Abstract

Beluntas (Pluchea indica Less) is a herb plant used as a traditional medicine or eaten in fresh form. Thereare phytochemical compounds such as essential oils, flavonoids, phenolics, tannins, saponins, phenolshydroquinone, and cardiac glycosides compounds of beluntas leaves that cause it having potential as antioxidant.Difference of solvent polarity can cause concentration and composition of phytochemical compoundsin extract differed, therefore this study was conducted to determine the potential for beluntasleaves extracts (water, methanol, ethanol, ethyl acetate, and hexane) and fractions (water, ethyl acetate,and n‐butanol) as an antioxidant and antiwarmed over flavor (WOF) in duck meat during storage. Theresults showed that the methanol extract of the beluntas leaves (EMB) of the most potential as a source ofantioxidants because the concentration and composition of phytochemical compounds, total phenols andtotal flavonoids than the water, ethanol, ethyl acetate, and hexane extracts. Furthermore EMB was fractionatedby difference of solvent polarity (ethyl acetate, water, n‐butanol). Test showed that EMB antioxidantcapacity and its fractions had the difference in the ability of antioxidant compounds in the EMB andeach fraction in different test systems. EMB had the potency to scavenge superoxide radicals, reduce ironions, and inhibit bleaching of linoleic acid‐β‐carotene system. Ethyl acetate fraction (FEA) had the potencyto scavenge superoxide radicals, reduce iron ions, chelate of iron ions and haemoglobin (Hb), thusFEA was effective as antiwarmed over flavor (WOF) in duck meat, which protected linoleic acid, decreasedof TBARS and hexanal.Keywords: beluntas (Pluchea indica Less), antioxidant, antiwarmed over flavor, duck meat

Abstract

Ginger torch (Etlingera elatior Jack) is an herbaceous plant that is used as a flavoring, deodorizing, anti-oxidant, and antimicrobial. The fresh ginger torch has a high moisture content so that it can’t be stored for a long time because it will rot quickly. Drying is needed to preserve the ginger torch so that it can last longer. The research was aimed to determine the mathematical model, effective moisture diffusion, and activation energy for drying the leaves of Etlingera elatior Jack on a rotary dryer. The method used in this research was an experiment with three times repeated then followed by data analysis with curve expert 2.3.0 and MS-excel software. This research was performed by using a rotary dryer at temperatures of 60 oC, 70 oC, 80 oC, and 90 oC. The ginger torch was chopped about 1 cm, with a mass of 400 grams for each sample. Abstract

Organic Rices, such as Jasmine variety white organic rice, Saodah variety red organic rice, and Java variety black organic rice, are many cultivated by farmer in Indonesia, especially Sleman area, DI Yogyakarta. The potency of three varieties of organic rice as antioxidant source hasn’t been studied. Therefore this research was done to know the effect of pigment color difference in three varieties of organic rice on antioxidant activity, especially 1,1-diphenyl-2- pycrylhydrazyl (DPPH) radical scavenging activity and ion reducing power. The results showed that Saodah variety red organic rice had the highest antioxidant potency because it had the highest total phenol and total flavonoid, 37.93 mg GAE/g sample dry base and 0.85 mg CE/g sample dry base, respectively. However Saodah variety red organic rice had total anthocyanin lower than that of Java variety black organic rice, 0.0025 mg/g sample dry base and 0.024 mg/g sample dry base, respectively. Anthocyanin compounds identified in three varieties of organic rice were cyanidine-3-glucoside at 32 minute time retention and peonidine -3-glucoside at 37 minute time retention. 1,1-diphenyl-2-pycrylhydrazyl (DPPH) radical scavenging activity and ion reducing power of Saodah variety red organic rice were the highest, 0.90 mg equivalent vitamin E/g sample dry base and 278.28 mg equivalent vitamin E/g sample dry base, respectively. ABSTRAKBeras organik, meliputi beras putih varietas Jasmine, merah varietas Saodah, dan hitam varietas Jawa, banyak dibudidayakan oleh masyarakat di Indonesia, terutama daerah Sleman, D.I. Yogyakarta. Potensi ketiga jenis beras tersebut sebagai sumber antioksidan belum banyak dikaji. Oleh karena itu penelitian ini dilakukan untuk mengetahui pengaruh perbedaan pigmen pada ketiga jenis beras organik tersebut terhadap aktivitas antioksidan, khususnya kemampuan menangkap radikal bebas 2,2-difenil-1-pikrilhidrasil (DPPH) dan mereduksi ion besi. Hasil menunjukkan bahwa beras organik merah varietas Saodah paling berpotensi sebagai sumber antioksidan. Hal ini ditunjukkan dengan total fenol dan total flavonoid beras merah tertinggi dibandingkan kedua beras yang lain, masing-masing sebesar 37,93 mg GAE/g sampel db dan 0,85 mg CE/g sampel db. Meskipun beras organik merah mempunyai total antosianin (0,0025 mg/g sampel db) lebih rendah dari beras organik hitam (0,024 mg/g sampel db). Jenis senyawa antosianin yang terdeteksi pada ketiga jenis organik ini adalah sianidin-3-glukosida yang terdeteksi pada waktu retensi 32 menit dan peonidin-3-glukosida dengan waktu retensi 37 menit. Kemampuan menangkap radikal bebas DPPH dan kemampuan mereduksi ion besi beras organik merah tertinggi, masing-masing sebesar 0,90 mg ekuivalen vit E/g sampel db dan278,28 mg ekuivalen vit E/g sampel db.

