Abstract

A limited survey was conducted to determine aflatoxins contaminations in feed and products of Alabio duck. A total of 271 feed samples, 48 liver sample, 42 meat samples, and 38 egg samples were analyzed for determination of aflatoxin B1 (AFB1) and aflatoxin M1 (AFM1) using Enzyme-Linked Immuno-Sorbent Assay (ELISA) tests. Results showed high prevalence of AFB1 contamination in feed sample, especially in feed concentrate, dried fish, and rice hulls (100%). AFB1 concentrations were higher than tolerable limit for AFB1 in feed for laying duck according to Indonesia National Standard (SNI), being 20 ppb, except for sago pit. This survey also showed high prevalence and levels of aflatoxin residues in the products of Alabio duck. AFB1 was found in all liver samples, with concentrations ranging from 4 to 12 ppb (average: 7 ppb). AFM1 was found in all of liver, meat, and egg samples. The highest level of AMF1 was found in liver which was ranging from 105 to 1,215 ppt (average: 304 ppt). High level of AFM1 was also found in meat, namely between 71 to 128 ppt (averaged: 91 ppt). Although found at low level, AFM1 was detected in egg, which was ranging from 10 to 36 ppt (average: 19 ppt). This survey showed high contaminations of aflatoxins in the liver, meat and egg of Alabio duck collected from the area of survey and their concentrations of aflatoxins were harmful for the consumer.

Abstract

The objective of this research was to examine the effectiveness of coconut water with various egg yolk concentrations in maintaining the viability of epididymal spermatozoa of crossbreed cattle preserved at 5oC. Five testis with epididymides of crossbreed cattle were obtained from slaughterhouse. Epididymal spermatozoa was collected by the combination of slicing, flushing and tissues pressure methods of cauda epididymides with saline solution (0.9% NaCl). Collected-spermatozoa was equally divided in volume into four tubes and diluted with lactose extender containing 20% egg yolk (control), 90% coconut water + 10% egg yolk (CWEY10), 85% coconut water + 15% egg yolk (CWEY15), and 80% coconut water + 20% egg yolk (CWEY20), repectively. Diluted-spermatozoa was stored in refrigerator at 5oC. Quality of dilutedspermatozoa including percentages of motile spermatozoa (MS), live spermatozoa (LS), spermatozoa with intact plasma membrane (IPM) were evaluated every day during four days of storage. Data were analyzed by using completely randomized design with four treatments and five replicates. Means were compared with significant difference test at 0.05 significant level. Results of this study showed that mean of spermatozoa concentration, percentage of MS, percentage of LS, percentage of spermatozoa abnormal, and percentage of IPM of crossbreed cattle fresh epididymal spermatozoa were 1,414 million cell/ml, 72%, 85%, 9%, and 90%, respectively. At day-4 of the storage, percentages of MS, LS, and IPM of control (43, 52.2, 59.2%) and CWEY20 (42, 52, 59%) were significantly (P<0.05) higher than CWEY10 (33, 45.4, 52.8%) and CWEY15 (37, 50, 54.6%). In conclusion, lactose and CWEY20 extenders could be maintaining the quality of epidydimal spermatozoa of crossbreed cattle for three days preservation at 5oC and two days for CWEY10 and CWEY15.

Abstract

Meat is one source of protein that is widely consumed by humans. In general, the meat is largely derived from ruminant livestock such as cattle and buffalo. In consuming this meat almost all people still have difficulty in processing because of low shelf life and high cholesterol content so it can have a negative impact on health. To maintain the shelf life of meat can be preserved by using chemicals such as citric acid. However, the use of chemicals for preservation will affect the quality of meat that will have a negative impact on health. So to overcome this in this study was conducted with the aim to examine the natural materials that exist in nature to serve as materials that have more use in processing the production of livestock, especially meat. These natural ingredients in addition to preserving also lower cholesterol levels of meat. The method used in this research is to blend the three organic materials that have been provided with the ratio of nutmeg, belimbing wuluh and garlic respectively 10%. Then mixed with ruminant meat (beef, goat, buffalo), soaked with each 0, 10, 20, 30 and 40 minutes sampling for bacteria testing, cholesterol test, pH test, water binding test and cooking shrinkage test.

Abstract

This study aims to determine the chemical quality (water content, protein content and fat content) of South Kalimantan swamp buffalo meat in different ecosystems. The research was conducted using survey and laboratory methods. Meat samples were taken from three Slaughterhouses (RPH), RPH Basirih, RPH Martapura and RPH Pelaihari. The samples were then taken to the laboratory to test the chemical quality of buffalo meat. The sample of swamp buffalo meat used was the Longissimus dorsi muscle. The resulting data were analyzed and tabulated based on the maintenance ecosystem, namely the swamp buffalo kept in the swamp ecosystem and the swamp buffalo kept in the terrestrial ecosystem. The data obtained were then grouped and tested using the Independent Samples Test. The results showed that the difference in the buffalo rearing ecosystem did not affect the protein and fat content but had a very significant effect on the water content of the buffalo meat produced (P<0.01).

Abstract

This research executed in Technological Laboratory of Majors Agriculture Budidaya of Faculty Of Agriculture UNLAM. This Research aim to know influence long time pasteurized and old deposity to irrigate milk quality of dairy cattle Fresian Holstein. Method used by is series of experiment with Complete Random Device ( factorial RAL) Pattern ( two factor). Factor A is long time pasteurized ( A1= 10 minute, A2= 20 minute and A3 minute= 30 minute). Factor B is depository old ( B1= 0 day, B2= 3 day, B3= 6 day, B4= 9 day, and B5= 12 day). The material used in this research was 4 litre which irrigate milk of dairy cattle of result of pressing out tidy morning in sterile bottle each as much 80 ml. The parameter examined is alcohol test, test to boil, test reduktase and pH milk. The result of research indicate that best treatment is pasteurized of at temperature 70 ° C oldly 20 minute, able to maintain pH and time reduktase at longest depository until 12 day in refrigerator .

Abstract

Moringa is a plant that has a high nutritional content where the leaves can be used as one of the basic ingredients for food processing. The community service program was carried out in the IKM Maju Bersama group in Liang Anggang Village, Bati-Bati District, Tanah Laut Regency. The method used in this service is the counseling method by providing material related to the introduction and benefits of moringa plants, variations of moringa products and their nutritional value, as well as marketing management. In addition to providing hands-on training on making Snow White cakes, sponge cakes, puddings, meatballs and moringa nuggets. Members of the Maju Bersama IKM group have the potential to process various food products from Moringa leaves, due to the availability of Moringa plants around the group members' homes. The result of this Community Service is an increase in the knowledge and skills of the IKM Maju Bersama group regarding the use and variety of processed moringa leaf products, understanding marketing techniques and the emergence of a strong enthusiasm and desire in developing processed moringa leaf products.
