Abstract

The purpose of the KKN-PPM program is to increase the knowledge of the breeders about a proper duck raising system. The method of implementation in the field includes counseling, training and assistance, and program monitoring and evaluation. The evaluation phase is carried out on the performance of students by measuring the effective working hours of students (JKEM) which include the main activities, individual and social, and measuring the level of technology adoption by farmers using questionnaires and interviews. Interviews were conducted with 45 members of farmer groups, interviewed with questionnaire guidelines. The results of the KKN-PPM activities are that each participant has spent an effective amount of student work totaling 169 hours consisting of main activities 86 hours (± 50 percent), for individual activities of 52 hours (± 30 percent) and social activities of 31 hours (± 20 percent). The highest adoption rate of breeders was in the types of livestock raising activities 95.56 percent and livestock health 88.89% while for fermentation, hatching and egg processing activities the adoption rates were 62.22 percent, 66.67 percent and 77.77 percent. The level of adoption of farmers for the technology provided is influenced by factors in the agricultural system they live in, there are other social activities that affect the availability of time to carry out their farming activities and whether there are additional costs if they use the technology. How to cite:Malelak, G. Abstract

The objective of this study was to investigate the effect of Citrus aurantifolia extract (CAE), coconut shell liquid smoke (CSLS) and the combination of CAE and CSLS (CACS) on se’i characteristics. A completely randomized design was assigned in this experiment. Treatments used were: se’i treated with  5% (v/v) CAE, CSLS 5% (v/v), (CAE : CSL 1:1) )/ (CACS) and untreated se’i as a control (C). Parameters measured were: aroma, color, taste, pH, residual nitrite, total bacterial count, Coliform, Staphylococcus aureus, Escherichia coli, and Salmonella. The data of aroma, color, and taste were analyzed by using Kruskal-Wallis test followed by Mann-Whitney test. The pH, residual nitrite, and bacterial data were analyzed with analysis of variance (ANOVA) followed by least significant differences test. Results showed that CAE caused the highest score at both aroma and taste (P<0.05). CSLS caused the lowest residual nitrite (27 ppm) (P<0.05). Application of CAE and CACS could reduce total bacteria (P<0.05) at least 1 log. Color, pH, and Coliform number were not significantly different. S. aureus, E. coli, and Salmonella were negative in all se’i samples. CAE gives the best organoleptics and bacteriological characteristics while CSLS is more effective in reducing nitrite.Key words: Citrus aurantifolia extract, coconut shell liquid smoke, se’i, smoked beef

Abstract

  Tujuan dari pelatihan ini adalah memperkenalkan  produk olahan daging babi yaitu se’i dan kerupuk kulit babi untuk memotivasi peternak memulai usaha pengolahan daging babi, mampu berinovasi dan terdorong untuk memulai usaha kuliner yang mempunyai peluang besar untuk dikembangkan di Kabupaten Malaka.  Metode yang digunakan dalam kegiatan ini  penyuluhan dan Pelatihan  Kegiatan pendampingan dan evaluasi oleh pengurus DPW Kabupaten Malaka yang selalu berkomunikasi dengan nara sumber dari UNDANA sehingga hubungan kerja sama antara 2 belah pihak terus berjalan.  Kegiatan penyuluhan diikuti oleh semua peserta  yang berpartisipasi aktif, ditandai dengan  tanya jawab/ diskusi selama proses penyuluhan terutama tentang kerjasama antar anggota kelompok dan bagaimana cara menghitung keuntungan dan bagaimana  pembagian keuntungan  diantara anggota kelompok.   Beberapa hal yang didapati dari pelatihan ini adalah untuk pengolahan se’i perlu dmenggunakan daging babi dengan kandungan lemak yang rendah sehingga akn menghasilkan rendemen yang tinggi. Dalam pelatihan ini jenis rendemen se’i sebesar ±54% dengan proporsi lemak sekitar ±25%.  Proporsi lemak ini cukup tinggi dan dapat mempengaruhi harga jual se’i.  Dalam pengolahn kerupuk kulit hal-hal yang perlu diperhatikan adalah; ketebalan lemak pada kulit,  penjemuran kulit, proses ungkep dan penggorengan karena akan mempengaruhi daya kembang, rasa gurih dan kerenyahan kerupuk. Hasil pelatihan ini dapat disimpulkan bahwa pengolahan se’i babi ini memberi nuansa baru pada peserta untuk memulai melakukannya secara komersial.  Ketrampilan yang terus dilatih diperlukan untuk menghasilkan kerupuk kulit babi ini yang berkualitas baik, sesuai standar kerupuk; kembang, gurih dan renyah, sebelum produk ini diusahakan secara komersial.--------------Kata Kunci: pelatihan, se’i babi, kerupuk kulit babi