Abstract

The commercial development of plants as sources of natural antioxidant to enhance health and food preservation is of current interest. It is related to phenolic compounds containing in foods and beverages to prevent many diseases. The natural antioxidant is more safety than the synthetic antioxidant such as TBHQ (tether butylated hydroxyquinone), BHT (butylated hydroxytoluene) and BHA (butylated hydroxyanisole). Basil (Ocimum basilicum Linn) contains a wide range of essential oils and is rich in phenolic compounds. These can be extracted by two methods i.e. soxhlet and hydrodistilation. The ethanolic extracts are resulted by soxhlet and essential oils are extracted by hydrodistilation. The oils are analyzed by gas chromatography to know the phenolic compound contents. The spectra are identified by standard compounds i.e. eugenol and linalool. These compounds are used because these are the dominant phenolic compounds in basil. The result showed that linalool spectrum is found in peak number 7 with 6,5 time retention. Total phenolics analysis showed that the highest concentration of them in the ethanolic extracts is 0,25 mg/g sample and in the essential oil is 5,20 mg/g essential oil. The DPPH (2,2-Dipheny1-1-pycrylhidrazil radical) free radical scavenging activity of the ethanolic extracts and the essential oil is tested and compared with I3-carotene and TBHQ. The result showed that the DPPH free radical scavenging activity of these antioxidant is in the order of [1-carotene > essential oil > ethanolic extracts > TBHQ respectively

Abstract

The phytotoxicity of paraquat was suggested due to the production of toxic superoxide during the interaction of paraquat and photosystem l, on the other hand it is also suggested that the paraquat free radical itself is the toxicant. In this study, the effect of paraquat in the production of hydrogen peroxide in chloroplast of spinach leaves (Spinacia oleraceae L.), which is formed form superoxide in the presence of superoxide dismutase and water, was investigated under the influence of irradiation time, amount of oxygen and pH. The result showed that hydrogen peroxide was produced even if there is no paraquat added, meaning that the enzymes activity, such as superoxide dismutase, ascorbate peroxidase, dehydroascorbate reductase and glutathione reductase, cancelled the phytotoxicity of hydrogen peroxide production increases as paraquat is added, the irradiation time and the amount of oxygen present increases. The optimum pH for hydrogen peroxide production was 8. Further study using supernatant, chloroplast pellet and both supernatant and chloroplast pellet, showed that paraquat was acting as electron acceptor for electrons generated by photosystem l and catalyzing the hydrogen peroxide production. This result explain the desiccant effect of paraquat.

