Abstract

ABSTRACT This research was aimed to know the effect of ratio of wheat flour and pumpkin flour and percentation of yeast to produce the best characteristics of white bread and to introduce a new pumpkin product. This research was conducted using a completely randomized design with two factors, namely ratio of pumpkin flour and wheat flour; (95%:5%, 90%:10%, 85%:15%, and 80%:20%)and percentation of yeast; 1%, 2%, 3%, and 4%. The parameters analyzed were water content, ash content, fat content, protein content, carbohydrate content, fiber content, volume increase, organoleptic values (colour, flavour, taste, and texture). The results showed that the ratio of wheat flour and pumpkin flour had highly significant effect on ash content, protein content, fat content, fiber content, carbohydrate content, volume increase, colour, and taste. Concentration of yeast had highly significant effect on ash content, protein content, fiber content, volume, colour, and  taste, but had significant effect on texture. The 85%:15% proportion of wheat flour on pumpkin flour and 3% of yeast produced the better and more acceptable quality of bread. Keywords: Pumpkin, White Bread, Yeast ABSTRAK   Penelitian ini dilakukan untuk mengetahui pengaruh perbandingan tepung terigu dengan tepung labu kuning dan penambahan ragi untuk menghasilkan roti tawar dengan karakteristik terbaik dan untuk mengenalkan produk olahan dari tepung labu kuning. Penelitian ini dilakukan menggunakan rancangan acak lengkap dua faktor, yaitu perbandingan tepung terigu dan tepung labu kuning yaitu 95%:5%, 90%:10%, 85%:15%, dan 80%:20% dan konsentrasi ragi yaitu 1%, 2%, 3%, dan 4%. Parameter yang dianalisis meliputi kadar air, kadar abu, kadar lemak, kadar protein, kadar karbohidrat, kadar serat kasar, volume pengembangan, pengujian organoleptik (warna, aroma, rasa, dan tekstur). Hasil penelitian menunjukkan bahwa pengaruh perbandingan tepung terigu dengan tepung labu kuning memberikan pengaruh berbeda sangat nyata terhadap kadar abu, kadar protein, kadar lemak, kadar serat kasar, kadar karbohidrat, volume pengembangan, nilai organoleptik warna, rasa, dan tekstur. Penambahan ragi memberikan pengaruh sangat nyata terhadap kadar abu, kadar protein, kadar serat kasar, volume pengembangan, nilai organoleptik warna, dan rasa, namun berbeda nyata terhadap nilai organoleptik tekstur. Perbandingan tepung terigu dengan tepung labu kuning sebesar 85%:15% dan penambahan ragi sebesar 3% menghasilkan roti tawar yang lebih baik dan dapat diterima.   Kata kunci: labu kuning, roti tawar, ragi

Abstract

Indonesia's coffee export value in 2021 occupied the thirteenth position as a world coffee exporter country. Sumatra Utara is classified as one of the coffee-producer regions on the Sumatra island, this area has international trade routes through the Belawan Port hub. The proof is also that there are risks in the agribusiness coffee, from upstream to downstream. Risk management is important to keep the coffee commodity contributing to the economy. This study is intended to analyze production risks in coffee export activities in Sumatra Utara. The data analyzed is in the form of primary data obtained through interviews with thirty respondents. Meanwhile, secondary data was obtained through related institutions and the media. Data is analyzed to obtain priority risks in coffee export production activities using the Risk Priority Number calculation. The design of this study was made with reference to the concept of risk management according to ISO 31000. From the results of the identification, it can be seen that the risk of production can occur due to factors in the coffee plant and processing activities carried out after harvesting. There are seven sources of production risk in coffee factories and ten sources of production risk in post-harvest production processes. Through the calculation of the Risk Priority Number, it is known that there are three main priority risks in coffee plant factors and the five highest priority risks in export coffee production activities. The highest priority found was on the quality of the coffee beans.

Abstract

Kewirausahaan berbasis digital marketing menjadi topik yang semakin menarik pada era digital. Berbagai sektor dan industri mulai mengaplikasikan teknologi digital untuk meningkatkan efisiensi dan produktivitasnya. Berdasarkan Pra Survey, Keadaan yang dialami oleh mitra kami yaitu mahasiswa/i di Universitas Harapan Medan yang beralamat di Jl. Imam Bonjol No. 35 Medan yaitu masih minimnya pemahaman tentang motivasi jiwa kewirausahaan di kalangan usia produktif, dalam hal ini mahasiswa. Banyak mahasiswa yang di era digital saat ini masih digunakan untuk mengakses hiburan semata. Padahal apabila mereka tahu ilmunya dan berani mencoba dapat dimanfaatkan untuk menghasilkan penghasilan diusia muda (Generasi Z). Generasi Z merupakan generasi yang lahir, dibesarkan, dan tumbuh dalam lingkungan digital. Suatu generasi yang tidak lepas dari gadget dan berinteraksi sosial di dunia maya. Dimanapun dan kapanpun mereka akan tetap online. Mobile phone saat ini bagaikan dua sisi mata uang, di satu sisi dengan adanya pemanfaat mobile phone setiap orang dapat mengakses berbagai informasi dari berbagai belahan dunia, namun disisi lain dapat membuat orang ketagihan dengan berbagai hiburan yang ditawarkan, terutama dengan adanya sosial media. Entah berapa lama waktu yang bisa dihabiskan dalam bermain sosial media.

Abstract

The growth of credit disbursements is expected to coincide with the growth of rural saving. However, credit growth is currently higher. This study aims to analyze the competitive strategy of PT Bank Rakyat Indonesia Tbk Branch Office Medan Iskandar Muda in improving rural saving. The location of this research was determined purposively, that the location chosen was a branch which was the largest bigbond in the Medan region. This research is qualitative research using descriptive methods to conduct data analysis. Analysis of competitive strategies in this study was carried out using the concept of Porter's Five Forces. The results of the analysis found that the competitive advantage lies in the network owned by PT Bank Rakyat Indonesia Tbk Branch Office Medan Iskandar Muda as well as the existence of individual customers and Micro, Small and Medium Enterprises. Our interviews with micro debtors found that most of the funds were used for business and consumption expenditures in wholesalers, traditional markets, supermarkets and large agents, while a small part was for savings and repayments. So that with its competitive advantage, the mastery of acceptance in wholesalers, markets, supermarkets and large agents will increase rural saving.
