Abstract

Penelitian ini bertujuan untuk mengetahui karakteristik komposisi asam lemak dan bahan penyusun produk cokelat batang yang terbuat dari oleogel minyak nabati dan Cocoa Butter Substitute komersil dengan oleogator lemak kakao. Pembuatan cokelat batang dibuat dengan 10 formula yaitu F1-F10, dimana F1-F8 menggunakan oleogel dari minyak sawit atau minyak kedelai sebagai pengganti lemak kakao, sedangkan F9-F10 menggunakan Cocoa Butter Substitute (CBS) komersil. Formula pembuatan oleogel meliputi 90% minyak sawit atau minyak kedelai, 7% dan 9% beeswax serta 1% dan 3% lemak kakao. Analisis asam lemak dilakukan dengan menggunakan metode gas kromatografi. Hasil penelitian menunjukkan bahwa kandungan lemak yang paling tinggi didapat pada formula pasta kakao dengan oleogel minyak sawit dengan nilai 43,31%, sedangkan yang terendah didapat pada formula bubuk kakao dari oleogel minyak sawit dengan nilai 28,80%. Kandungan asam lemak total tertinggi terdapat pada formula pasta kakao dan oleogel minyak kedelai dengan kadar 93,12%, sedangkan nilai terendah pada formula bubuk kakao dan oleogel minyak kedelai dengan kadar 83,77%.Kata Kunci: oleogel, asam lemak, kandungan lemak, cokelat batang, kromatografi gas

Abstract

Research on heavy metals content in cocoa beans from West and Southeast Sulawesi hasbeen done. This research aims to identify heavy metals content, which are Pb, Cu, Cd and Zn in cocoa beansfrom West and Southeast Sulawesi. Results shows that Pb content in cocoa beans from West Sulawesi is inthe interval of 49,616 ppm (Mamuju) – 112,343 ppm (North Mamuju); Cu 141,362 ppm (Mamuju) – 198,04ppm (North Mamuju); Cd 0,0494 ppm (Mamasa) – 0,7468 (Polman); Zn 193,186 ppm (Polman) – 247,362ppm (North Mamuju). Pb content of cocoa beans from Southeast Sulawesi is in the interval of 33,783 ppm(Kendari) – 112,912 ppm (North Kolaka); Cu 119,162 ppm (Muna) – 180,728 ppm (Kolaka); Cd 0,0769 ppm(Bombana) – 0,6676 (North Kolaka) dan Zn 29,21 ppm (Bombana) – 214,12 ppm (North Kolaka).Keywords: heavy metals, cocoa beans, SNI 7387:2009, West Sulawesi, Southeast Sulawesi

Abstract

Cream made from cocoa polyphenol combined with aloe vera and seaweed has been prepared and its antiaging properties has been studied. Cream composition consisted of cocoa butter, olive oil, sodium dodecyl sulphate, polypropylene glycol, cetyl alcohol and aquadest as the cream base. Cocoa polyphenol, aloe vera and seaweed were used as active agent to perform antiaging activity. Antiaging tests were done in vivo, using male Wistar rats. Antiaging tests included cream effectivity to protect skin from UV B radiation, which indicated by wrinkle, exfoliation, erythema and skin elasticity. Result of this research shows that skin applied with cream contained cocoa polyphenol, aloe vera and seaweed has less wrinkle and erythema after being exposed with UV B lamp for 2 weeks. Cream contained 3 active ingredients (cocoa polyphenol, aloe vera and seaweed) shows less effectivity to protect against exfoliation compare to cream with only 2 active ingredients (aloe vera and seaweed), however, cream with 3 ingredients still shows better protection to skin, compare to the unprotected skin (skin which not applied with any cream). In addition, skin applied with cream contained cocoa polyphenol, aloe vera and seaweed shows better elasticity, compared to those which not applied with cream.
