Abstract

Desa Sukabanjar, Kabupaten Pesawaran Lampung merupakan daerah yang memiliki banyak peternakan yang potensinya masih belum berkembang. Mulia Farm termasuk salah satu peternakan sapi dan kambing di Pesawaran yang memiliki sistem terintegrasi dan sudah menjual produk peternakan berupa susu pasteurisasi. Susu pasteurisasi memiliki karakter mudah rusak dan umur simpan pendek. Selain itu konsumsinya juga masih rendah di masyarakat. Oleh karena itu, diperlukan pengembangan atau diversifikasi produk susu sapi agar umur simpan susu menjadi lebih panjang dan olahannya lebih beragam serta bernilai ekonomi lebih tinggi, misalnya mengolah menjadi yoghurt dan es yoghurt. Pengembangan produk olahan susu ini dilakukan melalui pelatihan, demonstrasi proses produksi olahan susu sapi, dan pendampingan masyarakat dalam teknik pemasaran yang dapat menghasilkan keuntungan. Hasil dari pelatihan pengembangan produk olahan susu sapi berupa respon masyarakat yang antusias dan merasakan manfaat serta peluang ekonomi dari pelatihan yang sudah diberikan.

Abstract

Desa Fajar Mataram, Kabupaten Lampung Selatan, memiliki potensi yang besar dalam pertanian, terutama padi. Olahan padi digunakan secara luas sebagai bahan makanan pokok. Di lain sisi, Diabetes merupakan tantangan besar dalam dunia kesehatan dan menjadi salah satu penyakit dengan prevalensi tertinggi di Kabupaten Lampung Selatan. Penggunaan olahan padi sebagai bahan makanan pokok telah banyak dilaporkan terkait dengan peningkatan resiko Diabetes. Edukasi pengolahan produk padi menjadi bahan makanan ramah diabetes sangat diperlukan. Pengabdian kepada masyarakat di Desa Fajar Mataram terbagi menjadi 2 sesi, yaitu sesi edukasi Diabetes dan sesi cara pembuatan pati ramah diabetes dari produk olahan padi, yaitu tepung beras dan nasi. Cara pembuatan yang diajarkan sesuai dengan literatur yang telah ada dan eksperimen pendahuluan di Laboratorium. Hasil dari pengabdian kepada masyarakat ini adalah peningkatan pemahaman masyarakat terhadap penyakit Diabetes dan cara pembuatan pati resisten dari olahan padi. Masyarakat antusias dan mendapatkan manfaat dari pelatihan ini. Kata Kunci: Pati Resisten, Diabetes, Tepung Beras, Nasi.

Abstract

The use of prohibited food additives in the community is a concern due to insufficient education and supervision. Some of them are formalin and salicylic acid in salted fish which is used to extend shelf life. The prohibition on them is due to their damage effects on health. The market in Bandar Lampung is one of the routine selling places for salted fish where it is necessary to study the use of formalin and salicylic acid. The analysis was carried out by random sampling using 5 different salted fish from 5 different markets in Bandar Lampung including Rajabasa, Way Halim, Way Kandis, Korpri, and Gintung market. The analytical method was carried out based on the formation of a redox reaction with KMnO4 for formalin and a complexation reaction of salicylic acid with FeCl3. The results of the analysis showed that one of the WK code samples contained formalin and one of the WH code samples contained salicylic acid. These results indicate that the use of prohibited food additives is still being used by salted fish producers in Bandar Lampung. Supervision and education from various parties, especially in the field of regulation, are very urgent to do.

