Abstract

Abstract - Benzene and toluene can cause contamination in environments. Utilization of microorganism to degrade these compounds could be favorable approach to discover a convenient biodegradation agent. Fungi have an important role in the degradation of petroleum hydrocarbon (PHC). The aim of this study was to evaluate the potential of benzene and toluene degrading molds Aspergillus niger and Phanerochaete chrysosporium. These molds were selected to check the Lignin Peroxidase (LiPs) activity and formulate the medium conditions for improving degradation process. Optimization of medium conditions (pH and nutrient concentrations) for benzene and toluene degradation was applied under in vitro conditions. Molds were grown in sawdust media with pH settings (4, 5, 6 and 7) and nutrients (25%, 50%, 75% and 100%) followed by the addition of benzene and toluene. The percentage of degradation was analyzed using Gas Chromatography (GC). The optimal degradation conditions of benzene and toluene by A. niger were at pH 6 with nutrient concentration of 75%, while P. chrysosporium at pH 7 with nutrient concentration of 25%. All samples that had been polluted by benzene and toluene did not show LiPs activity, however non polluted samples showed LiPs activity 0,528 U/ml in A. niger and 0,275 U/mL in P. chrysosporium.Keywords- Aspergillus niger, Benzene, Biodegradation, Phanerochaete chrysosporium, Toluene.

Abstract

Abstrak - Anemia merupakan masalah kesehatan yang penting di seluruh dunia. Sekitar 51% ibu hamil menderita anemia dua kali lipat dari pada wanita tidak hamil. Penyebab anemia gizi besi terutama dikarenakan penyerapan zat besi dari makanan atau suplemen. Sari buah kurma (Phoenix dactylifera) sering disebut sebagai makanan yang dapat meningkatkan kadar hemoglobin karena kandungan zat besi yang tinggi. Tujuan penelitian ini adalah mengetahui pengaruh pemberian sari kurma terhadap peningkatan kadar hemoglobin ibu hamil dengan anemia. Metode penelitian menggunakan studi intervensi dengan metode one group pretest – posttest. Populasi dalam penelitian ini adalah ibu hamil trimester II dengan anemia. Besar sampel adalah 11 responden. Uji statistik yang digunakan adalah uji Wilcoxon dengan tingkat kepercayaan 95%. Hasil penelitian menunjukkan rata-rata kadar hemoglobin sebelum pemberian sari kurma sebesar 9,6 gr/dL, sedangkan sesudah pemberian sari kurma selama 10 hari rata-rata sebesar 10,6 gr/dL. Ada pengaruh yang signifikan (p value 0,004 < 0,05) pemberian sari kurma dengan kadar hemoglobin ibu hamil dengan anemia. Namun demikian hasil pengujian laboratorium diketahui kadar zat besi pada sari kurma rendah. Penelitian menyimpulkan bahwa sari kurma dapat meningkatkan kadar hemoglobin pada ibu hamil dan dijadikan suplemen meningkatkan kadar hemoglobin. Sari kurma bukan merupakan makanan sumber zat besi.Abstract - Anemia is an important health problem worldwide with 51% of pregnant women being doubly anemic compared with nonpregnant women. The cause of iron nutritional anemia is mainly due to the lack of iron. Dates (Phoenix dactylifera) are often referred to as foods that can increase hemoglobin levels due to high iron content. The purpose of this study was to study the effect of date palm extract on increasing hemoglobin levels in pregnant women with anemia. The research method used quasi experiment or intervention study with one group pre test - post test method. The population in this study were TM II pregnant women with anemia. The sample size is 11 respondents. The statistical test used was Wilcoxon test with 95% confidence level. The results showed that the average hemoglobin level before administration of date palm juice was 9.6 gr / dL, whereas after the giving of the average palm juice of 10.6 gr / dL. There was significant effect (p value 0,004 <0.05) giving of date extract with hemoglobin content of pregnant woman with anemia.However, the results of laboratory tests on substance levels in dates palm juice are low. The study concluded that palm juice can increase hemoglobin levels in pregnant women and using supplements increases hemoglobin levels. Abstract

