Abstract

The research was conducted at the TTU Slaughterhouse (RPH) and Pasar Baru Kota Kefamenanu from October to November 2018. This study aims to look at consumer behavior in buying meat, both in terms of meat quality, consumer tastes in choosing meat, and also price. The method used is a survey method with descriptive approaches and correlational methods. The descriptive method aims to make descriptions or descriptions of the facts, characteristics, and relationships of the phenomena being investigated in a particular population or area in a systematic, factual, and accurate manner. The correlational method is a continuation of the descriptive method which aims to study the statistical relationship between the variables under study. The variables observed were consumer tastes where beef buyers both in the new market and at the Kefamenanu City Slaughterhouse (RPH) prefer fresh beef with a slightly brownish-red color with fat color attached to white meat, less fatty meat, distinctive aroma of the meat, or odorless and smooth meat texture. Most consumers choose has to beef because it has a soft texture and contains a little bit of fat, and most consumers who buy beef for business, be it for shops, selling meatballs or salome with a range of buying meat between 1 to 4 kg and above every day. For the reason that consumer prices do not feel influential in buying beef, but the supply system is important in purchasing meat and the satisfaction of prices is felt by consumers today due to the availability of sufficient beef at affordable prices.

Abstract

This research has been carried out at the Widya Mandira Kupang Mipa Laboratory (UNWIRA), from February to April 2019. The material used in this study was 1 kg of thigh beef and 3 kg dried rosella petals (Hibiscus sabdariffa Linn). The method used is a Completely Randomized Design (CRD) consisting of 4 treatments and 3 replications. The treatments given are R0 = Beef + Spices, R1 = Beef + Spices + Nitrate 200 ppm, R2 = Beef + Spices + Rosella Extract 40%, R3 = Beef + Spices + Roselle Extract 60%. The purpose of this study was to determine what antioxidant value, water content, pH and total phenolic beef jerky after being cured using rosella extract, and to determine the effect of rosella extract as a natural antioxidant substitute for nitrate in curing beef jerky. Based on the results of this study it can be concluded that in the R3 sample with the addition of 60% roselle extract concentration can increase the total value of beef jerky phenolic value of 0.650 mg / g. And the addition of nitrate in the R1 sample was able to reduce the pH value and moisture content and increase the antioxidant value of beef jerky, for the beef jerky pH value was 5.3, and the water content value was 16.331%, the pH value and water content value was the best because it was in accordance with SNI . Thus it can be concluded also that samples with the addition of nitrate still play a more effective role compared to 40% and 60% rosella extract samples.

Abstract

The purpose of this study was to determine the antibacterial activity of rosella extract (Hibiscus sabdariffa L.) on the growth of Staphylococcus aureus bacteria and the microbiological quality of beef jerky which was curing wet with rosella extract. This study uses concentrations of rosella extract 40% and 60%. Positive control using nitrate or belching 0.2 g and negative control using aquades. This type of research is an experimental laboratory. Test the antibacterial activity of rosella extract against S. aureus using the diffusion method by means of wells. As for the microbiological quality of beef jerky using dilution method. The results showed that the concentration of rosella extracts of 40% and 60% had the ability to inhibit the growth of S. aureus bacteria with an average of 3.41 mm and 4.03 mm. Whereas positive and negative controls do not have the ability to inhibit bacterial growth. The results of the microbiological quality test of beef jerky showed that rosella extract had bacteriostatic ability with mean values obtained 28.33 and 8.67. The conclusion of this study using ANOVA statistical analysis and Duncan's advanced test with a significant level of 0.05 shows that rosella extract has a significant level in inhibiting S.aureus bacteria and is able to suppress microbial growth in beef jerky.

Abstract

The purpose of this study was to analyze the antibacterial activity of red dragon fruit peel extract against Escherichia coli and its application as a preserfative of beef. Data were processed by analysis of variance (ANOVA) and continued with Duncan test. Based on antagonistic tests using a diffusion method, red dragon fruit peel extract showed the ability to inhibit and even kill E. coli. Microbiological testing of beef shows that the use of red dragon fruit peel extract can inhibit the growth of pathogenic bacteria. This inhibition is caused by the presence of active compounds that act as antibacterial compounds in the skin of red dragon fruit thus suppressing the growth rate of pathogenic bacteria. Microbiological quality of cows with the addition of preservatives (nitrates) is still in accordance with SNI, but the number of bacteria in the addition of preservatives is more when compared to cows with the addition of concentrations of red dragon fruit peel extract which are fewer and still in accordance with SNI. Observation of the presence of E. coli bacteria in beef se'i both in control and treatment using preservatives and the concentration of red dragon fruit peel extract showed that there was no (negative) growth of E coli bacteria. The inhibition of the presence of E. coli bacteria is caused by the presence of red dragon fruit peel extract and bactericidal smoke content so that it can inhibit the growth of E. coli bacteria. It was concluded that the higher concentration of red dragon fruit peel extract (Hylocereus polyrhizus) will be better in the process of inhibition of the growth of Escherichia coli bacteria and potentially as a natural preservative that can be added to se'i products. The use of dragon fruit peel extract by 60% in se'i-making products as a curing agent can also reduce the rate of bacterial growth. The use of red dragon fruit peel extract by 60% in this test is also better when compared to control (-), control (+) and concentration of 50%.

