Abstract

The study on the thermal energy consumption and efficiency in coconut oil processing using HOID technology was conducted to evaluate the performance of the thermal energy efficient fumace. the preliminary comsubtion experimental conducted to examine the thermal capacity of the system, indicated that the system could be used to fry minimum of 2 tons coconut meat per 8 hours operation. The frying capacity of the furnace was influenced significanrtly by the ration of the fresh coconut meat to coconut oil and the amount of coconut oil that should be replaced. The higher the ration will result in the higher of the frying rate. The result of experiment showed that the maximum thermal efficiency of the fumace was around 70% this maximum efficiency could be achieved if the loss of the thermal energy from the system could be made minimally, espencially loss due to the sensible heat in the dry flue gas and loss due to the incomplete combustion of fuel resulting in carbon monoxide in the flue gas. The average thermal efficiency of the system was 54%.

Abstract

Experiment on the use of modified anglo (rural type of stove) and density of bamboo charcoal briquette of Andong (Gigantochloa pseudoarundinaceae) and Petung (Denrocalamus asper) have been carried out to increase its heating efficiency. Observation was carried out on temperature profile, temperature elevation rate, fuel consumption rate and heating efficiency.Analysis on the charcoal briquettes includes moisture content, volatile substance on 950  C, fixed carbon and calorific value.The experiment revealed that the use of bamboo charcoal briquette of Andong and Petung with density respectively of 0.484 and 0.488 in unmodified traditional anglo give heating efficiency of respectively 16.36 % and 17.4 %. Whereas by increasing the density of bambu charcoal of Andong and Petung to respectively 0.5689 gr/cm3 and 0.5021 gr/cm3 and reducing the ventilation of anglo, the heating efficiebcy can be increased to respectively 40.27 % and 45.06 %. Moreover, the tested bamboo charcoal briquette of Andong has moisture content of 6.83 % (wb),volatile substance at 950 C of 22.71 %, Fixed carbon of 71.15 % and calorific value of 6668 cal/g, whereas the bamboo charcoal briqutte of Petung has moisture content of 4.25 % *wb), volatile substance at 950 C of 25.48 %, fixed carbon of 68.19 % and calorific value of 5018 cal/g.

Abstract

This study described about analysis of processing ,financial and SWOT (strength weakness,opportunities,and threats) for jackfruit  vacuum frying processing for vacuum frying of jackfruit the frying condition (pressure and temperature ) frying rate,and organoleptik test were investigated.the jackfruit are submerged in heated solid frying oil induce vavorization of the water from the jackfruit . this was conducted under vacuum pressure of-70 cm Hg ,and temperature level of 75 0C and 80 0C  such condition was done to minimize the heat used and therefore reduce changes in composition, color ,taste, and flavor of the jackfruit the results showed that the product has low moisture content of 3.58% ( wet basis)with the taste,flavor ,color, and volume similar to the fresh jackfruit .this experiment was conducted using 3 kg of jackfruit ,the yield of the product was 22% and the total water removal was 2510 ml. it finalcial analysis was conducted to evaluate the financial viability of jackfruit processing.financial analsyis of the jackfruit production capacity of 30 kg per day showed that NPV  (net present value) was rp 52.391.000 which was bigger than investment cost,IRR( internal rate return) was 51% and PBP(pay back period

Abstract

Hot oil immersion drying (HOID) of fry dry technology is a method of coconut oil extraction that involves drying the grated coconut kernel by immersion in hot coconut oil and then expelling the oil from the cooked pieces. the technology used was the secound generation, which has been improved from the frist one. the coconut oil can be used as cooking oil without any chemical purification and also to be used in cosmetic and pharmaceutical manufacturing. observation was done on processing technology and techno-economical study. the result showed that the improved technology was more efficient then the frist one and is able to reduce the oil spilled out of the pans which happened in the first generation technology. the coconut oil produced met the FFA and moinsature content requirements of indonesian industrial standard of cooking oil. base on the financial analtysis, conducting this technology commercially at 2000 nuts/day capacity was feasible which will give the internal rate of return (IRR) value at 22.38% and pay back period (PBP) 4.5 years. adding on initial investment of second-generation technology was not influencing the feasibility of the operational

Abstract

The rsearch of coconut fiber has been carried out to determined isotherm sorption and rate of weight decrease during drying. Isotherm sorption was done by adjusting room water activity which are 10%, 35%, 65%, 90% and 99%. The calculating data of research show linier regression with equation Y= 0.336156 X - 0.02038, R2= 0.9743, C=15.49 and m0=3.16. decreasing weinght of fiber was studied to find out the effect of amount of layer (1, 3 and 5 layers) and drying temperature (50 C, 60 C and 70 C). The result show that the temperature has no significant effect while amount of layer very significant to the dryness of fiber. The highest k value was found in the 1 layer treatment between 0.47912 - 0.85270, while the lowest k value found in the 5 layers treatment those are vary between 0.16770-.19793.

Abstract

Research on the canned string beans has been conducted .the formulation used was 1% salt,the organic acid (0.27% citric acid and 0.22% lastic acid ) and types of packaging (timplate and retort pouch) the product were stored for 0,2,4 and weeks the results showed that the result showed that the effect of storage gave the decrease of PH ,protein ,vitamin c and hardness.the microbial contents were relatively unchanged during storage .the process time required for tinplate retort pouch were 0.057 minutes respectively ,which adequate to render to canned string beans (pH< 4.5) microbiologically safe .
