Abstract

Desa Glanggang terletak di Kecamatan Pakisaji, Kabupaten Malang, Propinsi Jawa Timur. hasil observasi dan wawancara kepada salah satu pelaku usaha pengolahan susu sapi. Beliau merupakan pemilik dari CV Prabu Muda Inggil, Bapak Tessa Septiadi. Produk keju mozzarella dijual dengan harga Rp.105.000/kg, sedangkan yoghurt stick dijual dengan harga Rp. 12.000/pcs. Saat ini usaha ini telah memiliki 5 (lima) orang karyawan aktif, dengan omset per bulan mencapai Rp. 7.000.000,00. Namun, ada masalah terkait dengan proses produksi dan masalah pada bidang marketing. Secara keseluruhan, metode pelaksanaan kegiatan ini melalui pelatihan, pendampingan, dan workshop klasikal. Rancangan pelaksanaan yang dilakukan pada kegiatan ini terdiri dari tujuh tahapan. Ketujuh tahapan tersebut meliputi: (1) persiapaan koordinasi awal tim pra-kegiatan; (2) pembuatan mesin Mesin dynamic mixer machine dengan rotation sensor sebagai pembuat keju mozarela; (3) workshop materi pembuatan abon ikan sebagai produk unggulan; (4) pendampingan penggunaan mesin spinner rotary encoder; (5) pelatihan maintenance dynamic mixer machine dengan rotation sensor; (6) pendampingan pemasaran produk keju mozarela; dan (7) evaluasi pasca kegiatan. Kegiatan ini menghasilkan: (1) terdesiminasikannya 1 unit Mesin dynamic mixer machine dengan rotation sensor; (2) meningkatnya kapasitas produksi keju sebanyak 85%; dan (3) peningkatan pemahaman mitra terkait dengan strategi pemasaran. Kata kunci— Olahan keju, Mozzarella, Potensi unggulan Abstract Glanggang Village is located in Pakisaji District, Malang Regency, East Java Province. results of observations and interviews with one of the business actors in processing cow's milk. Currently, this business has 5 (five) active employees, with a monthly turnover of Rp. 7,000,000.00. However, there are problems related to the production process and problems in the marketing field. Overall, the method of implementing this activity is through training, mentoring, and classical workshops. The implementation plan that will be carried out in this activity consists of seven stages. The seven stages include: (1) preparation of the initial coordination of the pre-activity team; (2) the manufacture of a dynamic mixer machine machine with a rotation sensor as a mozzarella cheese maker; (3) workshops on the manufacture of shredded fish as a superior product; (4) assistance in the use of rotary encoder spinner machines; (5) dynamic mixer machine maintenance training with rotation sensor; (6) marketing assistance for mozzarella cheese products; and (7) post-activity evaluation. This activity resulted in: (1) the dissemination of 1 unit of dynamic mixer machine with rotation sensor; (2) increase in cheese production capacity by 85%; and (3) increased understanding of partners related to marketing strategies. Keywords— Processed cheese, Mozzarella, Excellent potential
