Abstract

Kemiskinan merupakan salah satu penyebab masalah gizi. Tujuan dari penelitian ini adalah untuk menganalisis pola konsumsi makanan dan asupan makanan masyarakat miskin di Kecamatan Silo, Jember. Penelitian ini menggunakan survei analitik dengan pendekatan cross sectional. Pemilihan sampel dilakukan secara purposive sampling, yaitu teknik pengambilan sampel secara non-random dimana peneliti menentukan sampel dengan menentukan karakteristik tertentu yang sesuai dengan tujuan penelitian. Sampel penelitian adalah ibu rumah tangga berusia 30 sampai dengan 50 tahun di Kecamatan Silo, Jember. Data diperoleh dengan cara observasi dan wawancara. Alat yang digunakan untuk memperoleh data menggunakan kuesioner Semi Quantitative Food Frequency Questionnaire (SQ-FFQ) dan alat berupa Food Model. Hasil penelitian menunjukkan bahwa konsumsi sayur dan buah sangat tinggi dengan rata-rata konsumsi 570 g melebihi konsumsi yang diharapkan 250 g. Sebaliknya konsumsi biji-bijian sangat rendah, rata-rata konsumsi hanya 122 g lebih rendah dari perkiraan konsumsi 275 g. Pola konsumsi biji-bijian, umbi-umbian, pangan hewani, minyak dan lemak, buah/biji berminyak, kacang-kacangan, gula dan sayur serta buah memiliki skor yang tidak sesuai dengan skor standar harapan Pola Pangan. Tingkat asupan energi, lemak dan karbohidrat masyarakat miskin di Kecamatan Silo kurang dari angka kecukupan, sedangkan tingkat asupan protein melebihi Angka Kecukupan. Kesimpulan, pola konsumsi pangan masyarakat miskin di Kecamatan Silo, Jember tidak sesuai dengan Pola Pangan Harapan atau pola konsumsinya kurang beragam. Asupan makanan warga kelurahan Silo tergolong rendah pada tingkat asupan energi, asupan lemak dan asupan karbohidrat, namun tinggi pada tingkat asupan protein.

Abstract

Shrimp and pumpkin are local foods in Jember Regency which can be processed into food products such as dumplings and donuts. These products can be processed into frozen food. Frozen food has the opportunity to be a business to improve family welfare. Women also play a role in improving the welfare of their families. Training and demonstrations in making frozen food dumplings from shrimp and donuts from pumpkin were conducted to women who are members of Dharma Wanita Persatuan Jember Regency. All participants were able to make shrimp dumplings and pumpkin donuts well. The next training plan is packaging techniques training using a vacuum sealer, so that participants can pack their homemade products in good packaging, do not leak and have high durability when marketed. Participants also need training on how to market products so that the rproducts can be well absorbed by the market.

Abstract

Problems based on a preliminary study conducted by the proposer at the Posyandu in Kemuning Lor Village, it was found that there were 112 children under five who experienced stunting in Kemuning Lor Village. Lack of knowledge of mothers about health and nutrition before and during pregnancy and after childbirth. The economic level of the people of Kemuning Lor Village is classified as lower middle class. This has pushed Kemuning Lor village to become a village that is prone to increasing stunting cases in toddlers. Behind the problems in Kemuning Lor Arjasa Village, there is a positive potential, namely that the water source in the area is very abundant and clear and easy to obtain by residents because it comes from mountain springs. The majority of the people's occupations there are ranchers and farmers. This strongly supports the proposing team in carrying out community service to provide socialization and training as well as direct practice on family catfish cultivation as an effort to improve the community's economy and to prevent the increase in stunting cases in Jember district