Abstract

The purpose of this research is to find out the antioxidant activity, total phenolic, moisture content and the pH of Se'i cow that is riered using red dragon fruit skin ethanol extract. The variables measured in this study are antioxidant activity, total phenolic, moisture content and the pH of se'i cows. The ingredients used in this study are beef back thigh parts and red dragon fruit skins. The method used is complete random design with variations of the following treatment: R0 = beef + seasoning, R1 = Beef + Seasoning + Nitrat 25 mg, R2 = Beef + Seasoning + Red Dragon Fruit Peel Extract 50%, R3 = Beef + Seasoning + Red Dragon Fruit Peel Extract 60%. Based on the results of this study can be concluded that the greater the addition of Red Dragon fruit peel extract, the greater also the antioxidant activity and total phenolic se'i and will decrease the moisture content and the pH of Se'i cow. Where the value of IC50 on R3 treatment is 207.853 ppm and the total phenolic of 1.068 mg/g while the moisture content of R3 is 44.829% and has a pH value of 5.21.

Abstract

This research was conducted in the experimental garden of the Faculty of Agriculture, University of Timor, Sasi, North Central Timor Regency. The research will last for 1 production period (45 HST), from the end of March to the beginning of June 2019. The purpose of this study is to analyze the value of growth and production of Pennisetum purpureum treated with frequency of time watering liquid tofu waste. This research is an experimental study using a randomized design Complete (CRD) consisting of 4 treatments and 4 replications so that there are 16 units of the experimental unit. The treatments tested consisted of: R0 = Without watering tofu waste, R1 = Frequency of watering once every 2 days, R2 = Frequency of watering once every 4 days, R3 = Frequency of watering once every 6 days. The variables observed in this study were plant height, stem diameter, leaf fresh weight and leaf dry weight. The results showed that giving treatment of the frequency of time of watering the liquid tofu waste, had a significant effect on the fresh weight of leaves produced but did not differ on plant height of stem diameter and dry weight produced. It could be concluded that liquid tofu waste with good watering time frequency was found in the treatment R1 which is 2 days, liquid tofu waste has the ability to improve soil texture and can stimulate the growth of Pennisetum purpureum in this case the growth of plant height, stem diameter, leaf fresh weight, and leaf dry weight.

Abstract

This study aims to detect the presence of Formalin and borax in meatballs sold in Kefamenanu City. This research was conducted by taking 20 samples of meatballs at stalls selling meatballs. Testing of Formalin and borax on meatballs was carried out qualitatively. Testing the borax content in meatballs was carried out by looking at the color changes that occurred in the residue from the addition of 0.125% curcumin to the supernatant. If the residue is cherry red, the borax is positive. Qualitative testing of Formalin on meatballs was carried out by observing the color change with the addition of chromofatic acid, phosphoric acid, and hydrogen peroxide to the filtrate. If there is a color change to purplish red, the sample is positive for Formalin. The test data obtained were analyzed using descriptive statistical tests in the form of percentage values. The results showed that from 20 samples of meatballs tested; there was no formalin and borax. It was concluded that the producers or sellers of meatballs in Kefamenanu City, North Central Timor Regency did not use borax as a meatball thickener and Formalin as a preservative in the manufacture of meatballs.

Abstract

The purpose of this study was to determine the effect of shelf life in Beltsville Thawing Solution (BTS) cement on motility, viability, abnormality and degree of storage (pH) of landrace pig semen. The semen used was fresh semen from a 4-year-old Landrace boar. This study used an experimental method using a completely randomized design (CRD) with four treatments (P0 10%, P1 10%, P2 10% and P3 10%) and four replications so that there were 16 experimental units. The results showed that the BTS cement diluent was significantly different (P>0.05) on the motility of spermatozoa with the average value of each treatment being P0 (68.25%), P1 (58.25%), P2 (38.50%). and P3 (10.75%). The percentage of spermatozoa viability was significantly different (P<0.05) between treatments, where the P2 treatment was relatively the same as the P3 and P4 treatments but was higher than the P1 treatment with respective values P1 (83%), P2 (90.1%) , P3 (93.5%) and P4 (91.5%). Percentage of spermatozoa abnormalities resulting from analysis of variance (ANOVA) from each treatment there was a non-significant difference (P>0.05) where the values were P1 (8.2%), P2 (9.2%), P3 (8.1%) and P4 (9.2%). The degree of relative difference (pH) was significant (P<0.05) between treatments, where the treatment was the same as P2 but more than P4 treatment. On the other hand, P3 was relatively the same as treatment P1, P2 and P4, with the respective treatments being P1 (8.36), P2 (7.99), P3 (7.676) and P4 (6.83). It can be said that the use of different glucose concentrations in the diluent of egg yolk citrate semen with good quality, namely in the P3 treatment with a glucose concentration of 15%, the average percentage of individual motility was 64%, the percentage of live spermatozoa was 93.5%, the percentage of abnormal spermatozoa was 8.1%. and the average pH (degree so) of cement is 7.68.

