Abstract

Kelor is one of the vegetables with high nutrients contents but haven’t been widely utilized. Adding kelor leaves flour to the crackers made with catfish flour to increase protein and minerals is one way to maximize the potential of its nutrient content. This research purposed to develop the formulation of crackers by adding kelor leaves flour and catfish dumbo flour as a food source of protein and minerals. Kelor leaves flour obtained from this research contains protein, calcium, iron, and zinc respectively for 23.25%, 640.5 mg/100g, 30.6 mg/100g, and 6.65 mg/100g. The best formula chosen from organoleptic was is crackers with the addition 10% catfish dumbo flour and 2.5 g kelor leaves flour. The crackers contain 11.50% protein, 30.73 mg/100g calcium, 8.56 mg/100g iron, and 609.70 mg/100g zinc respectively. Selected crackers contain more than 20% protein and more than 15% of iron and zinc standart for 2-5 years old children group based on nutrition label reference (ALG, for Indonesian), so it can be claimed as a food source of protein, iron and zinc.

Abstract

The aim of this study was to analyze the effects of the sweet potato to the levels of blood glucose on diabetic mellitus mice. This study had been carried out with a sample of 25 mice which were divided into 5 groups. The levels of blood glucose on mice before treating with rice flour and sweet potato flour on the negative control group (KN) was 76.2 ± SD, on the positive control group (KP) was 159.4 ± SD, on the 1st treatment group (P1) was 159.4 ± SD, on the 2nd treatment group (P2) was 166.6 ± SD and 3rd treatment group (P3) was 161.2 ± SD. The average blood glucose levels on the 2nd treatment group (P2) before treatment was 166.6 ± SD and after treatment was 109.0 ± SD. The result showed a significant difference based on the statistical data (p < 0.05) between 4 test groups of mice. There was a big difference on the average blood glucose levels before and after treatment o P2 and P3. It is concluded that the treatment of sweet potatoes gives a positive effects on the blood glucose levels of diabetic mellitus mice.

Abstract

In addition to the problem of deficiency and excess nutrients, Indonesia also have chronic malnutrition problems. Chronic malnutrition is a long-term malnutrition that causes stunting in infants. Several factors that cause the high incidence of stunting include lack of knowledge and inadequate nutrition practice. The purpose of this study was to determine the effect of nutritional counseling on changes in knowledge, attitude and behavior of mothers in the provision of MP-ASI children 6-24 months in Lubuk Buaya 2017. The study design was a quasi-group pretest-posttest experiment with a sample 34 people. Counseling was conducted for 3 times (1x / week). Data collection of knowledge variables, attitudes and practices of mothers were conducted using questionnaires. The results showed that there was a significant change (p <0.05) on the knowledge, attitude and practice of mother in giving MP-ASI after giving nutrition counseling. Therefore, nutritional counseling has an effect on improving mother's knowledge, attitude and behavior in giving of MP-ASI at 6-24 months.

Abstract

Kondisi pandemi Covid-19 menuntut setiap orang untuk mengonsumsi makanan yang bergizi tinggi untuk meningkatan imun agar tidak mudah terkena penyakit. Gracillaria dan Kelor merupakan pangan fungsional yang dapat dikembangkan dan berpotensi sebagai sumber antioksidan. Tujuan penelitian ini adalah menganalisis pengaruh penambahan daun kelor pada aktivitas antioksidan, total fenolik dan hasil uji organoleptik pada pengembangan produk Gracilaria Penelitian ini menggunakan metode eksperimen, dilakukan dengan beberapa tahapan diantaranya pembuatan produk tepung Gracilaria, dan kelor, formulasi dan pembuatan agar, serta analisis kandungan antioksidan, kandungan total fenolik, dan uji organoleptik. Berdasarkan uji analisis kandungan gizi makro dan mikro tepung Gracilaria didapakan hasil kandungan kadar air 15,54%, abu 3,78%, protein 7,32%, lemak 0,40% dan karbohidrat 65,54% kandungan antioksidan 114,70µG/mL dan total fenolik 6,82MgGAE/g. Sedangkan pada tepung daun kelor didapatkan hasil kadar air 8,87% abu 10,36%, protein 23.62%, lemak 4,76% dan karbohidrat 44,76% kandungan antioksidan 29,91µG/mL dan total fenolik 32,25MgGAE/g. Berdasarkan hasil penentuan formulasi dan uji organoleptik didapatkan F2 menunjukan hasil terbaik dengan nilai penerimaan keseluruhan yaitu 3,45 kandungan antioksidan 146,33µG/mL dan total fenolik 7,28MgGAE/g ekstrak. Penambahan kelor pada pengembangan produk Gracilaria sp. meningkatkan kandungan antioksidan, kandungan total fenolik dengan nilai p-value 0,05.

