Abstract

Penelitian ini untuk mengetahui bagaimana proses ozonisasi berpengaruhterhadap kualitas Air Susu. Penelitian dilakukan secara eksperimental denganmenggunakan “Split Plot Design” pola faktorial 3x3 (suhu awal dan lama kontak)dengan tiga kali ulangan. Peubah yang diukur adalah prosentase kematian totalmikroorganisme, bakteri patogen, kadar protein, lemak dan uji inderawi. Hasilpenelitian menunjuk kan bahwa dengan perlakuan ozonisasi, prosentasekematian total mikroorganisme mencapai 94,50%, kematian bakteri patogenE.coli mencapai 97,19%, Staph.aureus mencapai 95,97%,. Suhu awal dan lamakontak yang efektif adalah 1oC selama 10 menit. Proses ozonisasi tidakberpengaruh terhadap, warna, rasa dan konsistensi air susu kecuali terhadapbau. Selain itu ozonisasi meningkatkan kadar protein dan lemak. secaraproposional. Daya simpan air susu produk ozonisasi pada temperatur kamartahan sampai 19 jam.Kata kunci : Ozonisasi, kualitas, jumlah kematian

Abstract

The purpose of this research is to find out determine the effect of the most effective extraction time and to determine the effect of the most effective type of acid in the production process of gelatin bone of tilapia fish. This research was using by Split Plot Design (SPD) with 3 times replication, so make 27 experiments were obtained. For main plot is extraction time (4 hours, 5 hours and 6 hours) and subplot is type of acid (4% chloride acid, 3% acetic acid and 6% citrate acid). Response in this research is physical response such as gel gelatin strength, viscosity and rendement total, chemical response such as pH, protein content and ash content and test of bone gelatin of tilapia fish with commercial gelatin. The main research result showed that the extraction time had significant effect on gelatin gel strength, gelatin viscosity, gelatin rendement, acidity degree (pH) of gelatin, gelatin protein content and gelatin ash content. Types of acid had significant effect on gelatin gel strength, gelatin renedement, acidity degree (pH) of gelatin, gelatin protein content and gelatin ash content, and interaction of time of extraction and type of acid had significant effect on gelatin gel strength, gelatin viscosity, gelatin rendement, acidity degree (pH) of gelatin, gelatin protein content and gelatin ash content to the extraction process of bone gelatin of tilapia fish. Based on the comparative test, the characteristics of gelatin of tilapia bone that close to commercial gelatin are a3b2 treatment (6 hours of extraction time, 3% acetic acid) with the result of gelatin gel strength 132,93 bloom; viscosity 5,83 cP; the amount of rendement 16,94; pH 6,10; protein content 83,62%; and ash content of 0.64%.

Abstract

Tujuan penelitian ini adalah untuk mengetahui pengaruh rasio tepung talas:jamur tiram putih dan konsentrasi kuning telur terhadap karakteristik cookies. Model rancangan percobaan yang digunakan dalam penelitian pembuatan cookies adalah Rancangan Acak Kelompok (RAK) dengan 2 (dua) faktor, dilakukan dengan 3 (tiga) kali ulangan, sehingga diperoleh 27 satuan percobaan. Faktor percobaan terdiri dari rasio jamur tiram putih:tepung talas (1:2, 1:1, 2:1) dan konsentrasi kuning telur (6%, 9%, 12%). Hasil penelitian yang didapat bahwa rasio tepung talas:jamur tiram putih berpengaruh terhadap warna, rasa, tekstur, dan respon kimia pada cookies. Konsentrasi kuning telur berpengaruh terhadap aroma cookies. Interaksi antara rasio tepung talas:jamur tiram putih dan konsentrasi kuning telur berpengaruh terhadap warna dan rasa cookies. Perlakuan terbaik diperoleh pada perlakuan rasio jamur tiram putih:tepung talas 1:2 dan konsentrasi kuning telur 6%. Cookies hasil eksperimen terbaik mengandung kadar air 2,48%, kadar protein 25,08%, kadar serat 2,26%, dan kadar karbohidrat 71,46%.

