Abstract

Pangan Jajanan Anak Sekolah (PJAS) adalah segala bentuk makanan ataupun minuman yang dijual di lingkungan sekolah.Salah satu faktor yang mempengaruhi pemilihan jajanan pada anak-anak adalah pengetahuan anak mengenai jajanan sehat. Tujuan dari penelitian ini adalah untuk mengetahui pengaruh media video terhadap tingkat pengetahuan pelajar mengenai jajanan sehat di SDN Pancakarya 01. Metode penelitian menggunakan pre experimental dengan one group pretest postest design. Penelitian dilakukan selama 3 hari yaitu pada tanggal 30 November, 7 dan 21 Desember 2019 dengan jumlah subjek sebanyak 41 orang. Hasil analisis  menunjukkan sebagian besar subjek berjenis kelamin laki-laki, berusia 11 tahun, memiliki uang jajan lebih dari rata-rata, pendidikan terakhir orangtua SD, pekerjaan ayah wiraswasta, ibu tidak bekerja, pendapatan perkapita < garis kemiskinan. Hasil penelitian menunjukkan ada perbedaan antara pre test dengan post test 1 dan post test 2, terjadi penurunan nilai pada post test 3. Kesimpulan dari penelitian ini adalah intervensi yang dilakukan berpengaruh terhadap pengetahuan subjek namun kurang dapat mempertahankan ingatan jangka panjang subjek.

Abstract

Jumlah balita gizi buruk di Indonesia pada tahun 2018 masih di atas target SDG, sekitar 17,7%. Modisco (Modified Dietetic Skim dan Cotton Sheet Oil) adalah makanan tambahan yang mengandung kalori tinggi untuk meningkatkan berat badan balita. Penelitian ini bertujuan untuk menganalisis pengaruh penambahan tepung daun kelor terhadap daya terima dan kandungan gizi modisco. Desain eksperimental yang digunakan dalam penelitian ini adalah rancangan acak lengkap dengan penambahan konsentrasi tepung daun kelor dalam empat taraf, yaiu 0%, 2,5%, 5%, dan 7,5%. Penentuan produk modisco dipilih berdasarkan  tingkat kesukaan/preferensi panelis pada uji hedonik. Secara keseluruhan, modisco dengan skor tertinggi adalah modisco dengan penambahan tepung daun kelor 2,5%. Hasil uji Kruskal Wallis menunjukkan bahwa ada perbedaan yang signifikan dalam atribut warna, aroma, dan rasa (p = 0,00), tetapi tidak dalam atribut kekentalan (p = 0,340). Modisco terpilih dengan  penambahan bubuk daun kelor 2,5% memiliki kandungan energi, protein, zat besi, dan kalsium secara berurutan 80 kkal, 14,51 g, 6,3 g, 249 mg dalam 100 ml produk.

Abstract

Stunting and underweight are nutritional problems in toddlers that are often experienced by Indonesian toddlers to date. Inappropriate feeding practices are the main cause of early nutritional problems in infants and toddlers. Fulfillment of nutrition in a child begins with exclusive breastfeeding for 6 months and continues with complementary feeding (MP-ASI). Ignorance and/or inability to prepare complementary foods that meet nutritional needs appropriately and hygienically is one of the causes of nutritional problems in toddlers. Education about infant and child feeding needs to be given as an effort to prevent nutritional problems. The purpose of this community service activity is to increase the knowledge of mothers under five about producing of MP-ASI for mothers who are members of the Homemade MP-ASI Community (KMHM). This training as an education in community service includes webinars via Zoom. The results of the training showed that there was an increase of participants’ knowledge. Based on the results of Wilcoxon test, it showed that there was an increase in the knowledge of mothers under five about processing and preparing MP-ASI properly.

Abstract

Shrimp and pumpkin are local foods in Jember Regency which can be processed into food products such as dumplings and donuts. These products can be processed into frozen food. Frozen food has the opportunity to be a business to improve family welfare. Women also play a role in improving the welfare of their families. Training and demonstrations in making frozen food dumplings from shrimp and donuts from pumpkin were conducted to women who are members of Dharma Wanita Persatuan Jember Regency. All participants were able to make shrimp dumplings and pumpkin donuts well. The next training plan is packaging techniques training using a vacuum sealer, so that participants can pack their homemade products in good packaging, do not leak and have high durability when marketed. Participants also need training on how to market products so that the rproducts can be well absorbed by the market.

Abstract

The dietary intake of athletes is crucial for attaining peak performance, sustaining physical fitness, preventing the risk of injury, and speeding post-competition recovery. A prevalent issue among athletes is insufficient food consumption relative to their nutritional requirements, resulting from a limited understanding of proper dietary practises. The objective of this study is to increase athletes' understanding of dietary consumption through the provision of nutritional guidance to athletes. The study was conducted on ten volleyball atheletes who were in the process of training for the PORPROV (Pekan Olahraga Provinsi) Jawa Timur VIII tournament in 2023. This research used the pre-experimental design method . The research design uses one group pre-test post-test design. The data collected includes body weight, height, food intake and nutritional knowledge of athletes. The analysis used a one sample t-test to see the athletes' food intake and knowledge before and after being given nutritional counseling. The results of this study were a significant increase in athletes' knowledge and energy intake (p <0.05), the average athlete knowledge score before nutritional counseling was 52.5 and after nutritional counseling it was 74.5. The mean energy consumption before to receiving nutritional counselling was 1794.6 kilocalories (kcal), while after receiving nutritional counselling, it increased to 2141.8 kcal. Providing nutrition counselling to volleyball athletes can improve their understanding of dietary requirements and improve their food consumption, finally leading to optimal performance. The government should provide nutritional counseling services for athletes

Abstract

Stunting was a disruption growth problems because of deficiency nutritional intake in a long periode and unappropriate feeding practice. Riskesdas stated that Bondowoso’s stunting rate  was still the third highest in East Java. The stunting rate in Bondowoso was 38% of total childrens under five, meanwhile the threshold determined by WHO was 20%. This activity aimed to increase the knowledge about stunting and skills to determine the toddler’s nutritional status of the mother in TK Kartika IX-37 Bondowoso. This activity was conducted among 35 toddler’s mother in TK Kartika IX-37 Bondowoso. The details of the activity were (1) education about stunting;(2) demonstration about anthropometry measurement and read the Z score curve; (3) education about determined the appropriate source of protein. The results of this activity showed an increased in knowledge related to stunting and appropriate protein source for children growth, evidenced by the mothers were able to answer and demonstrated anthropometry measurement correctly.