Abstract

Marketing institutions that involve in cattle marketing in WTL-ENT has some activities, such as: buying, transportation, sortation, standardization and grading, etc.The research was conducted by applying survey method. The results show that: IMC between the cattle price on farmers’ level and middlemen was 1.0040; between the farmers and the outer-island traders was1.0048; between the middlemen and the outer-island traders was 1.0714. It means, in short-term, the cattle price in those three markets has not been integrated perfectly. However, farmer’s sharehas already fair,although the cattle marketing at each market level has not been integrated perfectly.Average of farmer’s share in research site was75.95%, marketing margin was 62.17%; and profit margin was 66.71%. The highest profit margin was 60.70%attained by the middlemen, followed by the outer-island traders at 29.30%. Margin distribution has not been balanced yet, since the middlemen gained88.57% and the outer-island traders gained48.33%. ABSTRAK Lembaga perantara yang terlibat dalam pemasaran ternak sapi di DTB-NTT dengan berbagai kegiatan antara lain: pembelian, pengangkutan, sortasi, standarisasi dan grading, dan sebagainya. Penelitian ini dilakukan dengan metode survai. Hasil penelitian ini : IMC antara harga ternak sapi potong di tingkat peternak dan pedagang perantara 1.0040; antara peternak dan pedagang antara pulau 1.0048; antara pedagang perantara dan pedagang antar pulau 1.0714. Berarti dalam jangka pendek harga ternak sapi potong di ketiga pasar belum teritegrasi secara sempurna. Farmer’s share sudah berlangsung cukup adil, meskipun pada berbagai tingkatan pasar ternak sapi di wilayah ini belum terintegrasi secara sempurna. Rata-rata farmer’s share di wilayah penelitian 75,95%. Margin pemasaran 62,17%; profit margin 66.71%. Profit margin terbesar diterima pedagang perantara 60.70%, pedagang antar pulau 29.30%. Distribusi margin pemasaran masih timpang, yakni pedagang perantara 88.57% dan pedagang antar pulau 48.33%.

Abstract

The activities of the institutions involved in beef cattle marketing in Kupang District-ENT include: purchasing, transportation, sorting, standardization and grading, and so on. In carrying out these activities, traders sacrifice costs, labor and time. Therefore, marketing margins will be created as return for these sacrifices. This research was conducted by survey method. Data analysis was running by analysis of farmer's share and marketing margins. The results of the study: farmer's share has been fairly. The average farmer share was 59.01%. Marketing margin was 62.17%; profit margin was 66.71%. The largest profit margin is received by midlemen traders was 60.70%, inter-island traders was 29.30%. There disparity in distribution of marketing margins, where was 88.57% for midlemen and only 48.33% for inter-island traders. ABSTRAK Kegiatan lembaga-lembaga yang terlibat dalam pemasaran ternak sapi potong di Kabupaten Kupang-NTT antara lain: pembelian, pengangkutan, sortasi, standarisasi dan grading, dan sebagainya. Dalam melakukan berbagai kegiatan tersebut, para pedagang mengorbankan biaya, tenaga dan waktu. Oleh karena itu akan tercipta margin pemasaran sebagai balas jasa terhadap segala pengorbanan tersebut. Penelitian ini dilakukan dengan metode survai. Analisis data dilakukan dengan farmer’s share dan margin pemasaran. Hasil penelitian: farmer’s share sudah cukup adil. Rata-rata farmer’s share 59,01%. Margin pemasaran 62,17%; profit margin 66.71%. Profit margin terbesar diterima pedagang perantara 60.70%, pedagang antar pulau 29.30%. Terjadi distribusi margin pemasaran yan timpang, yakni 88,57% diterima pedagang perantara dan 48,33% yang diterima pedagang antar pulau.