Abstract

Background: The prevalence of anemic pregnant women in Indonesia in 2018 was still high which was at 48.9%.  Pregnant women are vulnerable to nutritional problems and other diseases, including being infected with the Covid-19 virus. One of the preventive measures is to eat nutritious foods such as foods that are a source of antioxidants. The use of crackels (catfish crackers and Moringa) as an alternative snack for pregnant women is the right step because crackels contain high nutrients. The research objectives were to develop crackels, to analyze the nutritional content and their organoleptic quality.Methods: This research is an experimental study with substitution treatment of Moringa leaf flour towards catfish crackers conducted at the Laboratory of Mitra Indonesia University and State Polytechnic of Lampung. Six treatments were done with four repetitions. Data analysis used Microsoft Excel 2007 and SPSS for windows version 20. The tests used were non-parametric statistical tests, Anova, and paired sample t test.Result: Crackels formula that has been developed with the best acceptance and quality was formula F1 (3.49) which was derived from the addition of 10 grams of Moringa leaf flour and 30 grams of catfish flour. The best nutritional content of crackels is namely, energy 403 kcal, protein 21.3%, fat 15%, carbohydrates 45.7%, iron 8.32 mg/100g, calcium 29.6 mg/100g, sodium 672 mg/100g, and antioxidants indicated by % inhibition ranging from 32- 35% and IC50 value of 68.34%.Conclusion: The best crackels was the crackels which contain 10 grams of Moringa leaf flour and 30 grams of catfish which are effective as sources of antioxidants for pregnant women with antioxidants indicated by % inhibition ranging from 32- 35% .Keywords: anemic pregnant mother, antioxidant, catfish, crackers, moringa

Abstract

Penelitian ini bertujuan untuk menganalisis faktor-faktor yang berhubungan dengan kejadian Stunting di wilayah kerja dinas kesehatan kabupaten lampung utara tahun 2021. Desain penelitian yang digunakan adalah analitik cross sectional, subjek dalam penelitian ini adalah ibu dengan balita yang ada di Kabupaten Lampung Utara. Sampel yang digunakan sebanyak 100 responden dengan teknik pengambilan sampel menggunakan teknik purposive sampling. Analisis dalam penelitian ini menggunakan chi-square dan regresi logistik berganda. Hasil penelitian yaitu terdapat  26% balita yang Stunting. Balita asupan gizinya cukup sebesar 57%, persentase balita yang memiliki riwayat penyakit infeksi sebesar 29%, pemberian ASI Eksklusif sebesar 70%, terdapat 27% yang tidak menerima imunisasi dasar, Pendidikan ibu dengan kategori tinggi yaitu 73%, dan pendapatan keluarga dengan kategori tinggi yaitu 72%, dan terdapat 24% balita yang tidak mendapatkan layanan kesehatan, serta sanita lingkungan dengan kategori buruk sebesar 28%.. Hasil uji statistik didapatkan bahwa ada hubungan antara asupan gizi (p=0,000), penyakit infeksi (p=0,000), Riwayat Pemberian ASI Eksklusif (p= 0,000), imunisasi dasar (p=0,000), Pendidikan ibu (p=0,001), pendapatan keluarga (p=0,015), pelayanan Kesehatan (p=0,000), dan sanitasi lingkungan (p=0,000) dengan kejadian stunting. Pada analisis multivariat didapatkan faktor yang paling dominan adalah sanitasi lingkungan dengan p-value 0,001 dengan OR terbesar yaitu 28,540

Abstract

Compliance with iron tablets consumption is one of the factors associated with the incidence of anemia in pregnant women. Anemia is an indicator for poor nutrition and poor health. Anemia in pregnant women is strongly associated with maternal and infant mortality and morbidity, including the risk of miscarriage, stillbirth, prematurity and low birth weight (LBW). This study aims to determine the management of anemia control through adherence to the consumption of blood-added tablets in pregnant women at the Way Laga Health Center Bandar Lampung City in 2021. This type of research is quantitative with a cross sectional design, the population of this study is all pregnant women in the third semester as many as 47 people. with total sampling technique. Data were obtained by using a questionnaire sheet and analyzed by univariate and bivariate with chi square test. The results showed that pregnant women who adhered to the consumption of iron tablets were 44.7%. The results of statistical tests showed that there was a relationship between adherence to iron tablets consumption and the incidence of anemia in pregnant women with a p value of 0.029 (< 0.05).