Abstract

Tujuan dari penelitian ini adalah untuk mengetahui pengaruh perbandingan rumput laut Eucheuma cottonii dengan sari wortel dan konsentrasi sukrosa terhadap karakteristik marshmallow wortel. Metode penelitian yang dilakukan terdiri atas dua tahap, yaitu penelitian pendahuluan dan penelitian utama. Penelitian pendahuluan yaitu menentukan formula yang paling tepat pada pembuatan marshmallow wortel. Rancangan percobaan yang digunakan dalam penelitian ini adalah rancangan acak kelompok (RAK) dengan pola faktorial 3x3 dan diulang sebanyak 3 kali. Rancangan perlakuan yang dilakukan terdiri dari dua faktor meliputi : perbandingan rumput laut Eucheuma cottonii dengan sari wortel (A) yang terdiri dari 3 taraf, yaitu a1 (1:0,5), a2 (1:1), a3 (1,5:1) dan konsentrasi sukrosa (B) yang terdiri dari 3 taraf, yaitu b1 (25%), b2 (30%), b3 (35%). Hasil penelitian pendahuluan menunjukkan formula 1 yang akan digunakan pada penelitian utama. Hasil penelitian utama menunjukkan perbandingan rumput laut Eucheuma cottonii dengan sari wortel berpengaruh terhadap organoleptik dalam hal warna, aroma, rasa, dan tekstur, serta kadar air. Konsentrasi sukrosa berpengaruh terhadap organoleptik dalam hal warna, aroma, rasa, dan tekstur, serta kadar air dan kadar gula reduksi. Interaksi antara perbandingan rumput laut Eucheuma cottonii dengan sari wortel dan konsentrasi sukrosa berpengaruh terhadap organoleptik dalam hal warna, aroma, rasa, dan tekstur. Berdasarkan respon organoleptik didapatkan produk terpilih yaitu a2b3 (perbandingan rumput laut Eucheuma cottonii dengan sari wortel 1:1 dan konsentrasi sukrosa 35%). Produk terpilih tersebut memiliki kadar air 26,99%, kadar gula reduksi 5,6%, kadar karotenoid 19,54 ppm, nilai uji warna (L* = 54,55 ; a* = 6,60 ; b* = 13,47), kadar vitamin C 0,85 mg/100 g, kadar serat kasar 2,6%, kadar kalsium 14,22 mg/100 g, nilai elastisitas (springiness) 0,614, nilai kekenyalan (chewiness) 2,0622 g.sec dan nilai organoleptik rata-rata suka.

Abstract

Tujuan dari penelitian ini adalah untuk mempelajari formula dan perbandingan bumbu serbuk dengan santan serbuk dalam pembuatan bumbu gulai serbuk dengan menggunakan metode foam-mat drying, sehingga diperoleh karakteristik yang baik yang dapat di manfaatkan untuk bumbu masakan gulai. Penelitian dilakukan dengan menggunakan Rancangan Acak Kelompok (RAK) yang terdiri dari 2 faktor A (Formula) yang terdiri dari 2 taraf yaitu a1 (formula 1), dan a2 (formula 2) dan faktor B (perbandingan bumbu serbuk dengan santan serbuk) yang terdiri dari 3 taraf yaitu b1 (1 : 1,5), b2 (1 : 1), dan b3 (1,5 : 1). Respon dalam penelitian adalah respon organoleptik (warna, aroma, dan rasa), respon kimia (kadar air dan kadar lemak), dan respon fisik (uji kadar rendemen). Berdasarkan hasil penelitian, diketahui bahwa formula berpengaruh terhadap warna, aroma, dan kadar lemak, perbandingan bumbu serbuk dengan santan serbuk berpengaruh terhadap warna, aroma, rasa, kadar air, dan kadar lemak serta interaksi antara formula dan perbandingan bumbu serbuk dengan santan serbuk berpengaruh terhadap aroma, rasa dan kadar lemak. Perlakuan terpilih yaitu produk bumbu gulai dengan menggunakan formula 2 (a2) dan perbandingan bumbu serbuk dengan santan serbuk (1,5 : 1) (b3) yang memiliki kadar air 10,88%, kadar lemak 10,97% dan kadar rendemen rata-rata untuk formula 2 (a2) sebesar 28,41%.

Abstract

Coconuts in Sidamulih Village have great potential in marketing and producing coconuts not only in the form of fresh fruit but in processing production (diversification). The purpose in this community service is to increase production not only in the form of fresh coconuts but in the form of various processed food products. The method is implemented with the mentoring method. The results obtained gained knowledge about coconut processing in several products, namely: oil with the sour method, candied coconut, coconut water drinks and coconut water cocrystals. The existence of universities in carrying out community service activities has at least three things built, namely increased knowledge, increased skills and increased business motivation. MSME groups in the Sidamulih area have one of the potentials to foster an attitude of community independence towards a better economy. The specific target that also wants to be achieved is to provide science / technology about Coconut Diversification into products of economic value to the community, especially in MSME groups, especially those in the Sidamulih Village area, Pangandaran Regency.

Abstract

The people of Sidamulih village have sufficient interest, expertise and appropriate and renewable technology, but there is no special guidance for small community business groups. Several groups of Micro, Small and Medium Enterprises of processed food products are constrained in marketing to a wider scope such as to super markets, due to suboptimal product quality and the absence of product information such as nutritional content and product expiration date. This is due to constraints on testing costs and MSMEs' ignorance of the importance of food product quality. The existence of tourism group coaching activities and community institution coaching activities that are still active in improving and testing the quality of processed food products of MSMEs are expected to bridge the interests of the community, especially MSMEs of processed food products to expand their marketing due to increased consumer confidence in product safety. The test results show that the nutritional content of processed MSME products varies, some products have good quality, some are not good. A similar thing happens with product expiry, where some have expiry periods that are too short, making them less suitable for long-term marketing. This problem needs to be followed up with briefings to related MSMEs on good food processing methods, so that processed MSME products will be of better quality and marketable. The next plan is to conduct training on Good Processed Food Processing Methods for MSMEs so that processed products will have better quality so that their marketing is wider.