Abstract

Penelitian ini bertujuan untuk mengetahui tingkat produktivitas usaha sapi potong di Desa Kaenbaun, Kecamatan Miomaffo Timur, Kabupaten Timor Tengah Utara. Penelitian ini dilaksanakan pada bulan November – Desember 2019 di Kelompok Tani Ban’uf di Desa Kaenbaun. Jenis penelitian yang digunakan adalah deskriptif kuantitatif. Sebanyak 31 orang peternak digunakan sebagai sampel penelitian. Jenis data yang digunakan pada penelitian ini adalah data deskriptif kuantitatif dan sumber data yang digunakan pada penelitian ini adalah data primer serta data sekunder. Pengumpulan data dilakukan dengan cara observasi dan wawancara. Hasil penelitian aspek karakteristik peternak sapi potong di Desa Kaenbaun; kategori umur yang didominasi produktif 46-61 tahun sebanyak 12 orang (29,03%), tingkat pendidikan didominasi oleh kategori SD sebanyak 21 orang (67,64%) sehingga dapat disimpulkan tingkat pendidikan responden masih tergolong sangat rendah, dan lama beternak didominasi oleh kategori rendah (1-5) tahun sebanyak 13 orang (41,94%). Selanjutnya, variabel tingkat dukungan penyuluh di Desa Kaenbaun untuk kesesuaian metode yang mendominasi adalah kategori cukup mengerti, kesesuaian materi didominasi oleh kategori cukup sesuai, kompetensi penyuluh didominasi oleh kategori setuju, dan karakteristik peternak; dalam hal ini umur, berpengaruh nyata terhadap produktivitas ternak sapi potong dengan nilai signifikansi sebesar 0,044<0,05. Variabel dukungan penyuluh; dalam hal ini kesesuaian materi, berpengaruh nyata terhadap produktivitas ternak sapi potong dengan nilai signifikansi sebesar 0,035<0,05.

Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh pemberian belazyme terhadap kinerja organ pencernaan ayam broiler. Penelitian telah dilaksanakan di kandang unggas milik Program Studi Peternakan, Fakultas Pertanian, Universitas Timor; dan berlangsung selama 6 minggu (bulan Maret sampai April 2022). Penelitian menggunakan ayam broiler berumur 14 minggu sebanyak 96 ekor. Metode yang digunakan dalam penelitian ini adalah Racangan Acak Lengkap yang terdiri dari 4 perlakuan dan 4 ulangan sehingga terdapat 16 unit percobaan. Perlakuan yang diberikan adalah P0 (pakan BR1 tanpa belazyme), P1 (pakan BR1 dengan tambahan belazyme 0,1%), P2 (pakan BR1 dengan tambahan belazyme 0,2%), dan P3 (pakan BR1 dengan tambahan belazyme 0,3%). Variabel yang diamati adalah berat proventrikulus, ventrikulus, usus halus, hati, dan pankreas ayam broiler. Data yang diperoleh dianalisis menggunakan analisis sidik ragam dan uji Duncan. Hasil penelitian P0, P1, P2, dan P3 menunjukkan bahwa berat proventrikulus masing-masing perlakuan sebesar 6,75±0,83, 8,64±0,48, 8,23±0,35, 7,86±0,61 g/ekor; berat ventrikulus sebesar 28,96±0,99, 33,00±1,11, 36,35±2,42, 31,64±2,16 g/ekor; berat usus halus sebesar 38,53±5,47, 45,17±2,34, 45,52±3,11, 35,29±5,69 g/ekor; berat hati sebesar 32,04±4,89, 35,99±3,83, 35,33±3,38, 32,54±2,81 g/ekor; dan berat pankreas sebesar 3,34±0,38, 4,03±0,19, 4,10±0,40, 3,26±0,16 g/ekor. Hasil Analysis of Varience (ANOVA) menunjukkan bahwa perlakuan berpengaruh nyata (P<0,05) terhadap berat proventrikulus, ventrikulus, usus halus dan pankreas sedangkan berat hati berpengaruh tidak nyata. Disimpulkan bahwa pemberian belazyme 0,1% dalam pakan dapat meningkatkan daya cerna dan meningkatkan berat proventrikulus, ventrikulus, usus halus, dan pankreas pada ayam broiler.