Abstract

Background: Alpha (α)-amylase is a popular pharmacological target for controlling postprandial blood glucose levels. The exploration of natural ingredients for drug development is particularly promising. Notably, pomegranate (Punica granatum) and celery (Apium graveolens) are rich in phenols and flavonoids, making them potential candidates for anti-type 2 diabetes treatments. Objective: This study aims to identify the most promising derivatives from pomegranate and celery using a combined metabolomic and in silico approach. Methods: The study began by identifying metabolites from the KnapSack database, selecting based on primary and secondary metabolites also selecting them based on their pharmacokinetic profile. The selected metabolites were then docked with alpha-amylase (PDB ID: 2QV4). Furthermore, the interactions were analyzed using Discovery Studio, and toxicity profiles were assessed in silico using ECOSAR and Toxtree software. Results: The analysis identified punicaflavone and 2-deoxybrassinolide as the compounds with the highest binding affinity, at -10.06 kcal/mol and -10.89 kcal/mol respectively, both surpassing acarbose’s -9.33 kcal/mol. These compounds interacted with 11 common residues in alpha-amylase, mirroring acarbose’s interactions. In silico toxicity analysis revealed that punicaflavone might pose risks to aquatic organisms but does not exhibit potential as a genotoxic or non-genotoxic carcinogen. Conversely, 2-deoxybrassinolide displayed moderate toxicity to aquatic organisms but was also free from genotoxic and non-genotoxic carcinogenic potential. Conclusion: Punicaflavone and 2-deoxybrassinolide emerged as the most promising compounds, demonstrating strong binding affinities and similar interaction patterns with α-amylase as acarbose. Although both compounds may pose risks to aquatic environments, they do not show potential as genotoxic or non-genotoxic carcinogens, supporting their further exploration as anti-diabetic agents.

Abstract

The determination of protein content in food commonly uses the Kjeldahl method. This method assumes the presence of total nitrogen. The Kjeldahl method is considered not only to measure the nitrogen content of proteins. Therefore, in this study, the Biuret method was used. However, this method can only be used on samples in the form of solutions. Thus, an appropriate sample preparation method is required to obtain the final sample preparation product in the form of a solution. This study aimed to determine the effect of sample preparation methods on measured protein content and to give recommended sample preparation methods. The principle of the Biuret method in determining protein content based on Cu2+ complex formation with peptide bonds obtained the maximum wavelength of 548 nm. In this study, four preparation methods were used. The first method is based on protein precipitation using trichloro acetic acid 10%; the second method principle is precipitation by ammonium sulfate and acetate buffer; the third method uses 10% NaOH to dissolve the protein, then precipitated using H2SO4 10%; the principle of the fourth method is to dissolve the protein with 1 M NaOH and heating to reduce protein particles. The specified testing parameters are protein content, cost, and simplicity. The protein content in each method was obtained respectively: 12,5% (±0,012), 6,0% (±0,006), 10,2% (±0,001), and 16,1% (±0,216). In conclusion, sample preparation methods affect protein content. The fourth method is the best for giving protein content that complies with SNI. Other than that, the fourth method is cheaper, more straightforward, and more simple compared to the other three preparation methods.

Abstract

Way Tuba sub-district, Way Kanan is one of the areas where the majority of people work as farmers. This profession is very vulnerable to direct sunlight exposure which has a negative impact on human health, especially the skin and eyes. The worst danger due to UV exposure that most often occurs is Non-Melanoma Skin Cancer (NMSC). Awareness of these dangers is still not fully understood by the community, so a program is needed that can increase understanding of the risks of direct sun exposure and skin health. Lecturers of the Cosmetic engineering, ITERA organized a program to increase skin health awareness through several activities such as counseling for PKK groups, training in making simple skin care from natural ingredients around the house and initiating the planting of a family cosmetic garden in the yard. Utilization of natural ingredients around the house can overcome skin damage at a low cost. In addition, with the cultivation of plants that maintain skin health in the home yard, it can be used at any time as prevention not just as treatment. Therefore, it is necessary to understand the types and ways of using natural ingredients around the house for the community, especially the PKK Group as a driving cadre in each village. Based on the results of the questionnaire, this community service program can increase community understanding up to 90% of representatives from 13 PKK groups in each village in Way Tuba District. Some plants were also cultivated directly through the initiation of a family cosmetic garden in one of the residents' yards. This is expected to be a trigger for other PKK groups in utilizing yard land in caring for skin health.

