Abstract

Background Recent evidence is known that functional foods are foods that provide the latest prospects for preventing nutritional problems not only because of their macro and micro nutrient content but their bioactive components that have an effect on the methylation process at the cellular level. Objective: the purpose of this study was to determine the consumption of functional foods based on local foods in pregnant women in Makassar City Method: A cross sectional study design. The sample size was 647 pregnant women taken from 41 Puskesmas in Makassar City, except the Sangarrang Kepulauan Puskesmas. Functional food intake was collected using the FFQ method, Macro and micro nutrient intake with Food recall 2 x 24 hours. The data collection enumerators were 21 graduates from Nutrition III / IV graduates. Enumerators are trained for two days. Results; showed that functional foods consumed by pregnant women based on local foods are sources of fiber, probiotics, Vitamin C, carotenoids, omega 3/9 and folifenol respectively (39.03 ± 36.78), (21.15 ± 7.74), (38.44 ± 30.9), (90.04 ± 50.53), (83.42 ± 60.42) and 166.57 ± 92.66). Conclusion; is that consumption of functional foods based on local foods in pregnant women is good.

Abstract

Introduction, The parenting gap is believed to be one of the variables that influence stunting. The Objectivesof this study to identify gaps in care (feeding practices, care, hygiene, and treatment of children) andincidence of stunting. Method this study is a cross-sectional, conducted in March-June 2020 in Makassar CityIndonesia. The sample size was 82 people, of children aged 0-12 months. The data collectors are alumni ofapplied nutrition and dietetics degrees, trained for 2 days in health protocol, interviews, and anthropometry.The instrument in this study was developed from the UNICEF. The result, found that mothers and fathersgraduated from high school, 43% and 59.8%, respectively. The work of mothers as housewives is 84.1% andfathers are private employees as much as 36.6%. The parenting competency gap in the feeding practice ofchildren aged 0-6 months, 7-9 months, and 10-12 months is 20.9%, 71.79%, and 92.31%, respectively. Theresults of statistical analysis showed that there was an effect of parenting competency gaps on stunting (p= 0.000). The conclusion is that the parenting competency gap is proven to affect the incidence of stunting.The suggestion is that it is necessary to increase the capacity of mothers in child care practices/

Abstract

Supplementary food, especially for vulnerable groups such as pregnant women and toddlers, is one strategy in dealing with nutritional problems, especially during the COVID-19 pandemic. The aim of the study was to determine the acceptability of Bolu Cukke with purple sweet potato flour and tempeh flour substitutes. Experimental research was conducted at the Food Technology Laboratory, Department of Nutrition, Poltekkes, Ministry of Health Makassar with a total of 50 panelists in 2019. The nutritional content was analyzed using the Kjhedal method for protein, gravimetry for fat, and titrimetry for carbohydrates. Acceptance test was analyzed using Kruskal-Wallis and Mann-Whitney test with 95% confidence level. The results showed that the color and aroma of the four sample groups were different (p=0.000 and p=0.028), while there was no difference in texture and taste. Based on the nutritional content, group C had the highest protein content, group A had the highest fat content while group D had the highest carbohydrate content.

Abstract

The results of the research on tempe biscuit with the substitution of moringa flour as MP-ASI did not reveal the content of protein and calcium which is a nutrient Which is important to know as fast food. This study aims to determine the content of protein and calcium in tempe biscuit formula with kelor leaf flour substitution.This research uses laboratory. Samples analyzed were 2 samples with no substitution of 0% Moringa  flour (control) and samples with Moringa flour substitution 9% (13.5 g) based on consumer acceptance. Aanalysis of proteins by khjedal method and mineral by atomic analysis spektrofothometer (AAS).          The results showed that the content of protein and calcium biscuit of tempe formula with the substitution of maize flour 9% (13.5 g) respectively by 14.9% and 38.3 mg,  Greater than non-substitution of maize leaf powder respectively 12.6% and 21.4 g.          It was concluded that the content of protein and calcium biscuit with the substitution of moringa flour is higher than that without the substitution of moringa flour. Further research on the formulation of complementari of food for breast milk  is required to balance the nutritional value in accordance with the needs of infants 6-24 months. Keywords     : Biscuits, Protein Content, Calcium Conten

