variable that observed are water content, pH and microorganism number. The result showed that the addition of white turmeric was not significant affected (P > 0.05) against water contentof chicken meat, however it was highly significant affected (P < 0.01) against pH and microorganism numbers of chicken meat. Storage time was highly significant affected (P <0.01) against water content, pH and microorganism numbers of chicken meat. The interaction between both of treatment factors was given highly significant affected (P < 0.01) against water content, pH and microorganism numbers of chicken meat. As a conclusion, the addition of white turmeric on chicken meat was not affected against water content, however it can decrease pH and obstruct microorganism activity. Abstract

THE EFFECTS OF PALM JUICE VINEGAR TOWARDS THE ORGANOLEPTICS OF MUSCOVY DUCK MEAT (Chairina moschata). People in North Sulawesi are continued to develop duck farming. Most of them run their farm with traditional system. The species of duck developed in North Sulawesi of Chairina moschata is called Muscovy duck. Special treatments were applied in cook processing of duck meat especially to eliminate stink and tough texture. Palm juice vinegar containing acetic acid has many roles when it was added in foods stuffs including duck’s meat. The aim of this research was to evaluate the organoleptic taste of duck meat immersed in palm juice vinegar. The objects of this research were breast part of duck meat immersed and in juice vinegar and stored during 4, 8 and 12 days. This research used completely randomized design involving 4 treatments with 40 untrained panelists as replication. Observed variables were colors, flavors, meat tastes and meat tenderness. Data was analyzed using ANOVA and Duncan Multiple Range Test (DMRT) for further significant treatments. The results showed that immersion treatment of duck meat in palm juice vinegar stored during 4, 8 and 12 days gave significant effects (P<0.01) to organoleptic of duck meat. Further test with DMRT showed that immersion of duck meat in 12 days palm juice vinegar can be accepted by the panelists as the best treatment.   Keywords: Organoleptic test, duck meat, palm juice vinegar

Abstract

Bats have been known as natural reservoirs for potential emerging infectious viruses, such as Lyssaviruses, Coronaviruses, Ebola viruses, Nipah virus, and many others. Because of their abudance in population, wide distribution and mobility, bats have a greater risk as source for zoonotic transmission than other animals. Despite the facts of their role as reservoirs for many pathogens, not until an epidemic of Severe Acute Respiratory Coronavirus (SARS-CoV) in 2003 and Middle-East Respiratory Syndrome Coronavirus (MERS-CoV) in 2012, that people pay much attention about coronavirus in bats. SARS-like virus also found in bats with a higher prevalence rate. This study aims to detect the coronavirus of bats in Gorontalo province Indonesia, characterization at the molecular level of the coronavirus genome and determining the level of kinship (through trees filogenetic). This study was conducted as part of bigger PREDICT Indonesia project, in particular to examine coronavirus in bats from Gorontalo province, Indonesia.  As many as  95 rectal swab samples collected from flying foxes (Pteropus alecto) were analyzed in the laboratory using Consensus Polymerase Chain Reaction (PCR) technique to amplify the target sequence from RNA-dependent RNA Polymerase (RdRp) gene with 434 basepair product, resulted 24 samples determined as presumptive positive. Eight out of 24 presumptive positive samples by PCR were analyzed further by nucleotide sequencing and confirmed coronavirus positive. Phylogenetic tree analyses to the eight coronavirus confirmed-sequences were constructed with MEGA-6.0 . The conclusion was 24 out of 95 samples suggested as presumptive positive to Bat CoV. Eight out of 24 samples were analyzed further by nucleotide sequencing and have similarities in the kinship. Three samples had the 98% nucleotide identity to BatCoV from Indonesia and five samples were 85-88% nucleotide identity to BatCoV from Thailand.

Abstract

Penelitian ini bertujuan untuk mengetahui penambahan bobot badan dan morfometri anak kalong/kelelawar Pteropus alecto pada umur yang berbeda. Anak kelelawar dilahirkan oleh induk yang telah dipelihara dalam kandang sejak tahun 2011. Penelitian ini merupakan penelitian eksplorasi. Pengambilan data konsumsi pakan dilakukan setiap hari, penimbangan bobot badan dan morfometri dilakukan seminggu sekali. Lama pengambilan data 98 hari (14 minggu/3,5 bulan). Data yang diperoleh ditabulasi kemudian dianalisis secara deskrptif. Variabel yang diukur yaitu jumlah konsumsi buah, penambahan bobot badan dan morfometri. Hasil yang diperoleh untuk jumlah konsumsi buah P. alecto 1, 2 dan 3 secara berurutan yaitu 102.91 g/hari, 139.54 g/hari, 181.07 g/hari. Persentase konsumsi buah pepaya, pisang dan mangga secara berurutan yaitu P. alecto 1 sebesar 50,97%., 29,65%., 19,38%. P. alecto 2 sebesar 61,02%., 24,39%., 14,59%., dan P. alecto 3 sebesar 58,63%., 32,66%., 8,71%. Penambahan bobot badan masing masing sebesar 0.40 g/hari, 0.56 g/hari, dan 0.85g/hari. Penambahan ukuran morfometri kelelawar P. alecto 1 untuk panjang tubuh total, panjang badan, panjang kepala, panjang telinga, panjang lengan bawah sayap, panjang tibia dan lebar bentangan sayap secara berurutan sebesar 0,11 mm/hari., 0,08 mm/hari., 0,03 mm/hari., 0.02 mm/hari., 0,06 mm/hari., 0.03 mm/hari., 0,007mm/hari, P. alecto 2 sebesar 0.13 mm/hari, 0.04 mm/hari, 0.06 mm/hari, 0.02 mm/hari, 0.08 mm/hari, 0.04 mm/hari dan 0,12 mm/hari dan P. alecto 3 sebesar 0.33 mm/hari, 0.29 mm/hari, 0.04 mm/hari, 0.03 mm/hari, 0.15 mm/hari, 0.06 mm/hari dan 0.31 mm/hari. Berdasarkan pada penambahan bobot badan dan morfometri maka hasil penelitian dapat disimpulkan bahwa perbedaan penambahan bobot badan, ukuran morfometri dan konsumsi kelelawar disebabkan oleh umur yang berbeda, dan penambahan bobot badan dan morfometri yang besar terjadi pada kelelawar P. alecto yang berumur dari 4,4 bulan hingga 7,7 bulan.
