Abstract

This study aims to determine the quality characteristics and degrees of chitosan deacetylation of sea cucumber Holothuria scabra skin extracted in different heating time. The reserach was conducted by using experimental method, that was extracting the skin of sea cucumber Holothuria scabra by heating it in extractor NaOH solution for varied time (90, 120 and 150 minutes) to produce chitosan flour. The results showed that the sea cucumber skin was containing of 5,26% water, 17,96% protein, 0,40% fat, 61,11% ash and 17,13% carbohydrate. The yield of chitin flour was 40,40%. It was containing of moisture 5,27%, ash 6,02%, with deacetylation degree of 38,84%. The different of heating time was siginificantly affecting to the quality of the chitosan flour produced. Extracting the skin of sea cucumber by heating it for 150 minutes produced the best quality of chitosan, indicated by the yield of 33,11%, moisture content of 5,96%, ash content of 6,65%,  with deacetylation degree of 69,65%.

Abstract

The purpose of this research is to determine the effect of adding bamboo shoots (Dendrocalamus asper) flour to the quality of goatfish (Upeneus moluccenis) nugget. The treatment is with total tapioca flour used 75 g with the addition of bamboo shoot flour which consists of 4 levels ie NO (0% bamboo shoots flour), N1 (5% bamboo shoots flour), N2 (10% bamboo shoots flour), N3 (15% bamboo shoots flour). Based on the research, the effect of the addition of bamboo shoots flour to goatfish nugget quality was significantly affect to the organoleptic value, moisture, ash, protein, fat, and crude fiber content. The result of the study on N3 treatment was the best treatment with characteristics: light brown appearance (7.27), very specific of goatfish odor (7.32), savory taste (7.32), solid and compact texture (7.56 ) and the chemical values of moisture, ash, protein, fat, and carbohydrate content are 40.79%, 2.05%, 10.50%, 1.02%, 25.23%, 20. 43%, respectively.

Abstract

This research aims to determine the physico-chemical characteristics and amino acid profile from sembilang fish meal with different handling methods. This research is using experimental method. Different handling methods used in this study were S0 (fresh fish), S1 (powdered fishmeal stored at cold temperatures), and S2 (powdered fishmeal kept at freezing temperatures). The results showed that S1 was the best handling of fish meal with yield of 14.13%, white degree 75.43%, water absorption 58.6%, acidity 8.0% water content 8.66%, ash content of 2.10%, protein content 80.48%, 4.20% fat content, total essential amino acid 39.12%, and non-essential amino acids 48.87%.

Abstract

Aceh Waters has a very potential biological resources, that made the cathing rates become the potential activities. Skipjack Tuna (Katsuwonus pelamis) is one of the potential fishing due to high economic value and its high distributions. The abundant of Skipjack Tuna was affected by the productivities of chlorophyll-a. this study aims to investigate the effects of chlorophyl-a on the catch rates of Skipjack Tuna in Aceh waters during September 2017. Survey methods were applied for this study by conducting three scientific research cruises to 32 fishing ground stations. The results of satellite images and catch retes were generate by using overlay method. Satellite images data on September 2017 shows that the average of chlorophyll-a is around 0,23 mg/m3, with the variations 0,10 – 1,30 mg/m3 that distributed around Aceh Waters and Selat Melaka. And the biggest catching of Skipjack Tuna achieved on the third trip where the chlorophyll-a is around 0,17mg/m3 and the total of catch rates is 7,480 kg.

Abstract

This study aims to determine the characteristics of catfish (Paraplotosus albilabris) oil by using different solvent extraction agent. The method used in this study is experimental method using a Completely Randomized Design (CRD) as a treatment  is  a  different  type  of  solvent  i.e.  ethanol,  ethyl acetate, and n-hexane. The result of fish oil extraction which obtained using ethanol, ethyl acetate, and n-hexane solvent produced different rendement levels i.e. 14.59%, 11.28%, and7.48%, respectively. The Acid value of catfish oil using ethanol solvent is 224.06 mg/g, ethyl acetate solvent 206.76 mg/g, andn-heksan solvent 106.83 mg/g. The Iodine value of catfish oil using  ethanol  solvent  is  83.66  mg/ml,  ethyl  acetate  solvent72.81   mg/ml,   and   n-hexane   solvent   82.29   mg/ml.   TheStraaponification value of catfish oil using ethanol solvent is334.58 mg/ml, ethyl acetate solvent is 333.70 mg/ml, and n- hexane solvent 303.17 mg/ml.