Abstract

Less of chronic energy is a condition caused by an imbalance of nutrient intake between energy and protein, so that the nutriens needed are not fulfilled. As for pregnant woman said to be less chronic energy if the measurement of the upper arm circumference is less than 23.5 cm. The results of Riskesdas in 2016 showed the prevalence of pregnant women lacking chronic energy at the National level as much as 16.2% and monitoring of nutritional status in 2017 in South Sulawesi showed the prevalence of KEK pregnant women in the island’s Pangkajene district 25.08%. This study aims to determine the relationship of family income with less chronic energy for pregnant women in the work area of the Bungoro Health Center. This research is observational analytic. The research location was carried out in the work area of the Bungoro Health Center in may 2018. The results of the study showed that there were 24 people (80%) who were not chronically energetic in pregnant women, while 6 people were not in chronic energy (20%). Data of pregnant woman lacking chronic energy is done by interview method using questionnaires and LLA measurements. The results of the study obtained from the chi-square test showed that there was no family income relationship with less chronic energy in pregnant women in the work area of the Bungoro Community Health Center in Bungoro sub-district, Pangkep district where the value p=0,620 (>0,05). To reduce the less of chronic energy in pregnant women in Bungoro sub-district, Pangkep District conducted counseling for pregnant women to pay more attention to the health and consumption of nutritious foods during pregnancy, and cross-sector cooperation between the government and rhe health department to conduct an examination of pregnant women so that they could take precautionary measures against pregnant women who less chronic energy.

Abstract

ABSTRAK            Masalah stunting masuk ke dalam salah satu program prioritas pembangunan kesehatan dalam tahun 2015-2019. Salah satu upaya untuk mencegah terjadinya stunting adalah dengan memanfaatkan potensi pangan lokal yang mudah dijangkau yaitu dengan cara memanfaatkan tiram. Pengolahan tepung tiram dalam bentuk kue pia bisa jadi salah satu alternatif dalam upaya mengatasi malnutrisi dengan mempertimbangkan dari segi zat gizi, manfaatnya bagi kesehatan dan daya terima. Penelitian ini bertujuan mengetahui daya terima kue pia dengan substitusi tepung tiram pada balita stunting. Penelitian ini merupakan penelitian pra eksperimental dan desain penelitian yang digunakan desain One Shoot Group. Daya terima dinilai berdasarkan uji organoleptik terhadap 30 panelis. Kemudian dianalisa dengan menggunakan uji Kruskal-wallis, dengan uji lanjut Mann Whitney, hasil daya terima terbaik dilakukan analisa zat gizi. Hasil penelitian menunjukkan daya terima panelis terbaik terhadap kue pia dengan substitusi tepung tiram 5%. Panelis suka terhadap aspek rasa 56,67%, aspek aroma 50,00%, aspek tekstur 63,33%, aspek warna 96,67%. Disarankan melakukan penelitian mengenai masa simpan kue pia.

Abstract

Education influences a changes in knowledge, attitudes, and lifestyle patterns in the selection of the type and amount of food consumed. The health of a pregnant women affects the fetus in her womb. Nutrient content consumed by the mother will be absorbed by the fetus which is important for the growth of the fetus itself. This study aims to determine the relationship of education level, energy intake and protein nutritional status of pregnant women in the Bungoro Health Center Work Area of Bungoro District, Pangkep Regency. This research is an analytical study with cross-sectional design. Samples were pregnant women, amount to 40 people. The level of education is obtained through a questionnaire. Energy and protein intake was obtained through 2x24 hours recall and then processed using menu A software. To find out the relationship between variables of education level, energy and protein intake with nutritional status, Chi-Square was tested using the SPSS program. Data is presented in the form of tables and narratives. The results showed that 77.5% of the sample education level was high. Sample energy intake was classified as less than 82.5% and 17.5% classified as good. Sample protein intake of 95% classified as poor and 5% classified as good. Nutritional status of pregnant women is 70% experiencing KEK and 30% normal. Statistical test results show that there is no relationship between education level, energy and protein intake and nutritional status of pregnant women in the Bungoro Health Center Work Area, Bungoro District, Pangkep Regency.

