Abstract

Abstrak XYZ dessert shop merupakan usaha mikro di bidang kuliner. Tahun 2021 XYZ dessert shop mengalami penurunan keuntungan bersih karena produk belum memiliki diferensiasi, ketidakefisienan penggunaan sumber daya manusia, dan biaya bahan baku meningkat. Penelitian dilakukan dengan tujuan memetakan model bisnis XYZ dessert shop saat ini, melakukan analisis SWOT dan merancang strategi usulan, serta merancang model bisnis XYZ dessert shop yang baru. Langkah-langkah yang dilakukan dalam merancang model bisnis usulan adalah memetakan business model canvas saat ini, profil pelanggan, dan lingkungan bisnis perusahaan, melakukan analisis SWOT, merancang strategi, merancang proposisi nilai dan kemudian mencocokkannya dengan profil pelanggan, serta merancang usulan model bisnis. Perbaikan yang diusulkan mencakup perluasan pada blok customer segment, memperbanyak potongan harga dan meningkatkan kualitas layanan pada blok customer relationships, peningkatan blok value proposition yang mencakup penambahan penulisan ucapan pada kemasan, menawarkan produk low calories dan produk vegan, highlight cita rasa kuat pada soft cookies dan tiramisu, serta menjaga tekstur produk, perbaikan blok channel berupa penambahan coffee shop sebagai channel baru, pemasukan baru pada blok revenue streams, pengurangan tenaga kerja dan pemanfaatan space di ruko pada blok key resource, membeli tepung dan telur langsung dari suppliernya pada blok key partnership, serta pengurangan biaya tenaga kerja pada blok cost structure. Kata Kunci: XYZ dessert shop; business model canvas; analisis SWOT Abstract XYZ dessert shop is a micro enterprise in culinary field. In 2021 XYZ dessert shop experienced a decrease in net profit due to product differentiation absence, human resources inefficiency, and rising raw material costs. The research objectives are mapping the existing business model, conducting a SWOT analysis, designing new strategies, and designing new business model. The steps taken in designing the business model are mapping the existing business model canvas, customer profiles, and business model environment, conducting SWOT analysis, designing strategies, designing value proposition map and fitting it with customer profiles, and designing the new business model canvas. Improvements proposed in this research are expansion of customer segment, improving the customer relationship block by increasing price discounts and improving the service quality and value proposition block which includes providing greeting space in the packaging, offering low-calorie and vegan products, highlighting the flavor of soft cookies and tiramisu and maintaining the product texture, improving the channel block by adding coffee shops as new channel, creating new revenue streams, improving the key resources block by reducing human resources and improving the usage of the store space, improving key partnerships block by buying flour and eggs directly from suppliers, and reducing labor costs.