Abstrak - Daging kelinci merupakan salah satu jenis daging yang memiliki potensi tinggi dalam pemenuhan konsumsi daging bagi masyarakat. Daging kelinci memiliki beberapa keistimewaan yaitu kandungan asam lemak jenuh dan kolesterol yang rendah serta kandungan asam lemak tak jenuh yang tinggi. Salah satu produk olahan daging kelinci yang bisa diperkenalkan kepada masyarakat adalah nugget daging kelinci yang diharapkan dapat memiliki manfaat kesehatan untuk menurunkan risiko Penyakit Jantung Koroner. Tujuan dari penelitian ini adalah untuk mengetahui profil asam lemak jenuh dan tak jenuh serta kandungan kolesterol pada nugget daging kelinci New Zealand White (Oryctolagus cuniculus). Desain penelitian yang digunakan adalah deskriptif eksploratif dengan 3 kali pengulangan menggunakan resep yang sama. Profil asam lemak dan kandungan kolesterol diuji menggunakan metode kromatografi gas. Hasil penelitian menunjukkan bahwa nugget daging kelinci mengandung 17 profil asam lemak jenuh dengan kandungan tertinggi yaitu asam palmitat, disusul oleh asam behenik, asam lignoserik, asam miristat, dan asam margarik. Kemudian, untuk profil asam lemak tak jenuh pada nugget daging kelinci mengandung 9 profil asam lemak tak jenuh tunggal dengan kandungan tertinggi yaitu asam oleat, disusul oleh asam nervonat, asam erukat, asam trans 9 elaidat, dan asam palmitoleat. Untuk asam lemak tak jenuh ganda terdiri dari 11 profil asam lemak dengan kandungan yang tertinggi yaitu asam linoleat, disusul oleh DHA, dan EPA. Selain asam lemak, nugget daging kelinci juga mengandung kolesterol sebesar 15,12 mg/100 g. Dengan kandungan gizi yang baik, nugget daging kelinci diharapkan dapat menjadi alternatif makanan untuk menurunkan risiko Penyakit Jantung Koroner.Abstract - Rabbit meat is one type of meat that has high potential in fulfilling meat consumption for the community. Rabbit meat has several advantages is low saturated fatty acid content and cholesterol and high unsaturated fatty acids. One of the processed products of rabbit meat that can be introduced to the community is rabbit meat nuggets that expected has health benefits it can reduce the risk of coronary heart disease. The purpose of this study was to know profile of saturated fatty acids, unsaturated fatty acids, and cholesterol content on rabbitmeat nuggetsofNewZealandWhite (Oryctolagus cuniculus). The research design used was descriptive exploratory with 3 repetitions using the same recipe. Profiles of fatty acids and cholesterol content were tested using gas chromatography method. The results showed that rabbit meat nuggets contained 17 profiles of saturated fatty acids with the highest content of palmitic acid, followed by behenic acid, lignoseric acid, myristic acid, and margaric acid. Then, for unsaturated fatty acid profiles on rabbit meat nuggets containing 9 profiles of monounsaturated fatty acids with the highest content, oleic acid, followed by nervonic acid, erucic acid, elaidat trans acid 9, and palmitoleic acid. Polyunsaturated fatty acids consist of 11 fatty acid profiles with the highest content, linoleic acid, followed by DHA, and EPA. Besides fatty acids, rabbit meat nuggets also contain cholesterol of 15,12 mg / 100 g. With a good nutrition content, rabbit meat nuggets are expected to be an alternative food to reduce the risk of coronary heart disease.Keywords – Cholesterol, Profile of saturated and unsaturated fatty acids, Rabbit meat nuggets

