Abstract

Sedentary activity is an activity that requires very low energy expenditure, such as sitting or lying down while watching television, playing electronic games, and reading that can cause negative effects on health. One of the negative impactis increasing risk for obesity. The purpose of this study was to describe the nutrition adequacy level and sedentary activity among overweight and normal adolescent. This research was descriptive study with cross-sectional design. Thesample was 70 students of SMPN 3 Gresik which divided into two groups based on their nutritional status, overweight or normal with 35 samples in each group. Data of nutrient intake, sedentary activity, and measurements of height and weight obtained from questionnaires and direct interview with respondents. Research showed that majority of overweight adolescent, had an energy and carbohydrate adequacy levels more than 77% of RDA compared to normaladolescent. Overweight and normal adolescents have a similar protein and fat adequacy level. Overweight adolescents had greater sedentary activity level the normal one. Majority of overweight adolescent have higher adequacy levelof energy, carbohydrate, and sedentary activity than normal adolescent. Reducing consumption of sweet, fatty foods, increase consumption of fruits and vegetables, also increase regular physical activity need to be done by the respondent

Abstract

Chicken, soy tempeh, and Isolated Soy Protein (ISP) can be processed into sausages that can be alternative for highprotein snack. Red Yeast Rice is a natural food colorant added to that the sausage to make more interest. This research was aimed to determine the substitution effect of tempeh and addition of Isolated Soy Protein (ISP) to the organoleptic quality, protein value of chicken sausages. The type of research was pure experimental with completely randomized design. There was 3 types of formula, 1 control formula F0 (chicken) and 2 formula modifi cations F1 (50 g chicken, 50g tempeh, 15 g ISP, and 3 g of red yeast rice), F2 (100 g tempeh, 25 g ISP, 5 g red yeast rice ) with three replications. The organoleptic quality was determined by 35 untrained panelists. The results of organoleptic tests showed that F2 (color, taste, texture) was most preferred formulations. The highest protein content per 100 g sausage was F2 (17.4 g) compared with F0 (14.6 g). There were signifi cant differences between F0 to F1, F2 on fl avors (p = 0.000) and color (p = 0.000). The best formula rated by the composition, organoleptic test, and the protein content was F2.

Abstract

The are many causes of nutritional problems, including lack of food intake, illness, caring pattern and many other causes, one of the problems that often happen is the children had not weighed regularly. Iodine is one of the nutrients associated with the growth of children. On the other hand, children who are suffering from malnutrition usually also hasVitamin A defi ciency as a result of their lack of nutrient intake. The purpose of this study was to analyze the relationship between the frequency of weighting, the use of iodized salt, and Vitamin A supplementation with underweight among children under fi ve in East Java Province. This study was secondary data analysis from Monitoring of Nutritional Status (MNS) in East Java, 2016. The sample of this study were 10.440 households with children under fi ve. 18.5% children under fi ve in East Java were underweight, 2% overweight, and 79.5% were normal. Distribution of frequency were performed as univariate statistical analysis and the relationship between variables were analyzed by chi-square test. The odd ratio were analyze by logistic regression. There was signifi cant correlation between blue-colored vitamin A supplementation (p < 0.001;OR = 0.638;95%CI:0.580-0.78w2) with underweight. However, there was no correlationbetween weighing frequency (p = 0,729) and the use of iodized salt (p = 0,620) with underweight. The conclusion of this study highlight that there was correlation between Vitamin A supplementation with underweight in East Java.

Abstract

HACCP is one of the food safety systems which is done by analyzing materials, processes, and food products. HACCP  analysis can be used as an effort to control the quality of the fi nal product in order to meet the requirements of healthy, safe and halal food products. PT X is a catering company for aircraft service users (infl ight catering). This company has implemented HACCP in every food production. This is a descriptive research by observing the process of rendang meat production. The application of HACCP in PT. X is done by controlling temperature and time during production process to prevent microbes growth. From ten application of HACCP according to SNI No. 01-4852-1998 about HACCP there is a point that has not been accordance with SNI monitoring. Monitoring activities are not routinely performed on blast chilling and dishing process. Pieces of coconut milk’s pack fall in to the pan when cooking process because the cutting of coconut milk pack is done on the cooking pan. Other HACCP principles like HACCP team determination, product description, fl ow chart reaction, hazard identifi cation, critical point determination, critical boundary determination of each CCP, corrective action, microbiological verifi cation, and documentation are well implemented.

Abstract

Water is an essential nutrient needed by the body. Dehydration is a condition when body loses more water than it takes. The content of water in human body depend on the proportion of muscle tissue and fat tissue. This cross sectional study was to analyze relation between fl uid intake, and nutrition status with hydration status of worker in division of general engineering at PT PAL INDONESIA. Subjects were all workers in all division general engineering at PT PAL INDONESIA. Data were collected by questionnaire which consist of 2 × 24 hours food recall, anthropometry measurement and urine collection. Spearman correlation test was applied to analyze the data. The result showed that most of the workers were ≤ 40 years old (58,8%) and all workers are male. Most of the workers had total fl uid intake less than 3700 L per day (85,3%) with average 2797,3 ± 673,30 L per day, nutritional status were obese (67,6%) and medium dehydrated (41.2%). The result of statistic test showed a strong positive relationship between fluid intake and hydration status. Meanwhile there was a weak negative relationship between nutritional status and hydration status. It can be concluded that fl uid intake more contribute to hydration status than nutrition status in general engineering division workers.

Abstract

Vegetarian is one of dietary pattern that is believed to prevent degenerative diseases, but vegetarian apparently can  lower calcium absorption due to the high intake of oxalic and phytate acid that can reduce bone density. Physical activity can also affect the bone density. Intense physical activity will make bone density stronger. The purpose ofthis study was to analyze the correlation between consumption of calcium food sources and physical activity with bone density of lacto ovo vegetarian at Buddha Tzu Chi Surabaya Foundation. This research was an observational analytic, using cross sectional study design. The sample were 31 adult, taken through the inclusion criteria of alacto ovo vegetarian, a vegetarian diet ≥ 1 year, age ≥ 20 years old. Data collection through measurement of Bone Mineral Density (BMD) using bone densitometry Quantitative Ultrasound (QUS) method, interview of respondent characteristics, consumption of calcium food sources by Semi Quantitative Food Frequency Questionnaire (SQ-FFQ), and physical activity by International Physical Activity Questionnaire (IPAQ). The data was analyzed using Pearson Test. The results showed that there was a correlation between consumption of calcium food sources (p = 0.000) and physical activity (p = 0.022) with bone density of lacto ovo vegetarian. The higher consumption of calcium food sources and physical activity can increase bone density. Respondents should increase physical activity and doing routine exercise to make bone density stronger, and consume high calcium of foods such as broccoli, pokcoy, orange, and cow’s milk.
