EFEK PENGGUNAAN ASAP CAIR KUSAMBI (Schleichera oleosa) PADA LEVEL YANG BERBEDA TERHADAP KANDUNGAN NUTRISI, KOLESTEROL DAN RASA DAGING SE’I SAPI

Abstract

This research was conducted in the laboratory of the Faculty of Animal Science, University of Nusa Cendana for 3 weeks, started on August 22 to September 10, 2015. The purpose of this study was to determine the effect of using differentlevel of Schleichera oleosa liquid smoke on nutrient (water, protein, fat), cholesterol and taste of beef se'i. The method used was completely randomized design (CRD) with 4 treatments, P0: without liquid smoke (as control), P1: liquid smoke 8 % (w/v), P2: liquid smoke 10 % (w/v), P3: liquid smoke 12 % (w/v) and each treatment repeated 3 times. Parameters measured were the nutrient content (water, protein, fat), cholesterol and taste. Nutrient and cholesterol content data were analyzed using of variance (ANOVA), while a score of tasted using Kruskall – Wallis by SPSS 17. The results showed that the use of the liquid smoke was highly significant (<0.01) effect on the content of nutrient, cholesterol and taste of se’ibeef. Inconclusion,the use of Schleichera oleosa liquid smoke able to increase the protein content, taste and reduces the water content, fat and cholesterol of beef se'i. The best level of using Schleichera oleosa in beef se’i in this research is 12 % (w/v). ABSTRAK Penelitian ini telah dilaksanakan di laboratorium Fakultas Peternakan, Universitas Nusa Cendana selama 3 minggu, terhitung tanggal 22 Agustus – 10 September 2015. Tujuan penelitian ini, yakni untuk mengetahui pengaruh penggunaan dan level pemberian asap cair yang terbaik terhadap kandungan nutrisi (air, protein, lemak), kolesterol dan rasa se’i sapi. Metode penelitian yang digunakan adalah metode Rancangan Acak Lengkap (RAL) dengan 4 perlakuan yaitu P0 : tanpa menggunakan asap cair, P1 : menggunakan asap cair 8 % (w/v), P2 : menggunakan asap cair 10 % (w/v), P3 : menggunakan asap cair 12 % (w/v) dan masing – masing perlakuan mendapat ulangan sebanyak 3 kali. Parameter yang diukur adalah kandungan nutrisi (air, protein, lemak), kolesterol dan rasa. Data kandungan nutrisi dan kolesterol dianalisis menggunakan sidik ragam (ANOVA), sedangkan skor rasa menggunakan Kruskall - Wallis dengan SPSS 17. Hasil penelitian menunjukan bahwa penggunaan asap cair kusambi berpengaruh sangat nyata (P<0,01) terhadap kandungan nutrisi, kolesterol dan rasa se’i sapi. Kesimpulannya, penggunaan asap cair kusambi mampu meningkatkan kandungan protein, rasa dan menurunkan kandungan air, lemak dan kolesterol se’i sapi. Level pemberian asap cair pada pengolahan se’i sapi yang terbaik dalam penelitian ini adalah 12 % (w/v).
