Abstract

Frying is one of fast and practical mean of cookingprocess of food using fat or oil media. The aims of theresearch were to find out, to test and to apply the model of oilabsorption in potatoes during frying. Frying temperatureswere adjusted at 140oC, 160oC and 180oC, with interval timeof analysis at 0, 30, 90, 150, 300, dan 600 seconds. Freshpotatoes were cut in cylinder shaped with diameter of 0.9 cmand 4 cm long. The result showed that the higher fryingtemperature, the higher absorption of fat during frying. Therate of fat absorption could be analogically expressed as theNewton model for cooling, to predict the absorption of fatduring frying of fresh potatoes in other temperature.

Abstract

Target of this research was to obtain solvent type, toobtain ability on antiradical, and to find out optimumconcentration of extract powder of fennel seed. This researchconsisted of two phases that the first phase wasdetermination of total phenol and antioxidant activity usingTBA method at various solvent type. Solvent used forextraction was ethanol and acetate ethyl. The concentrationsof the solvent were 0, 15, 30, 45, 60, 75 and 90%.Antioxidant activity resulted from each variation of type andconcentration of solvent was used for the examination in thesecond phase in determining antiradical activity by DPPH.Variation of concentration of fennel extract was 100, 250,500, 750 and 1000 ?g/ml yielded from type of ethano l andacetate acid solvents.Obtained data of each treatment was plotted in a graph.Data validity was analized using appropriate regressionanalysis on plotted data in graph. Result of research indicatedthat antioxidant active compound extracted using acetateethyl solvent was higher than that using ethanol solvent.Optimum concentration of extract of fennel powder fromethanol and acetate ethyl solvent in scavenging free radicalwas 975 ppm and 850 ppm.

Abstract

The research purpose were to find out the part of plantextract and an extract concentration of Narrow-leaf peacockginger as repellant agent to Aedes aegypti mosquito.The research method used the completed randomizeddesign with two factors in factorial experimental. The bothfactors were 1) the plant part to enclose a stalk-root andtuber; 2) an extract concentration with 5 levels to enclose 0,5, 10, 15, 20% so that there were 10 combination treatmentsthat to be replicated 5 times.The results of the research showed that the tuber andstalk-root extracts of Narrow-leaf peacock ginger had anatural repellant constituent. Narrow-leaf peacock gingertuber extract in 15 and 20% concentration had the highest ofrepellant capacity or to kill mosquito. The longer applicationof the extract decreased the repellant capacity, especially thatto be extracted of the stalk-root and tuber in consentrationapplication of 5 and 10%.

Abstract

The aim of research is to determine the composition offlavour extracts of salam leaf obtained from steamdistillation method using n-hexane and no n-hexane. Freshsalam leaves were cut and extracted using steam distillationmethods and the flavour extract was drying by addingMgSO4 anhydrate. The flavour extracts were analyzed byemploying gas chromatography-mass spectrometry (GCMS).The research results indicated as the following: 1) theflavour extracts obtained by steam distillation without nhexane,contained 27 compounds. The main compoundswere cis-4-decenal (27.12%), octanal (11.98%), ?-pinene(9.09%), farnesol (8.84%), ß-ocimene (7.62%) and nonanal(7.60%), 2) the flavour extracts yielded from steamdistillation using n-hexane, contained 26 compounds. Themain compounds are cis-4-decenal (18.74%), octanal(6.97%), ?-pinene (9.09%), farnesol (16.95%), nerolidol(4.09%) and decanal (3.14%).

Abstract

The aim of this research was to find out cyanide acidcontent of some local varieties of bamboo shoot, and to studythe effect of cooking methods on the lowering of the cyanideacid content. The study was done on four local varieties ofbamboo shoot, i.e.: buluh, tabah, tali, and ampel, whereasthe methods of cooking studied were boiling, steaming,boiling with immersing in water previously, and steamingwith immersing in water previously. The results showed thatthe cyanide content of bamboo shoot of ampel, tabah, tali,and buluh variety were 35.76, 22.70, 21.52, and 20.25mg/100g, respectively. Cooking process both boiling andsteaming could reduce cyanide content of the bamboo shoots.Immersing in water for 12 hours before boiling or steamingcould also reduce the cyanide acid content.

Abstract

This research was aimed to optimize the production ofvolatile oil and oleoresin of red ginger crops by optimizingthe usage of compost as fertilizer. Compost was applied as anorganic fertilizer to red ginger crops in poly-bag withfertilization doses 0, 0.2, 0.4, 0.6, 0.8, and 1 kg for one kgcrops planting and red ginger was harvested at 8 and 9months after planting.Red ginger contained volatile oil of 3.8-3.97% DM, totalphenol of 5.7 - 6.4% DM, and ability to catch free radical ofDPPH compound of phenol of 2.5 - 2.6% DM. The quality ofthe red ginger was measured at the age of between 8 and 9months. Depended upon its volatile oil content, ability tocatch free radical DPPH compound of phenol, and its contenton phenol, hence harvest time of ginger could be minimizedto 8 months.

Abstract

MA storage combined with cold storage has been wellknown for its advantages in storing fresh produces. So, inthis research an attempt was carried out to determine the MAof fresh Pondoh snake fruit. Two levels of low O2 concentrationswhich combined with four levels of high CO2 wereapplied to find out the proper MA storage for the fresh fruitat temperature of 10 and 15oC. A storage of the fruit atnormal atmosphere was also made as a control. Qualitymeasurements were done on hardness and colour of the fruitpulp.Experiments showed that only four O2 – CO2 combinationsthat gave better fruit responses, when the fruit wasstored for 18 days at 10 and 15oC. So, it was suggested thatthe MA storage of fresh Pondoh snake fruit was at 4 ± 2% O2with 14 ± 4 CO2 for 18 days storage at 10 and 15°C.