Abstract

The research was conducted to explore the potency of pluchea leaves-black tea drink as antioxidant at various proportions. The research used a single factor randomized block design of pluchea leaves and black tea proportions, including 100:0; 75:25; 50:50; 25:75; and 0:100% (w/w). Each of it was repeated five times. The parameters observed in this study were secondary metabolites, total phenolic, total flavonoids, free radical DPPH scavenging activity, and iron reducing power. The data were statistically analyzed using Analysis of Variance (ANOVA) at α = 5%, if the analysis showed a significant effect then it was continued with Duncan's Multiple Range Test (DMRT). Data was stated as mean ± standard deviation. The results showed that the secondary metabolites containing in drink from pluchea leaves and black tea at various proportions were alkaloids, flavonoids, phenolics, saponins, tannins, and cardiac glycosides. The increasing of black tea proportion in samples added the intensity of alkaloids, phenolics, flavonoids, saponins, and cardiac glycosides compounds detected, but the tannins were decreased. These secondary metabolites were correlated with total phenolic content (TPC) and total flavonoid content (TFC). The increasing of black tea proportion in drink significantly decreased DPPH free radical scavenging activity and iron ion reducing power, except for 100% black tea proportion. Tannin compounds seems determining antioxidant activity.  Based on coefficient correlation between TPC or TFC and DPPH free radical scavenging activity or iron ion reducing power, the result showed that DPPH free radical scavenging activity was dominantly contributed by TPC and iron ion reducing power was determined by TPC and TFC. ABSTRAKPenelitian ini dilakukan untuk mengetahui potensi minuman daun beluntas teh hitam sebagai antioksidan pada berbagai proporsi. Penelitian ini menggunakan rancangan acak kelompok satu faktor, yaitu proporsi daun beluntas teh hitam meliputi 100:0; 75:25; 50:50; 25:75; dan 0:100% (b/b). Tiap faktor diulang sebanyak 5 kali. Parameter yang diamati pada penelitian ini meliputi kandungan metabolit sekunder, total fenolik (TPC), total flavonoid (TFC), kemampuan menangkal radikal bebas DPPH, dan kemampuan mereduksi ion besi. Data dianalisis secara statistik dengan Analysis of Variance (ANOVA) pada α = 5%, jika terdapat beda signifikan dilanjutkan dengan uji Duncan's Multiple Range Test (DMRT). Data dinyatakan dengan rata-rata ± standar deviasi.  Hasil menunjukkan bahwa metabolit sekunder yang terkandung dalam minuman daun beluntas teh hitam pada berbagai proporsi adalah alkaloid, flavonoid, fenolik, saponin, tannin, dan kardiak glikosida. Peningkatan proporsi teh hitam menambah intensitas senyawa alkaloid, fenolik, flavonoid, saponin, dan kardiak glikosida yang terdeteksi, tetapi kandungan senyawa tannin berkurang. Kandungan metabolit sekunder ini berkorelasi dengan total fenolik (TPC) dan total flavonoid (TFC). Peningkatan proporsi teh hitam dalam minuman menurunkan kemampuan menangkal radikal bebas DPPH dan kemampuan mereduksi ion besi, kecuali pada proporsi teh hitam 100%. Kandungan senyawa tannin dalam minuman menentukan aktivitas antioksidan. Berdasarkan koefisien korelasi antara TPC atau TFC dan kemampuan menangkal radikal bebas DPPH atau kemampuan mereduksi ion besi, hasil menunjukkan bahwa kemampuan menangkal radikal bebas DPPH dominan dikontribusi oleh TPC dan kemampuan mereduksi ion besi ditentukan oleh TPC dan TFC.

Abstract

Diabetes mellitus (DM), terutama tipe-2 merupakan penyakit degeneratif akibat perubahan pola hidup, ditandai dengan peningkatan gula darah (hiperglikemia) dan perubahan progresif terhadap struktur histopatologi sel beta langerhaens pankreas karena akumulasi radikal bebas dalam tubuh. Pengelolaan DM yang tidak tepat menyebabkan munculnya penyakit menahun lainnya, seperti jantung koroner dan gangguan mata. DM tipe-2 lebih mudah penanganannya, diantaranya diet pangan kaya polifenol, yang mempunyai aktivitas antioksidan serta antidiabetik, salah satunya teh beluntas (Pluchea indica Less). Konsumsi teh beluntas diharapkan menurunkan gula darah dan resiko lanjut. Pengabdian kepada masyarakat ini bertujuan sebagai upaya penyadaran masyarakat dalam menanggulangi penyakit DM dengan memperkenalkan potensi teh beluntas, menyelenggarakan senam diabetes mellitus serta pemeriksaan kesehatan rutin, meliputi tekanan darah, berat badan, gula darah, total kolesterol serta hemoglobin A1c (HbA1c) khusus bagi peserta DM di komunitas RS Gotong Royong, Surabaya. Kegiatan ini diikuti oleh 75 orang selama 3 bulan (Maret-Mei 2017) setiap hari Minggu mulai pukul 06.00-10.00 WIB (11 pertemuan). Hasil evaluasi diperoleh sejumlah 46% peserta hadir > 8 kali mengikuti senam diabetes mellitus dan pemeriksaan kesehatan, 24% peserta menderita pre hipertensi, 34% menderita DM, 39% memiliki kadar total kolesterol pada kategori perbatasan dan 37% berada pada katerogi berbahaya. Pemeriksaan HbA1c pada pasien DM dengan kadar gula darah >140 mg/dl menunjukkan bahwa 19% pasien beresiko DM dan 81% pasien benar menderita DM. Konsumsi teh beluntas 2 cangkir per hari pagi dan sore (2g/100mL) selama 2 bulan menurunkan gula darah dan total kolesterol, menurunkan keluhan seperti hilangnya rasa kesemutan dan berkurangnya rasa lelah yang berimbas peningkatan semangat beraktivitas. Kata kunci : penanggulangan, diabetes mellitus tipe-2, teh beluntas, pemeriksaan kesehatan ABSTRACT Diabetes mellitus (DM), especially type 2 is a degenerative disease due to changes in lifestyle, characterized by increased blood sugar (hyperglycemia) and progressive changes in the histopathological structure of pancreatic beta langerhaens cells due to accumulation of free radicals in the body. Improper management of DM causes the emergence of other chronic diseases, such as coronary heart disease and eye disorders. Type 2 diabetes is easier to handle, including a diet rich in polyphenols, which have antioxidant and antidiabetic activity, one of which is beluntas tea (Pluchea indica Less). Consumption of beluntas tea is expected to reduce blood sugar and further risk. This community service was conducted as an effort to raise public awareness in tackling DM disease by introducing the potential of beluntas tea, organizing diabetes mellitus exercises and routine health checks, including blood pressure, weight, blood sugar, total cholesterol and hemoglobin A1c (HbA1c) specifically for DM participants. in the Community Hospital Gotong Royong, Surabaya. This activity was attended by 75 people for 3 months (March-May 2017) every Sunday starting at 06.00-10.00 WIB (11 meetings). The results of the evaluation showed that 46% of participants attended > 8 times diabetes mellitus exercise and health checks, 24% of participants suffered from pre-hypertension, 34% suffered from diabetes, 39% had total cholesterol levels in the border category and 37% were in dangerous categories. Examination of HbA1c in DM patients with blood sugar levels >140 mg/dl showed that 19% of patients were at risk of DM and 81% of patients had diabetes. Consumption of 2 cups of pluchea tea per day in the morning and evening (2g/100mL) for 2 months reduced blood sugar and total cholesterol, reduced complaints such as loss of tingling sensation and reduced fatigue which results in increased enthusiasm for activities. Abstract