Abstract

Abstrak - Makanan halal berarti makanan yang diijinkan dalam hukum Islam dan memenuhi syarat yaitu tidak mengandung material apapun yang tidak diperbolehkan dalam hukum Islam. Belum adanya informasi terkait kehalalan makanan yang terdapat pada makanan yang dijual di sekitar kampus UAI menyebabkan perlu dilakukan penelitian yang dapat memberikan informasi terkait kehalalan produk makanan yang dijual pedagang di sekitar kawasan tersebut terutama makanan berbahan daging. Penelitian ini bertujuan untuk mendeteksi cemaran daging babi pada makanan berbahan dasar daging yang dijual pedagang di kantin kampus UAI. Metode yang dilakukan yaitu melakukan pengujian menggunakan Porcine detection kit terhadap sampel makanan berbahan daging. Kontrol positif yang dipakai yaitu sampel daging segar babi. Hasil pengujian menunjukkan bahwa seluruh sampel makanan (25 macam) tidak mengandung protein babi (hasil negatif). Dengan demikian makanan yang ada aman untuk dikonsumsi.Abstract - Halal food was known as food that permitted in Islam and met the requirements of good materials which was allowed in Islamic law. The lack of information related to the halal food especially found in UAI had been directed the research to be carried out. This research would  provide information regarding the halal food products sold in the area, especially meat-based foods. This study aimed to detect the contamination of pork in meat-based foods. The research used total sampling method. The method used porcine detection kit against samples of meat-based foods. Positive control used a fresh pork meat. The result showed that all food samples (25 foods) did not contain pork protein (negative results). Abstract

Abstrak - PT. XYZ merupakan perusahaan logistik yang bergerak dalam pendistribusian produk ke seluruh area JABODETABEK. Dalam menjalankan aktivitas proses pendistribusian, perusahaan dihadapkan pada kondisi permasalahan yaitu perusahaan diharuskan untuk mengunjungi dan melayani konsumen dengan lokasi yang tersebar di area JABODETABEK dengan tetap memperhatikan kapasitas muatan dari armada dan rute yang dilalui kendaraan. Oleh karena itu, diperlukan penentuan rute yang tepat agar perusahaan dapat memenuhi pengiriman tepat waktu kepada konsumen. Dengan adanya masalah tersebut, penelitian ini bertujuan untuk melakukan optimasi rute kendaraan dengan metode nearest neighbor agar mampu meminimalisir total jarak, total waktu dan biaya distribusi yang kemudian akan dianalisa perbandingan data aktual dan nearest neighbor. Pada penelitian ini menggunakan metode nearest neighbor. Hasil yang didapatkan dari penelitian ini adalah: (1) Mampu mengurangi persentase rata-rata jarak tempuh kendaraan dalam bulan Oktober 2018 sebesar 27% atau 44,09 km tiap harinya, (2) Mengurangi total waktu tempuh 157 menit dari data aktual, (3) Mampu menghemat total biaya sebesar 15% atau Rp. 53,458 tiap harinya. Dengan demikian metode pendekatan nearest neighbor mampu mengurangi biaya distribusi yang dikeluarkan oleh perusahaan tiap bulan.Abstract – PT. XYZ is a logistics company engaged in the distribution of products throughout the Greater Jakarta area. In carrying out the distribution process activities, the company is faced with the requirements of the problem about the company required to provide information and serve consumers with locations scattered in the Greater Jakarta area with due regard to capacity of vehicle and route. Therefore, it is necessary to determine the right route so that companies can meet timely deliveries to consumers. Given these problems, this study aims to optimize vehicle routes with the nearest neighbor method so as to minimize the time and cost of distribution which will then be analyzed to analyze the actual data and the nearest neighbors. In this study using the nearest neighbor method. The results obtained from this study are: (1) Able to reduce the average percentage of vehicle mileage in October 2018 by 27% or 44,09 km per shipment. (2) reduce total travel time of 157 minute from actual data, (3) Able to increase total costs by 15% or Rp. 53,458. Thus,the method of taking the nearest neighbor can reduce the distribution costs incurred by the company each month.Keywords – Distribution cost, Nearest neighbor, Route determination

