Abstract

Bolu cukke is one of the traditional cake Bugis-Makassar, commonly consumed by the community, especially when enjoying a break. In order for a benefit value of Bolu Cukke, it takes effort to enrich the nutritional content, one of which is to replace wheat flour with sweet potato flour. A pre-experiment research conducted in Food Technology Laboratory of Nutrition Poltekkes Kemenkes Makassar, with number of panelist amoung 50 people. Nutritional content was analyzed using Kjhedal method for protein, gravimetric for fat and titrimetric for carbohydrate. Analyzed by using Kruskal-Wallis and Mann-Whitney test with 95% confidence level. The results showed that the acceptability based on the taste aspect in the four groups was the same (p = 0.275) the sample group was 75% preferred by the panelists. There were color differences in the four sample groups (p = 0,000), when compared with the substituted sample with purple sweet potato flour, the sample group was 50% preferably panelists. There were differences in the flavour in the four sample groups (p = 0.013), the sample group 50% preferred by the panelists. Acceptance based on taste aspect in all four groups was the same (p = 0.733), the sample group was 75% preferred by panelists. The highest protein nutrient content in the 0% sample group, 75% group fat and 75% carbohydrate. This research suggests that Bolu Cukke substitution of purple sweet potato flour is very feasible to be used as an alternative of Complementary Feeding in pregnant mother and toddler.

Abstract

Background. The practice of breastfeeding is very important to determine the quality of nutrient intake in children under two years. In ethnic Bugis. The purpose of this study was to determine the effect of breastfeeding on stunting prevention in ethnic Bugis. There is a cross-sectional study in this study. The sample size in this research is 300 mothers and children. The enumerators in this study were applied to undergraduate students of nutrition & dietetic programs in the Makassar Department of Nutrition Health Polytechnic, Indonesia. Research ethics was obtained at the Makassar Health Polytechnic Ethics Commission. Stunting risk factor data analysis with logistic regression test. The results showed that 32% of children were breastfed, with a frequency of 5-8 times / 24 hours breastfeeding. The reason for not breastfeeding a child is over 2 years old, the child refuses to breastfeed (10%), has 17.3% formula milk. Statistical analysis showed that breastfeeding (frequency of breastfeeding), p = 0.013, or 1.99 (1,148-3,173) was significant as stunting prevention. The conclusion is breastfeeding habits in ethnic Bugis can prevent stunting.

Abstract

Backgrounds: Snacking is a common habits while an appetite is a desire to eat or feeling hungry. The student ususally prefer choose snacking and less interest with the meal serve at home. Snacking habits which less in fulfill healthy and nutrition requirement also decrease of appetite will threatening the healthy and nutrition status of the student.Objectives: This research aims to understanding the relation of snacking habits and appetite with the nutrition status of students in Paccerakkang State Elementary School, Biringkanaya, Makassar.Methods: This research using observasional method with cross sectional research design. The sample are student in grade IV and V choosing by random sampling. To find the relation between variable using Chi Square examination.Results: The results of this research shows that snacking habits tend to not good (52,0%). The appetite of students tend to good (52,0%). The nutrition status category of the students tend to normal (78,0%).Conclusions: There are nothing siginificance relation between snacking habits with student nutritions status in Pacerakkang State Elementary School, with value of p = 0,560 (>0,05).Keywords : Snacking habits, appetite, nutrition status, students

Abstract

AbstractBackground of this study is that controlling body weight is one of them by increasing the consumption of vegetables and fruit, because it has a lower energy content than other food ingredients such as energy sources (staple foods and side dishes).Objective of this study was to determine the amount of vegetable and fruit intake that can reduce energy intake.Method is a systematic review by tracing various studies related to vegetable and fruit consumption on various search engines, namely PubMed, Scinapse, Nature. The search term used is "intake energy, vegetable and fruit" for English references. All references published between 2015-2020 were selected using the Prefered Preferred Reporting Items for Systematic Reviews and Meta-analyses (Prisma) method. The final result found that 6 articles were read and a summary table of the research results was made.Results found that there were 6 articles discussing the theme of energy intake, vegetables and fruit. The amount of fruit and vegetable consumption is between 100-300 g per day, which can have a real effect on reducing energy intake.Conclusion is that decreasing energy intake is by increasing the intake of vegetables and fruits. Keywords: Energy intake, vegetables and fruit

