Abstract

ABSTRACTHoney contains secondary metabolites, including flavonoid compounds, which have antioxidant activity. The diversity of bee species and food plant sources in Indonesia will have an impact on differences in the composition of secondary metabolites in honey, it is necessary to analyze the influence of feed sources and bee species so as to improve the quality of the honey they produce. This study aims to determine the relationship between total flavonoid levels and antioxidant activity of honey from various provinces in Indonesia. The flavonoid test used UV-vis spectrophotometry; the antioxidant activity test was carried out using the DPPH method. The total flavonoid content contained in honey ranged from 4.04-47,033 mg/100g, A. cerana honey (North Sumatra) produced the highest total flavonoid content, while G. thorasica (West Sumatra) honey produced the lowest total flavonoid content. The antioxidant activity (IC50) contained in honey ranged from 3,589-64,271 mg/ml, H. itama honey (Sumsel) produced the highest antioxidant activity, while G. thorasica honey (West Sumatra) produced the lowest antioxidant activity. Flavonoid contents influence antioxidant activity that is equal to 25.27%, while 74.72% is influenced by other factors. Based on these data, the higher the flavonoid content, the stronger the antioxidant activity of honey.Keywords: Antioxidant Activity, Flavonoid, Bee Species, Feed SourceABSTRAKMadu mengandung metabolit sekunder, antara lain senyawa flavonoid, yang memiliki aktivitas antioksidan. Keberagaman spesies lebah dan sumber tanaman pakan di Indonesia akan berdampak pada perbedaan komposisi metabolit sekunder pada madu, hal itu perlu adanya analisis mengenai pengaruh dari sumber pakan dan spesies lebah sehingga dapat meningkatkan kualitas madu yang dihasilkannya. Penelitian ini bertujuan untuk mengetahui hubungan kadar total flavonoid dan aktivitas antioksidan madu dari berbagai provinsi di Indonesia. Uji flavonoid menggunakan Spektrofotometri Uv-vis, pengujian aktivitas antioksidan dilakukan menggunakan metode DPPH. Kadar total flavonoid yang terkandung dalam madu berkisar antara 4.04-47.033 mg/100g, madu A. cerana (Sumut) menghasilkan kadar total flavonoid tertinggi, sedangkan madu G. thorasica (Sumbar) menghasilkan kadar total flavonoid terendah. Aktivitas antioksidan (IC50) yang terdapat dalam madu berkisar antara 3.589-64.271 mg/ml, madu H. itama (Sumsel) menghasilkan aktivitas antioksidan tertinggi, sedangkan madu G. thorasica (Sumbar) menghasilkan aktivitas antioksidan terendah. . Kadar flavonoid memiliki pengaruh terhadap aktivitas antioksidan yaitu sebesar 25,27%, sedangkan 74,72% dipengaruhi oleh faktor lain. Berdasarkan data tersebut, semakin tinggi kadar flavonoid, maka aktivitas antioksidan madu cenderung menguat.Kata Kunci: Aktivitas Antioksidan, Flavonoid, Spesies Lebah, Sumber Pakan
