AbstrakMaltodekstrin adalah bahan tambahan farmasi yang saat ini masih cukup banyak penggunaannya. Sumber bahan baku maltodekstrin adalah pati, dan salah satunya dapat diperoleh dari ubi jalar (Ipomoea batatas. Poir) yang memiliki kandungan pati sebesar 55%. Tujuan penelitian ini adalah membuat maltodekstrin dengan menerapkan metode hidrolisis secara enzimatis menggunakan enzim α-amylase yang berasal dari Bacillus lichenformis. Dari hasil penelitian diperoleh rendemen maltodekstrin sebesar 34,28%. Karakteristik maltodekstrin meliputi nilai Dextrose Equivalent (DE) sebesar 7,41% dan susut pengeringan sebesar 5,30%. Identifikasi menunjukkan nilai positif terhadap uji iodin, suhu gelatinisasi 23°C, viskositas 4cps, derajat putih 60%, swelling power 8,89, solubilitas 6,3% dan pengujian sifat fisikokimia seperti daya alir dengan nilai 13,14±1,72 dan kompresibilitas sebesar 18,25±0,680. Hasil tersebut telah memenuhi pesyaratan standard USP dan Farmakope Indonesia edisi IV. Kata kunci: Ubi jalar, Pati, Metode enzimatis, Maltodekstrin. AbstractMaltodextrin is a pharmaceutical excipient which is still quite a lot of usage. Raw material of maltodextrin is starch, which can be obtained from sweet potato (Ipomoea batatas. Poir) with starch content of 55%. The purpose of this research is to produce maltodextrin by enzymatic hydrolysis method using α-amylase enzyme derived from Bacillus lichenformis. The result showed that 34,28% of maltodextrin were obtained. The maltodextrin characteristics including 7.41% of dextrose equivalent and 5.30% of lost on drying process, identification test that showed positive values of the iodine test, 23°C of gelatinization temperature, 4 cps of viscosity , 60 % of white degree value , 8.89 of swelling power, 6,3% of solubility, and physicochemical properties examination such as flow ability a value of 13.14 ± 1.72 and compressibility of 18.25 ± 0.680.
