Abstract

Toko Santan XX located in Nongsa District, Batam City processes coconut into coconut milk that is ready to consume by consumers. Processing is still conducted manually and a makeshift coconut grinding machine. It is not enough to support the high demand for coconut milk because Toko Santan XX has many customers in the region. In assessing the quality and safety of food management processes, Good Manufacturing Practices (GMP) studies can be used. Therefore, based on the situation analysis that has been carried out, this community service intends to provide Good Manufacturing Practices (GMP) training to Toko Santan XX. Good Manufacturing Practices (GMP) contain minimum requirements and general processing that must be met in food processing, from raw materials to final products. The purpose of the assessment is to make Toko Santan XX can create higher quality products and more efficient management. The GMP assessment was carried out using 14 assessment aspects, the average percentage was 59.45. This means that it is enough for Toko Santan XX to implement GMP at its place of business, but it still needs to be improved. Recommendations for improvements that need to be made include making SOPs based on the order of coconut milk production so that work is more organized, improving the layout of coconut milk processing tools and machines to increase productivity, and avoiding unnecessary movements. In addition, there needs to be an awareness of HSE at Toko Santan XX.

Abstract

ABSTRAK Program Pengabdian Kepada Masyarakat (PKM) ini berfokus pada pengembangan bisnis usaha mikro, kecil, dan menengah (UMKM) di Indonesia khususnya di kota Batam. Menurut data dari Kementerian Koperasi dan Usaha Kecil dan Menengah, UMKM di Indonesia telah mengalami pertumbuhan dan perkembangan yang berkelanjutan selama bertahun-tahun, dengan tingkat pertumbuhan tahunan rata-rata sebesar 2,7%. Di Batam, terdapat 555 UMKM, terutama yang bergerak di industri pakaian, makanan, dan minuman. Namun, terlepas dari tingginya tingkat aktivitas bisnis, banyak pemilik UMKM yang tidak memiliki pemahaman yang cukup tentang manajemen bisnis dan strategi pemasaran untuk mendukung pertumbuhan bisnis mereka. Untuk mengatasi masalah ini, Tim PKM mengusulkan program sosialisasi untuk mengedukasi pemilik UMKM tentang manajemen bisnis dan strategi pemasaran. Program ini terdiri dari tiga tahap: sesi berbagi, curah pendapat/studi kasus, dan inspeksi/diskusi. Para anggota Tim PKM memberikan metodologi terperinci untuk program ini, termasuk observasi, survei, sesi berbagi, dan evaluasi. Teknik atau metode yang diperkenalkan pada peserta adalah Fish Bone Diagram dan 5 whys. Berdasarkan kegiatan yang telah dilaksanakan oleh Tim PkM terhadap pelaku usaha UMKM di Kota Batam disimpulkan bahwa pertama, pelaksanaan pelatihan manajemen usaha dan strategi pemasaran telah memenuhi luaran yang ditargetkan, yaitu terjadi peningkatan pemahaman mengenai manajemen usaha dan strategi pemasaran produk, hal ini berdasarkan hasil evalusi yang telah dilakukan pasca pelaksanaan pelatihan didapatkan bahwa 39% mengatakan sangat baik, 48% mengatakan baik, dan 13% cukup. Fish Bone Diagram, 5 Whys ABSTRACT The Community Service Program (PKM) focuses on the development of micro, small, and medium enterprises (MSMEs) in Indonesia, particularly in the city of Batam. According to data from the Ministry of Cooperatives and Small and Medium Enterprises, MSMEs in Indonesia have experienced sustained growth and development over the years, with an average annual growth rate of 2.7%. In Batam, there are 555 MSMEs, primarily engaged in the clothing, food, and beverage industries. However, despite the high level of business activity, many MSME owners lack sufficient understanding of business management and marketing strategies to support their business growth. To address this issue, the PKM Team proposes a socialization program to educate MSME owners about business management and marketing strategies. This program consists of three stages: sharing sessions, opinion sharing/case studies, and inspections/discussions. The PKM Team provides detailed methodologies for this program, including observation, surveys, sharing sessions, and evaluations. The techniques or methods introduced to the participants include Fish Bone Diagram and 5 Whys. Based on the activities carried out by the PKM Team towards MSME entrepreneurs in Batam City, it can be concluded that firstly, the implementation of business management and marketing strategy training has achieved the targeted outcomes. There has been an improvement in understanding business management and marketing strategies for products, as evidenced by the post-training evaluation results. It was found that 39% rated it as very good, 48% rated it as good, and 13% rated it as satisfactory. Keywords: MSME, Business Management, Fish Bone Diagram, 5 Whys
