Abstract

         The fresh meat is easy to damage due to the change of chemical and microbiological contamination. This study aims to determine the quality of microbiological and organoleptic quality jerky laying ducks curing rejects at various times and concentrations of salt. The Experiments used completely randomized factorial design with two factors: the first factor, the time of curing (C) consists of 15 hours (C1), 20 hours (C2), 25 hours (C3) and 30 hours (C4). The second factor was the concentration of salt (B) consisting of: 5% (G1) and 10% (G2). Each treatment was repeated 2 times therefore there are 16 units experimental treatment. Variables observed included: 1) Test microbiology (TPC) and 2) the organoleptic test. The results showed that the interaction of treatment time and the salt concentration significantly affected to the appearance, aroma and taste, while the color and quality of microbiological have no real effect. Microbiological quality of the treatment time curing for 30 hours (C4) was not significantly different  on the total microbial jerky laying ducks culled but gave the lowest total of microbial namely 1'5 x106 compared to another treatments. Organoleptic quality test showed that the best combination of treatment was that the curing time for 25 hours with the salt concentration 10% (C3G2) on the appearance, aroma, color and flavor with the average value 5 (like category).

Abstract

This research aims to determine the factors affected the income of farmer in business of beef cattle in Lampasio district, Tolitoli regency. This research applied purposive sampling technique in choosing sample. There were 36 selected sampless as respondents of three districts: Sibea, Lampasio, and Tinading. The observed variables were the characteristics of respondents’ income such as breeders’ age. Level of education, number of family, and farming experinence. The multiple regression was employed to find out the significant effect of the farmer income. The result showed that farmer age is old with low education level, with more than 7 years experience. The coefficient value of R by 0,131which means that observed variables was 13,1% whereas the value of unobserved variables in this research was 86,9%. Eventhough there is no significant variable effect to farmer income, the education effects positvively to farmer income. Keywords: income, beef cattle, multiple regression

Abstract

Peneletian  ini  bertujuan  untuk  mengetahui  pengaruh  pemberian  minyak cengkeh terhadap daya tetas dan mortalitas telur itik. Penelitian ini dilaksanakan pada  bulan  November    2020  di  desa  lakatan,  kecamatan  galang.  Penelitian  ini menggunakan  Rancangan  Acak  Lengkap  (RAL)  dengan  4  perlakuan  dan  5 ulangan,  dimana  T 0   (Control  tanpa  perlakuan),  T 1  (Telur  dengan  perlakuan pecelupan minyak cengkah 10 ml (10%) + aquadest 100 ml), T 2  (Telur dengan perlakuan  pencelupan  minyak  cengkah  15  ml  (15%)    +    aquadest  100  ml),  T 3  (Telur  dengan  perlakuan  pencelupan  minyak  cengkah  20  ml  (20%)  +  aquadest 100  ml).  Penggunaan  minyak  cengkeh  tidak  berpengaruh  terhadap  persentase daya tetas dan persentase mortalitas telur itik, namun ketika dilihat perperlakuan persentase  daya  tetas  yang  tertinggi  terdapat  pada  T2.  Sedangkan  persentase mortalitas terendah terdapat pada T1. Abstract

The purpose of this study was to determine the influence of kitchen lemongrass spice (Cymbopogon citratus) on the organoleptic quality of purebred chicken eggs. In accordance with the objectives of the research to be achieved, then in the analysis using the Complete RandomIzed Design (RAL) consisting of 3 treatments namely T 1 = 1 week, T 2 = 2 weeks and T 3 = 3 weeks with repeated as many as 5 times so that 15 experimental units were obtained. The results showed the influence of kitchen lemongrass spice (Cymbopogon citratus) on the organoleptic quality of purebred chicken eggs in the color, aroma, and appearance criteria test and hedonic test did not give a real influence (P>0.05). In conclusion, the use of lemongrass spice does not give a noticeable influence on the organoleptic quality of purebred chicken eggs. Abstract

Tujuan yang ingin dicapai pada penelitian ini adalah untuk mengetahui pengaruh penggunaan getah pepaya terhadap kualitas telur ayam ras. Sesuai dengan tujuan penelitian yang ingin dicapai, maka di analisis dengan menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari 3 perlakuan yaitu T1 = 1 minggu, T2 = 2 minggu dan T3 = 3 minggu dengan di ulang sebanyak 5 kali sehingga di peroleh 15 unit percobaan. Hasil penelitian menunjukkan penelitian penggunaan getah pepayah terhadap kualitas haugh unit, yolk indeks dan kedalaman Rongga udara telur ayam ras memberikan pengaruh sangat nyata 0,00 (P<0,05) dan memberikan hasil yang optimal selama penyimpanan telur ayam ras selama 21 hari.Kata Kunci: telur ayam ras, getah pepaya, kualitas
