<![CDATA[Salah satu kriteria mutu gula aren yang telah ditetapkan oleh standard nasional industri adalah warna gula. Penentuan warna ini hanya didasarkan pada pengamatan dengan mata telanjang. Metode ini sangat subjektif sehingga perlu dikembangkan suatu metode yang objektif. Penelitian ini ditujukan untuk mengembangkan metode analisa yang objektif untuk menentukan warna gula. Spektrofotometer merupakan alat yang dapat digunakan untuk tujuan ini. Oleh karena itu, telah diteliti konsentrasi larutan gula yang dapat memberikan hasil optimal dalam penentuan warna gula. Hasil penelitian menunjukan bahwa konsentrasi gula 1,25 persen adalah yang terbaik digunakan untuk analisa warna gula aren. Indeks warna gula aren yang ada dipasaran bervariasi dari sekitar 16000 sampai 50000. The method is only based on the visual color by naked eyes. This method is very subjective, therefore, it is need a more objective method. This research is focused on the development of a more objective method for color determination in palm sugar. Spectrophotometer has been used for this measurement. It has been studied that the brown sugar concentration that gave optimal measurement for the color of brown sugar. The results show that the sugar concentration of 1.25 percent is the best for sugar color analysis of brown sugar.
