Abstract

The poverty level and the level of access for cleaning water are two interesting variables to analyze. One type of feasible analysis was used scatter diagram. South Sumatra Province with its 17 municipalities has different characteristics in terms of poverty levels and access to clean water for the people. Overall, using the scatter diagram, in 2018 the areas with low poverty levels however high levels of access to clean water (Quadrant I) were Lahat and Penukal Abab Lematang Ilir Regency. The regions with low levels of access to clean water and low levels of poverty (Quadrant II) are Empat Lawang, Banyuasin, Ogan Komering Ulu  Selatan and Prabumulih. The areas with high levels of access to clean water and high poverty (Quadrant III) are Musi Rawas Utara, Musi Banyuasin, Ogan Komering Ilir,  Musi Rawas and Ogan Ilir Regency. The areas with low levels of access to clean water and high poverty (Quadran IV) are Lahat and Penukal Abab Lematang Ilir regency.

Abstract

Swampland is one of the agroecosystems that has not been optimally utilized, especially in agriculture. This land is included in sub obtimal land in South Sumatera province. This research aims to determine the feasibility of horticulture cultivation efforts with floating methods on swampland. The location of the research was the swampland in Srimulya Village, Sematang Borang District of Palembang City on inundated season from January to June. This study was conducted by combining interview methods and participatory observation with respondents. The method used in determining economic feasibility was business feasibility analysis using R/C and B/C Ratios. The types of data processed were primary data and secondary data with quantitative type. Based on the results, it can be concluded that floating cultivation system for kale can add family income to swampland. With the total cost of each harvest being Rp 4.390.000,00 , an acceptance of Rp 14.000.000,00 is obtained. The net income earned every harvest is Rp 9.610.000,00. The Revenue / Cost Ratio is 3.19 while Benefit / Cost Ratio is 2.19. It can be concluded that the floating cultivation system is feasible to be implemented on swampland.

Abstract

Pempek has a short shelf life, so many pempek entrepreneurs market it frozen. The freezing process can cause pempek to lose its elasticity and become mushy when re-cooked. The change in texture results in a lack of consumer liking, so it is necessary to add carrageenan additives to overcome this problem. The purpose of this study was to determine the effect of carrageenan on the characteristics of frozen pempek in terms of physical, chemical and microbiological. This study used a non-factorial complete randomized design (CRD) with treatments including the concentration of carrageenan (A): A0 = 0%, A1 = 0.5%, A2 = 1% and A3 = 1.5%. Parameters determined included chemical (moisture and protein content), physical (texture), and microbiological (total plate count). The results showed that the sample formulation A3 (addition of carrageenan 1.5%) produced the highest texture (most chewy) which is 626.82, the lowest TPC and water concentration TPC 3.17 x 105 and 57.63% and protein 14.45. The addition of carrageenan in the manufacture of frozen pempek is able to maintain the chewiness of pempek that has been stored for 4 weeks in frozen storage with a re-cooking process.