Abstract

Abstrak – Dalam keberlangsungan suatu kinerja perusahaan, pentingnya memiliki satuan baku dalam pengukuran kinerja perusahaan. Jika perusahaan tidak memiliki pengukuran kinerja, hal tersebut ternyata berdampak buruk bagi perusahaan karena tidak adanya bahan evaluasi untuk memperbaiki kinerja perusahaan terutama di bagian sumber daya manusia. Pada penelitian ini, dilakukan usulan perancangan KPI pada restoran Waris Café dengan menerapkan konsep Green HRM. Bertujuan untuk merancang kinerja perusahaan dan turut serta menjaga keseimbangan lingkungan dengan melibatkan seluruh stakeholder restoran. Berdasarkan hasil wawancara dan diskusi dengan pakar, didapatkan 75 KPI secara keseluruhan yang terdiri dari tiap 5 stakeholder, dimana dalam tiap stakeholder memiliki 5 perspektif performance prism, dan dalam tiap 1 perspektif memiliki masing-masing 3 KPI. Dengan menggunakan metode Analytical Hierarchy Process yang dibantu dengan software Super Decisions, didapatkan hasil bobot kepentingan stakeholder terpilih yaitu investor dengan bobot 30,38%. Bobot KPI pada tiap hirarki yaitu, stakeholder investor sebesar 0,1056 terdapat pada KPI peningkatan persentase pendapatan, pemasok sebesar 0,0993 terdapat pada KPI mekanisme quality control yang dilakukan diperketat, pelanggan sebesar 0,1047 terdapat pada KPI penentuan kualitas makanan yang disajikan, karyawan sebesar 0,1349 terdapat pada KPI efektivitas pemberian rewards dan compensation 10% dari pendapatan, regulator sebesar 0,1154 terdapat pada KPI mematuhi aturan yang ditetapkan pemerintah dalam proses bisnis yang dijalankan. Abstract - In the sustainability of a company's performance, the importance of having a standard unit in measuring company performance. If the company does not have performance measurements, it turns out to have a bad impact for the company because there is no evaluation material to improve company performance, especially in the human resources section. In this study, the proposed design of KPI in Waris Café restaurant by applying the Green HRM concept. Aiming to not only design company performance, but also to maintain environmental balance by involving all restaurant stakeholders. Based on the results of interviews and discussions with experts, obtained 75 KPIs as a whole consisting of every 5 stakeholders, where each stakeholder has 5 performance prism perspectives, and in each 1 perspective each has 3 KPIs. By using the Analytical Hierarchy Process method which is assisted by the Super Decisions software, the result of the weighting of the interests of the selected stakeholders is investors with a weight of 30.38%. KPI weights in each hierarchy namely, stakeholder investors amounted to 0.1056 contained in KPIs increased percentage of income, suppliers amounted to 0.0993 contained in KPI quality control mechanisms were carried out tightened, customers amounted to 0.1047 contained in KPI determining the quality of food served, employees amounted to 0.1349 contained in KPI effectiveness granting rewards and compensation of 10% of revenue, the regulator of 0.1154 found in KPI complies with the rules set by the government in the business processes carried out.Keywords - Performance indicator, Performance prism, Green human resources management, Analytical Hierarchy Process