Pengeringan merupakan pengurangan kadar air dalam suatu bahan untuk meningkatkan kualitas bahan tersebut. Pada suatu pabrik gula ampas tebu merupakan hasil samping yang digunakan sebagai bahan bakar di boiler. Ampas tebu ini memiliki kadar air yang masih tinggi sehingga masih perlu dikeringkan. Pada penelitian ini pengeringan dilakukan menggunakan microwave dimana ampas tebu dicacah sekitar 3 cm dan sampel setiap percobaan adalah seberat sebesar 150 g. Daya yang digunakan adalah 50, 60, 70, 80, 90 dan 100% dari daya maksimal 900 W. Berat sampel diukur setiap menit dan pengeringan dianggap selesai ketika massanya sudah tidak berubah. Hasil penelitian menunjukkan model matematika kinetika pengeringan yang paling sesuai adalah model rasional dengan bentuk umum . Persamaan ini memiliki nilai R2 paling kecil sebesar 0,99926 dan nilai RMSE terbesar adalah 0,008874. Diffusi efektif pada kisaran 1,044 x 10-7 (m2/s) hingga 2,009 x 10-7 (m2/s) dan nilai energi aktivasi Ea adalah sebesar 4,789 W/g. SMER terkecil pada kisaran 0,3229 - 0,4756 kg/kWh. Nilai SEC adah sebesar 3,10 hingga 2,10 kWh/kg. Semakin besar daya yang digunakan maka  Deff, SMER, MER semakin besar sedangkan SEC akan semakin kecil.

Abstract

Pluchea indica Less tea has been widely produced as a health drink because it contains phytochemical compounds and has biological activities, such as antihyperglycemic. Pluchea tea is usually produced in tea bags and stored in standing pounds made of aluminum foil. Packaged pluchea teas are usually stored at room temperature for a period of time. During storage, the quality and antihyperglycemic properties of brewed water from packaged pluchea tea have not been studied further. Therefore, this study was conducted to determine the quality and antihyperglycemic properties of pluchea tea during storage. The research design used was a Randomized Block Design (RAK) with one factor including storage time consisting of seven treatment levels, namely 0, 2, 4, 6, 10, 14, and 18 weeks. Each treatment was repeated three times. Parameters analyzed included water content, color, turbidity, pH, total acid, phytochemical composition, total phenol content, total flavonoid content, and antihyperglycemic activity (α-amylase and α-glucosidase). The results showed that storage time affected all test parameters, there was a tendency for storage time to decrease the quality and antihyperglycemic activity. Storage up to 18 weeks can reduce the water content of pluchea tea packaged in tea bags and stored in standing pounds. Therefore, the storage of pluchea tea which is packaged in tea bags and stored in standing pounds needs to be considered so that there is no increase in water content to maintain the quality and antihyperglycemic activity.

Abstract

Oyster mushroom is a group of food plants that are rich in protein, vitamins and minerals. The weakness of this mushroom is its high moisture content so it rots quickly when stored in fresh conditions. Drying by using solar energy is one of the best options because of its sufficient quantity and low cost. This study proposes a solar dryer with three collectors of 500 mm x 500 mm x 1254 mm each with 4 rack. The drying experimental is using a sample of 1 kg. The best model of drying kinetics is the MMF model with an R value of 0.9950. The moisture extraction rate (MER) was 137 gr/hour under experimental conditions.