Abstract

Additional food should use inexpensive and reasonably-available local foodstuffs such as bran and mackerel. Bekatul has a nutrient producing nutrients that are high enough but not yet utilized optimally. While bloating is an essential source of protein and fatty acids that are essential for growth. This research aims to determine the quality of organoleptik Cookies add starch and pufferfish.Research using the design of group comparison design, comparing the quality of the original including Cookies (F1) and cookies replenishment of rice bran and pufferfish (F2). Organoleptik quality is assessed sensory based on the favorite level of panelist against the color, texture, aroma and flavor aspects. The favorite level is made in six levels ranging from dislikes to very very fond (score 1-6). Data analysis using the Mann Whitney U test.Panelis who liked the color of cookies F1 62.9% and cookies F2 57.1%, liked the texture of cookies F1 65.7% and cookies F2 65.7%. Panelist who likes to aroma cookies F1 85.7% and cookies F2 54.3% and likes to taste cookies F1 82.9% and cookies F2 62.9%. There is no quality difference organoleptik between the F1 cookies and cookies F2 of the color aspects (P = 0,511) and texture (P = 0,787). There is a significant difference in the quality of organoleptik between the F1 cookies and cookies F2 from the aroma aspect (P = 0,003) and flavor (P = 0,013). U.Addition of rice bran and mackerel does not affect the quality of organoleptik from the color and tektur aspects, but can reduce the quality of organoleptik from the aroma and color aspects of cookies. It is necessary to reduce the concentration of bloated fish flour and add other ingredients that can mask the aroma and flavor of fish.

Abstract

Prevention of stunting in every region requires a systematic approach. The purpose of this research is to analyze the correlation between the intake iron with the value z score anthropometry child age 12-36 months (HAZ). The sample size was 155 subjects, by selected systematically random sampling. Food intake by food recall 2x24 hours (The five multi-pass method). Anthropometry data measurements by digital scales Camry accuracy 0.01 kg. Data analysis with Pearson correlation test, with a confidence level of 95%. There was a significant positive correlation between intake of Iron with the value of the z score HAZ was p = 0.036.The conclusion of this research is the prevention of stunting can be done with the repair of the intake of iron. Suggestion to be implemented good practice the complementary feeding.ABSTRAKPencegahan stunting di setiap daerah memerlukan pendekatan sistematis dan efisien sesuai penyebab utamanya (rendahnya pemberian Air Susu Ibu (ASI) eksklusif, premature, panjang lahir dan rendahnya kualitas Makanan Pendamping ASI (MP-ASI). Tujuan penelitian ini adalah untuk menganalisis korelasi antara asupan zat besi dengan z skor Tinggi Badan menurut Umur (TB/U) anak usia 12-36 bulan. Sampel dalam penelitian ini ditentukan berdasarkan proporsi populasi balita di kecamatan Maros Baru sebanyak 155 anak, dipilih secara acak sistematis pada semua desa (6 desa). Asupan makanan dengan metode food recall 2x24 jam metode lima langka (The Five Multiple-Pass Method). Pengukuran data antropometri memakai timbangan digital Camry ketelitian 0,01 kg. Analisis data dengan uji korelasi Pearson, dengan tingkat kepercayaan 95%. Hasil penelitian diketahui bahwa adakorelasi positif signifikan antara asupan Fe dengan nilai z skor TB/U, p=0,036. Kesimpulan penelitian ini adalah pencegahan stunting dapat dilakukan dengan perbaikan asupan zat besi. Disarankan untuk menggiatkan upaya perbaikan kualitas MP-ASI.

Abstract

Gizi olah raga adalah sebuah intervensi gizi kepada subjek yang diteliti selama 2 bulan intervensi berupa pendidikan gizi yang terintegrasi dengan materi kebugaran, aktivitas fisik.Tujuan penelitian ini adalah untuk mengetahui efek intervensi gizi olah raga terhadap pengetahuan gizi, kadar kolesterol, VO2 max, Asupan Karbohidrat, Protein dan LemakMetode penelitian ini adalah experiment semu dengan kelompok control. Besar sampel adalah 7 orang  kelompok intervensi dan 13 kelompok control. Penelitian dilakukan di Lapangan Olahraga Jurusan Gizi dan Gedung Olah Raga Sudiang Raya.Intervensi pendidikan gizi dilakukan di Jurusan Gizi selama 6 bulan. Data kolesterol diambil dari darah kapiler menggunakan Human KIT, Data VO2 max diambil dengan test cooper, data antropometri dengan timbangan seca dan stadiometer ketelitian masing masing (0,1 kg) dan (0,1 cm). Data Asupan gizi makro dengan Food Recall dengan Multiple Pass Method, dan Nutrisurvey.Pengolahan data dengan Aplikasi SPSS for windows.Hasil penelitian adalah pendidikan ayah adalah umumnya tamat SMA pada kelompok intervensi (57,1%) dan Perguruan Tinggi (92,3%) pada kelompok kontrol. Pendidikan ibu juga 57,1%  tamat SMA pada kelompok intervensi dan 84% tamat perguruan tinggi pada kelompok kontrol. Status gizi obesitas 85% pada kelompok intervensi dan 69% kurus pada kelompok kontrol. Intervensi gizi olah raga berpengaruh pada perubahan skor pengetahun gizi pada kelompok intervensi dan kontrol masing masing p=0,000 dan p=0,000. Tetapi tidak berbeda pada kedua kelompok diawal maupu diakhir intervensi (p>0,050). Asupan gizi makro (Karbohidrat, Lemak dan Protein) tidak berubah pada kedua kelompok (p>0,050). Kadar Kholesterol Total juga tidak berubah (p>0,050) dengan intervensi gizi  olahraga 8 minggu intensitas 3 hari seminggu durasi 1 jam. Volume Oksigen Maksimum (VO2 Maks) berubah secara signifikan pada kelompok intervensi  (p=0,002).  Kesimpulan intervensi gizi olahraga 8 minggu, intensitas minimal 3 kali dengan durasi minimal 60 menit mampu meningkatkan volume oksigen maksimun. Saran agar intervensi gizi olahraga diteliti lebih lama.