Abstract

This study aims to identify the potential of capture fisheries resources by calculating the economic value of analyzing the economic value of Lake Kajuik fishery resources. Research Methods by Identifying Potential Fishery Resources and Effect of Production (EoP) Method with Consumer Surplus Approach. This research was conducted on May - June 2017 at Kajuik Lake, Langgam District, Pelalawan Regency with 30 respondents with lake 42,5 ha and 22,5 ha wide. The result of the research concludes that in calculating the economic value of capture fishery resources by using Effect of Production (EoP) calculation with consumer surplus value (CS) is obtained Rp 25,017,747  per fisherman per year. The economic value of fisheries capture fishery resources of Lake Kajuik is obtained at Rp 46,699,794 per hectare.

Abstract

Clam Finger (Fish Stick) products from Lingula Unguis have never been done before. During this, the product Finger (Fish Stick) only made from fish, meat and chicken. The production of abundant Lingula Unguis in Tanjung Balai City requires innovative food processing ready to eat and economic value. The purpose of this research is to know how far consumer acceptance to clam finger with different batter formulation. The research method used is the method of expriment with 3 treatments and 3 repetitions. Treatment of A1 (wheat flour and rice flour), A2 (tapioca flour and rice flour), and A3 (rice flour and meizena flour). The research design used was complete randomized design (RAL) non factorial. Organoleptic test results to 80 panelists known to panelists prefer treatment A3 in terms of taste and texture. As many as 27.5% say very like and 62.5% say likes in the flavor category. While 25% states are very fond of texture A3, and as many as 68.75% say likes. From the results of duncan test conducted for the category of appearence and aroma there is no real difference between treatments, while the taste and texture category there is a real difference between A3 and other treatments with 95% confidence level

Abstract

The existence of mangrove ecosystems strongly support the sustainability of ecosystems in coastal areas. Rhizophora apiculata is one of the most common mangrove species in Indragiri Hilir regency (Inhil). This study aims to collect mangrove ecosystem databases covering the ecological structure of R. apiculata on the east coast of Indragiri Hilir Regency. Mangrove sampling was done by using line transect at two locations namely Kuala Enok Industrial Estate located in Tanah Merah Subdistrict and mangrove conservation area located in Sungai Asam Village, Reteh Sub-district. The results showed that population density of R. apiculata for tree category in Kecamatan Tanah Merah was 722.2 ind/ha and Sungai Asam village of Reteh sub district was 1000.0 ind/ha. Whilst the density of seedling category in both areas have the same value that is equal to 777.8 ind/ha. Based on the results of Bhattacharya method analysis using software FISAT II version 1.2.2., demographic structure of R. apiculata population in two areas there is only one size group with average stem diameter ranged between 8.0 - 8.6 cm.

Abstract

This researh was aimed to determine the changes of protein and amino acid profil content of catfish (Paraplotosus albilabris). The research method is conducted by experimental method that was doing a series of experimental research of different cooking process in catfish. The design used was a completely randomized design non factorial with 4 levels treatment namely:without cooking process as a control (P0), boiling cooking process (P1), boiling cooking process with salt (P2), and steaming cooking process (P3). The results showed that the nutritional content of catfish after the different cooking treatment gave a real effect on the water, ash, fat, and protein content and gave different amino acid profile each different cooking process. Boiling cooking process had amino acid content 90.58% and closed to amino acid content of fresh catfish (control). The binding capacity of catfish flour from different raw material gave the different of water holding capacity value ie catfish flour from fresh condition 3.3g/g (P0), boiling cooking process 3.1g/g(P1), boiling cooking process with salt 3.1g/g(P2), and steaming cooking process 3.7 g/g (P3).

Abstract

This research was conducted in August 2016 at Prigi Fishing Port (PPN) Prigi, Tasikmadu Village, Watulimo Subdistrict, Trenggalek Regency, East Java Province. The purpose of this research is to analyze the superior commodity of catch fishery and its contribution to PAD of Trenggalek Regency. This research uses quantitative descriptive method. Flagship commodities based on volume of production and receipt are Layang Deles fish, Lemuru, Tuna Madidihang and Como Casks. The average contribution of leading commodity of catch fishery from 2011-2015 to PAD is Layang Deles fish of Lemuru 0,9%; Tuna Madidihang 0.3% fish and Como Como fish of 0.1%.
