Abstract

Abstract. This research investigated tempe fortified with iron and vitamin A on serum transferrin receptors. Experimental research Randomized Pre Test-Post Test Control Group Design was conducted on 30 Sprague-Dawley rats with iron deficiency anemia. The rats divided into 6 groups randomly, was treated for 6 weeks with a standard feed supplemented by soybean tempe fortified with iron and vitamin A. Group 1 control group was given standard feed AIN93G (SF), group 2 SF+T0, group 3 SF+T1, group 4 SF+T2, group 5 SF+T2+V15, (6) SF+T2+V50. T0 was tempe without fortification. T1 and T2 was tempe that was fortified with 230 ppm and 271 ppm of iron (FeSO47H20, respectively. V15 and V50 was tempe that was fortified with 15 ppm and 50 ppm of vitamin A (retinyl acetate, respectively. Statistical test was used Kruskal Wallis test. The result showed that before intervention, there was no significantly different on mean of serum transferrin receptors (sTfR) (p=0,280). After intervention, sTfR became 13,04,0; 8,72,8; 8,52,6; 7,43,4; 7,21,7 and 1,90,4 g/mL, respectively. Tempe fortification with iron and vitamin A significantly decreased sTfR (p=0,004). Average of sTfR lowest in the treatment of SF+T2+V50 (standard feed+tempe was fortified with 271 ppm of iron + 50 ppm vitamin A).

Abstract

ABSTRACTVelvet bean tempe and glycemic control in streptozotocin induced Sprague Dawley ratsBackground: Modern treatment combined with functional food rich in antioxidants show the considered to control glycemic status. Such functional food is velvet bean tempe (VBT) rich in flavonoids. The study aimed to analyze the effect of the velvet bean tempe on glycemic control i.e. the blood glucose levelMethods: A randomized controlled group pre test-post test design using 50 male Sprague Dawley (SD) rats aged 2-3 months was carried out for 30 days. The rats were randomly allocated into 5 groups: negative control (C-), positive control (C+), streptozotocin (STZ)+10%VBT, STZ+20% VBT, STZ+30% VBT. Data were analyzed with paired T test, one-way Anova and continued with Duncan’s multiple range test. Analysis of blood glucose levels used with super glucocard II test meter, and for C peptide levels ELISA was used.Result: Supplementation of VBT 20% and VBT10% reduced the level of blood glucose until 46.1% and improve the level of C peptide until 44,3±8,3 pg/ml respectively.Conclusion: Velvet bean tempe has the potency as functional food to help controlling glycemic status.Keywords: Velvet bean tempe, glycemic control, streptozococinABSTRAKLatar belakang: Pengobatan modern dikombinasikan dengan pangan fungsional yang kaya antioksidan dapat menjadi pertimbangan untuk memperbaiki status glikemi. Jenis bahan pangan tersebut adalah tempe koro, memiliki banyak senyawa antioksidan flavonoid. Penelitian ini bertujuan untuk membuktikan pengaruh tempe koro benguk terhadap pengendalian status glikemi pada tikus Sprague Dawley yang diinduksi streptozotocin.Metode: Penelitian randomized pre test-post test control group design, dilakukan menggunakan 50 ekor tikus jantan jenis Sprague Dawley umur 2-3 bulan selama 30 hari yang dibagi kelompok kontrol negatif/C-; positif/ C+; STZ+ tempe koro benguk 10%;  STZ+tempe koro benguk 20%; STZ+tempe koro benguk 30%. Dilakukan pemeriksaan glukosa darah menggunakan super glucocard II test meter dan C peptida menggunakan ELISA.Hasil: Asupan tempe koro benguk dalam berbagai dosis menurunkan kadar glukosa hingga 46, 1% dan penurunan terbesar pada tikus yang diberi tempe koro benguk 20%. Selain itu tempe koro benguk dapat meningkatkan kadar C peptida hingga 44,3±8,3 pg/ml, peningkatan terbesar pada tikus yang diberi tempe koro benguk 10%.Simpulan: Tempe koro benguk dapat dipertimbangkan sebagai pangan fungsional dalam mengendalikan glikemi pada tikus hiperglikemi.

Abstract

Mangroves are good hyperaccumulators, they are not only able to grow on highly poisonous land, but also accumulate the poisonous substances in the branches and leaves. The aim of the research was to evaluate the bioaccumulation of Cu on Avicennia marina in Tapak Semarang. Tapak Semarang is selected as the research site because the mangrove ecosystem is surrounded by milkfish ponds. The research used ecological approach. Bioaccumulation data and heavy metal translocation in plants, sediment and water were analyzed using pre-determined formulation. Results showed that Cu was found in water (0.0069 mg/l), sediment (26.760-37.889 mg/Kg), roots (2.336-7.997 mg/Kg), young leaves (2.367-6.604 mg/Kg) and old leaves (1.080-6.748 mg/Kg) of Avicennia marina. Sediment have the highest ability to accumulate Cu ( ) compared to water with concentration factors of ranging from 3878.26 to 5491.16. The Bioconcentration Factor (BCF) of roots and sediment was ranging from 0.09 to 0.211, and the Translocation Factors (TF) for young leaves was ranging from 0.83 to 1.54 and for old leaves was ranging from 0.46 to 0.94. It was found that the concentration of Cu in the pond tended to increase towards the sea. It was concluded that there was an accumulation of Cu in the sediment, roots and leaves of Avicennia marina in Tapak, Tugurejo Semarang. The sediment have the highest ability to accumulate Cu from the environment.

Abstract

Food safety is one aspect of quality that is a necessity. Therefore, food safety needs to be well understood by all levels of society. Information related to food safety can be easily obtained in today's digital era through various social media. This ease of access needs to be balanced with the delivery of precise and accurate information. Attractive visualization as an illustration in educational design can increase new knowledge for the community. Youtube and Tiktok were chosen as educational media for delivering information related to food safety through the Community Service program. The education delivered on Youtube includes 2 types of information, namely the method of discussing the latest news and food safety in the form of courses at the Faculty of Agricultural Technology, Soegijapranata Unika. Short videos and animations related to microplastics and food safety were delivered through Unika’s Food Tech Tiktok social media, targeting teenagers as the audience. Through this Community Service activity, public would get the reliable education or information about food safety from online media easily. Youtube and Tiktok viewers can also share important messages contained in the video to other social media accounts.