Abstract

Stunting is caused by three factors, involving individuals’ food intake, birth weight, and health condition; the quality and quantity of food nutrition, human resources, number and family structure, parenting, health care, and services; and environmental factors that include social infrastructure, educational services and health services.This aimed to find the relationship between mothers’ education level and exclusive breastfeeding toward the toddlers’ stunting in South Sulawesi Province 2015 based on the report of secondary data analysis on Nutrition Status (PSG) 2015.This research used 2015 PSG data with observational design. The samples in this research were toddlers in 3 cities or regency in South Sulawesi Province with the highest stunting event rate, they were Jeneponto (300 toddlers), Pangkep (300 toddlers) and Tana Toraja (298 toddlers). Secondary data were taken from PSG report of 2015. The nutrition status was measured by anthropometry. Mothers’ education level and exclusive breastfeeding data were obtained by asking respondents using PSG 2015 questionnaires. To find out the relationship of two variables, it was conducted yate's correlation test using SPSS program. The data were presented in the form of frequency distribution tables and narration.The results showed that the prevalence of stunting was 44%. The proportion of lower educated mothers was 56.5%, while exclusive breastfeeding was quite high at 94.8%. Mothers with less education (27.7%) had stunting children, while 27.3% well-educated mothers have normal children and there was a significant relationship between mother education level and stunting on toddlers (p = 0,001). The stunting was found on toddlers who are not exclusively breastfed (0.9%) and exclusively breastfed (43.1%), and there was a significant relationship between exclusive breastfeeding and stunting incidence in toddlers (p = 0.000).

Abstract

ABSTRAK Basic Health Research Data (RISKESDAS) In 2013 the number of pregnant women with anemia was 37.1%, further discussed in the RISKESDAS data in 2018 the number of pregnant women with anemia increased to 48.1%. The program carried out by the government so far is the provision of Tablets Added Blood (TTD) for adolescent girls and pregnant women who cannot overcome the problem of anemia in pregnant women. Cake with the substitution of barley flour and anchovy flour is expected to increase the substance intake of pregnant women. This study aims to determine the efficacy and content of the substance of the substitution of barley flour and anchovy flour in overcoming the problem of iron nutrient anemia. This type of research is an experimental study with a post-test design research group design. This research is pre-experimental research with 3 variations of formulas and data analysis using the Friedman Test The best results of the cookie formula research are the concentration of 5%, laboratory test results of 5% reserve of cookie substances are 2.88mg / 100 gram, fulfilling 16% of the substance needs of women aged 18-49 years. Keywords: Cookies, iron content, barley flour, anchovy flour

Abstract

Backgrounds: Mother's Milk (ASI) is the only food that contains all the nutrients needed for baby growth  0-6 months. Based on the results of Riskesdas (2010), shows infants who received exclusive breastfeeding in Indonesia only 15.3%. Of 136.7 million babies born worldwide only 32.6% of those exclusively breastfed within the first 6 months. While based on data obtained from the Monitoring of Nutrition Status (PSG) of South Sulawesi Province in 2016, the percentage of children under five to age 6 got exclusive breastfeeding in Makassar City 27.5% and South Sulawesi 38.5%, but this achievement is still low when compared with A national target of 80% of infants receiving exclusive breastfeeding.Objectives: To identify the relationship of husband support to Exclusive Breastfeeding 6-11 months in North Karuwisi Urban of Makassar City.Methods: The design of this study is a cross-sectional survey study. "The sample is a mother who has a baby aged 6-11 months, and to know the relationship of husband support to exclusive breastfeeding 6-11 months using Chi-Square test.Results: The results showed that 93.8% of husbands provided support, 6.3% of husbands lacking support. Breastfeeding 62.5% and exclusive breastfeeding 37.5%. Results of Chi-square analysis were found to have no relationship of husband support to exclusive breastfeeding (p = 0,56).Conclusions: It is advisable to breastfeeding mothers to give exclusive breastfeeding to their babies.Keywords: Husband support and exclusive breastfeeding