Abstract

Latar belakang : Kelebihan berat badan yang tidak proporsional terhadap tinggi badan adalah paramater obesitas yang paling nyata dan rendahnya aktivitas fisik yang rendah adalah salah satu pemicunya. Obesitas diketahui pada siswa SMP di Kota Makassar sebesar 10,6% overweight dan 7,9% obesitas. Aktifitas media sosial adalah parameter rendahnya aktivuitas fisik. Tujuan riset ini adalah untuk menganalisis korelasi kelebihan berat badan dengan aktifitas media sosial pada siswa SMP di Kota Makassar.Metode :Metode penelitian ini adalah penelitian survei dengan pendekatan cross sectional studi. Sampel diambil dari 4 Sekolah Menengah Pertama dari  yaitu SMPN 6, 17, 12 dan 32 Kota Makassar. Besar sampel sebanyak 404 siswa yang diambil secara quota sampling setiap sekolah sebesar 100 siswa dan secara proporsional pada kelas II dan III. Berat Badan diukur dengan Seca ketelitian 0,1 kg sedangka tinggi badan diukur dengan stadiometer ketelitian 0,1 cm. Kelebihan berat  badan adalah diukur dari Indeks Massa Tubuh (kg/m2). Aktifitas fisik diukur dari kegiatan olah raga rutin (minimal 25 menit setip kegiatan dan dilakukan minimal 5 hari dalam seminggu), aktifitas media sosial (menit dan hari), dan games on line (menit dan hari). Pengolahan dan analisis data menggunakan program SPPS for windows. Uji statistika dengan Korelasi Spearmen pada kemaknaan 95%.Hasil :Hasil penelitian diketahui bahwa kelebihan berat badan pada siswa SMP di Kota Makassar adalah 18,6% dan SMP Negeri 6 adalah yang tertinggi (7,2%). Aktifutas media sosial dilakukan oleh 91,3% siswa SMP Kota Makassar dan tertinggi di SMP N 17 dan SMP 6 masing masing 24,8% dan 24%. Kelebihan berat badan berkorelasi positif dengan aktifitas media sosial (p=0,016). Indeks Massa Tubuh berkorelasi positif dengan aktif media sosial (p= 0,036) dan 0,016). Aktifitas media sosial juga berkorelasi positif dengan aktifitas bermain game on line (p=0.000).Simpulan: Kesimpulan bahwa semakin lama (menit)  siswa aktif di media sosial dan game on line, maka kenaikan berat badannya lebih nyata. Rekomendasi dari penelitian ini adalah mengatasi kelebihan berat badan dengan cara mengaktifkan siswa dalam even olah raga dan kegiatan lain di sekolah dan diluar sekolah. Membatasi pemakaian kendaraan dalam jarak tertentu dari sekolah adalah layak dicoba.

Abstract

Introduction: Stunting describes chronic undernutrition during a period of growth and development from the beginning of life. Stunting is a condition where toddlers have a length or height that is less than their age. This situation is determined by looking at the z-score for height for age (TB/U) less than -2 Standard Deviations (SD) based on growth standards according to the World Health Organization (WHO, 2010). Objectives: to determine the percentage of children under five based on stunting, and measure the direction of the correlation between protein energy intake and z score height/ageMethods: This research uses analytic research. This research was conducted to determine the effect of energy and protein intake on the incidence of stunting under five in the stunting locus village, Bone Regency, so that it used a cross sectional study design. Data on energy and protein intake are collected simultaneously with data on the results of measurements of the height of toddlers who are stunted.Results: The results of the study show that the stunting population is 13.3%. Mother's education completed elementary school 51.7%, father's work as a farmer 83.3%, mother's work as a housewife 96.6%. The results of the correlation test show that the direction of the negative correlation between the z-scores of height/age and energy and protein intake is -0.497 and -0.607, respectively. Although both are not significant, respectively p=0.210 and p=0.110.Conclusion: The correlation between the Z score of height/age and energy and protein intake is negative, and not significant
