Abstract

Tofu from Lembang, Tofu from Sumedang and Tofu from Garut are three types tofu that are produced in different places, but still close. Although made from the same raw material that is soy, every tofu will produce a different tofu, both in terms of taste, aroma, texture and suppleness. Differences in the type of flavour compouds used can also be a factor causing divergence of any tofu product. The characteristic of the tofu were determined by identifying the flavour compouds GC-MS, as well as organoleptic tests. To determine differences in compound-producing falvour in the tofu. The results extraction method was carried out on tofu samples using n-pentane as solvent then analyzed using GC-MS. Flavour compounds of all three types of tofu included into the ester group, alkenes and aldehydes. Organoleptic tests show that the panelists prefered. Tofu from Sumedang for test of colour appearance (82%), for the test texture panelists like Tofu from Garut (83%), for test of elasticity panelists prefered Tofu from Garut Lembang (75%), for taste test panelists prefered Tofu from Lembang (88%), panelists prefered Tofu from Lembang for flavour test (82%).

Abstract

The purpose of this research is to discuss the hadith of the prophet Saw. about iron. This method of research is qualitative through the takhrij and syarah hadith approaches a chemical analysis. The results and discussions of this research are ways of eliminating and preventing rusty iron. The conclusion of this research is takhrij and syarah hadith of the prophet Saw. about iron by chemical analysis in optimizing iron use with plans to prevent it.

Abstract

The purpose of this research is to discuss the hadith of the Prophet Saw. about the use of soil as purification mughallazah unclean. This research method is qualitative through the takhrij and syarah hadith approaches with chemical analysis. The results and discussion of this study is that the components contained in the soil can clean and adsorb bacteria from dog saliva. The conclusion of this research is takhrij and syarah hadith of the Prophet Saw. regarding the use of soil as a purifier for mughallazah unclean with chemical analysis it is proven that bacteria or viruses in dog saliva can be absorbed by the soil.

Abstract

This study aims to discuss the hadith of the Prophet Muhammadﷺ about the role of soil as one of the materials used to clean dog saliva feces. This research method is qualitative through the approach of takhrij and syarah hadith with chemical analysis. The results and discussion of this research are that since the time of the Prophet until now the soil has been believed as a material used to purify dog ​​saliva, especially with the presence of research through the field of chemistry. This study concludes that the hadith is concluded to be of authentic quality and the truth of the content of the hadith can be proven, that by chemical analysis of the soil has a usefulness that has been tested to be able to clean the feces of dog saliva.

Abstract

The purpose of this research is to discuss the hadith of the Prophet Muhammad Saw. about the hadith's point of view on iron. This research method is qualitative through the takhrij and sharah hadith approaches with chemical analysis. The results and discussion of this research are about the phenomenon of iron rusting and also about the benefits of iron in all aspects of life. This research concludes that the presence of iron is at the same time a phenomenon that has existed since the time of the Prophet Muhammad Saw. brings many benefits in human life based on takhrij and sharah hadith. This study recommends developing the benefits of iron through chemistry

Abstract

Karies gigi merupakan masalah kesehatan mulut yang dialami 3,5 miliar orang di dunia. Karies gigi disebabkan oleh adanya aktivitas dari bakteri Streptococcus mutans. Temu mangga (Curcuma amada) yang mengandung senyawa kurkuminoid dan xylitol diketahui berpotensi menghambat pertumbuhan bakteri Streptococcus mutans. Maka dari itu, dilakukan pengembangan produk olahan pangan fungsional berbentuk fruit leather berbahan dasarkan temu mangga (Curcuma amada) dan xylitol yang diketahui memiliki aktivitas antibakteri dan berpotensi menghambat bakteri Streptococcus mutans sebagai penyebab karies gigi. Pada penelitian ini dilakukan pembuatan fruit leather dengan lima variasi penambahan temu mangga dan xylitol yaitu 80:20, 70:30, 50:50, 30:70, 20:80%, lalu dilakukan analisis karakteristik, uji organoleptik dan uji aktivitas antibakteri. Metode yang digunakan untuk mengetahui karakteristik meliputi penentuan kadar air (metode thermogravimetri), jumlah gula (sukrosa) (metode luff schoorl), kadar cemaran logam menggunakan instrumen AAS (Atomic Absorption Spectrophotometer). Metode yang dilakukan untuk mengetahui aktivitas antibakteri yaitu difusi cakram. Hasil penelitian menunjukkan variasi rasio penambahan temu mangga dan xylitol mempengaruhi kadar air, jumlah gula (sukrosa), dan cemaran logam. Semakin besar penambahan temu mangga meningkatkan kadar air, dan menurunkan nilai kadar gula, sebaliknya dengan xylitol. Selain itu, variasi rasio penambahan temu mangga dan xylitol mempengaruhi karakteristik sensoris fruit leather yang dapat dilihat dari parameter warna, tekstur, rasa dan aroma. Variasi fruit leather yang paling banyak disukai panelis yaitu variasi 20:80% dengan variasi penambahan xylitol terbesar. Nilai aktivitas antibakteri terbesar yaitu dengan zona hambat sebesar 7,10 mm dimiliki oleh variasi 80:20% dengan variasi penambahan temu mangga terbesar.