Abstract

Every year, 1.5 billion people suffer from hypertension and 9.4 million people die from hypertension and complications. so that the development of hypertension drugs with natural compounds. The aim of this research is to analyze the activity of alkaloid compounds in the pule pandak plant (Rauvolfia serpentina L.) as an antihypertensive agent using an in silico approach through a molecular docking procedure. The four alkaloid compounds explored, namely ajmalina, rescinnamine, reserpine, and serpentina, were assessed against the target protein 1UZF. The low binding energy value indicates that ajmalina has a strong affinity for the target protein, so it has the potential to be an effective antihypertensive agent. The docking results show the lowest binding energy in ajmalina, with a value of -5.89 kcal/mol, indicating greater potential compared to other compounds. Reserpine showed the most residue interactions with 11 residue interactions and 2 hydrogen bonds, indicating significant bond strength. This research contributes to understanding the potential of alkaloid compounds from the pule pandak plant as an antihypertensive agent through a computational molecular docking approach

Abstract

Cervical cancer being one of the most common types of cancer suffered by women, this study is aimed at providing important information about the potential tethering of acetogenin and prosianidin molecules of soursop seed extract as anti-cervical cancer agents. Choose the acetogenin and prosianidin compounds that have the most potential for drug development. Designing new bioactive compounds with higher affinity and selectivity against biological targets of cervical cancer. The methods used are with the Discovery Studio 2024 Client program, Autodock Tools 1.5.6, Avogadro, pkCSM, PubChem, Notepad, and Molview. Based on research data, the interaction between amino acid residues and natural ligands from 5UU1 receptors shows the presence of 2 hydrogen bonds. Meanwhile, the interaction of acetogenin and procyanin with 5UU1 receptors indicates the presence of 3 hydrogen bonds. It can be concluded that the binding energy of prociyanidin with 5UU1 receptor is -2.99 kcal/mol with an inhibitory constant of 6.38 nM. Acetogenin has the lowest binding energy value against 5UU1 receptors, which is -7.33 kcal/mol, with an inhibitory constant of 4.21 nM. The natural ligand binding energy value of the 5UU1 receptor is -8.84 kcal/mol with an inhibitory constant of 331.88 nM.

Abstract

This study explores the potential of Stevia rebaudiana Bertoni-derived compounds as anti-diabetic agents by targeting the peroxisome proliferator-activated receptor gamma (PPAR-γ), a key regulator of glucose metabolism. Utilizing in silico molecular docking, we evaluated the binding affinities of four stevia-derived compounds (dulcoside A, steviol, isosteviol, steviolmonoside) and compared them to the native ligand (J35) and the well-known PPAR-γ agonist, rosiglitazone. Isosteviol exhibited the strongest binding affinity to PPAR-γ, with a binding energy of -8.89 kcal/mol, surpassing that of rosiglitazone (-8.26 kcal/mol) and closely following the native ligand (-9.01 kcal/mol). The interactions between isosteviol and PPAR-γ included multiple hydrogen bonds and hydrophobic interactions. These findings indicate that isosteviol, along with other stevia-derived compounds, has a potential as a natural anti-diabetic agent.

Abstract

South Lampung Regency is the second largest cocoa bean producer in Lampung Province. This natural resource is very abundant, one of which is in Tarahan Village, South Lampung, but until now it has not been optimally processed and is only sold in the form of dry brown beans which have low selling value. This is because the villagers does not know how to process cocoa beans into cocoa products. Therefore, this service program aims to assist the target community in processing cocoa beans into ready-to-sell products (jam and mask) to improve people welfare. This activity consisted of providing material and training in making jam and chocolate masks for 1 day. After the training, the villagers were able to understand and practice making the chocolate jam and mask. This program is expected to increase chocholate selling value as local regional commodities.