Abstract

Abstrak –Kondisi keabnormalan profil lemak yang tinggi secara tidak langsung menggambarkan keadaan dislipidemia. Konsumsi ikan yang masih rendah dan potensi biji nangka yang memiliki kalori rendah dapat dijadikan alternatif makanan rendah kalori berupa bakso ikan. Sebelumnya telah dilakukan uji daya terima formula bakso ikan dengan tepung biji nangka, tetapi komposisi formula tersebut belum sesuai dengan SNI 766:2014. Penelitian ini bertujuan untuk mengetahui kandungan makronutrien produk bakso ikan lele dumbo yang diformulasikan dengan tepung biji nangka, serta mengetahui formula terbaik yang sesuai dengan SNI. Terdapat tiga formula bakso ikan yaitu P0 (25,8% ikan lele dan 64,5% tepung tapioka), P1 (25,8% ikan lele dan 64,5% tepung biji nangka), dan P2 (45,2% ikan lele dan 45,2% tepung biji nangka). Ketiga formula dilakukan uji proksimat dengan dua kali ulangan untuk variabel kadar protein, lemak, karbohidrat, kadar abu, kadar air dan serat kasar. Hasil uji ANOVA menyatakan terdapat perbedaan diantara ketiga formula pada semua variabel dan formula yang paling sesuai dengan SNI 766:2014 adalah formula P2 yang mengandung protein 10,35%, lemak 1,64%, karbohidrat 23,97% yang setara dengan 151,92 kkal/100 g.Abstract -  The abnormality of high fat profiles indirectly illustrates the condition of dyslipidemia. The consumption of fish that still low and the potential of jackfruit seeds that have low calories can be used as alternative low-calorie foods in the form of fish meatballs. Previously, it was tested the acceptability of fish meatball formula with jackfruit seed flour, but the composition of the formula was not in accordance with SNI 766: 2014. This study aims to determine the macronutrient content of African catfish meatballs formulated with jackfruit seed flour, and to find out the best formula according to SNI. There are three fish meatball formulas, namely P0 (25,8% catfish and 64,5% tapioca flour), P1 (25,8% catfish and 64,5% jackfruit seed flour), and P2 (45,2% catfish and 45,2% jackfruit seed flour). The three formulas were carried out by proximate test with two replications for variable levels of protein, fat, carbohydrate, ash content, moisture content and crude fiber. The ANOVA test results state that there are differences between the three formulas on all variables and the formula that best fits SNI 766: 2014 is P2 formula which contains 10,35% protein, 1,64% fat, 23,97% carbohydrate which is equivalent to 151,92 kcal / 100 g.Keywords – Proximate analysis, Catfish meatballs, Dislipidemia, Jackfruit seed flour, SNI.

Abstract

Abstrak - Ikan Sapu-Sapu (Pterygoplichthys pardalis) salah satu jenis ikan yang berada di sungai Ciliwung MT. Haryono Jakarta. Ikan tersebut mampu hidup dalam perairan sungai Ciliwung yang tercemar oleh logam. Masyarakat sekitar memanfaatkan ikan sapu-sapu sebagai produk olahan pangan. Permasalahannya apabila ikan sapu-sapu yang diolah tersebut tercemar oleh logam maka dapat membahayakan masyarakat. Analisis kandungan logam dilakukan dengan menggunakan alat Spekrometer X-Ray Fluoresence (XRF). Hasil penelitian menunjukan bahwa ikan sapu-sapu tersebut mengandung logam As, Cd, Co, Cr, Fe, Mn, Hg, Ag, Pb dan Zn. Terdapat empat logam yang dibandingkan dengan PerBPOM 2017 yaitu As, Hg, Pb dan Cd. Keempat logam tersebut telah melebihi batas maksimum yang telah ditetapkan. Sehingga ikan sapu-sapu asal sungai Ciliwung MT.Haryono tidak layak untuk dikonsumsi oleh masyarakat.Abstract - Plecofish (Pterygoplichthys pardalis) is one type of fish that is on the Ciliwung river MT. Haryono Jakarta. The fish is able to live in waters of the Ciliwung river which is polluted by metals. The surrounding community uses plecofish as a processed food product. The problem is that if the pleco flesh that are processed are contaminated by metals, they can risky the community. Analysis of metal content was carried out using the X-Ray Fluorescence (XRF) spectrometer. The results showed that the pleco flesh contained metals As, Cd, Co, Cr, Fe, Mn, Hg, Ag, Pb and Zn. There is four metals compared with PerBPOM 2017 are As, Hg, Pb and Cd. The four metals have exceed the maximum specified threshold. So the pleco flesh from the Ciliwung river MT.
