Abstract

Aim of the research was to find out the viability ofPediococcus acidilactici U318 in inoculum powder duringstorage. The filler material used in the production ofinoculum powder was three kinds of flour, namely maizena,rice flour and tapioca. The research was done in laboratoryscale as experiment research which was designed byrandomized block design with factorial experiment. Twofactors were experimented, namely the kinds of flour as afiller material as the first factor and the storage period as thesecond factor.Result of the research showed that the treatment of flouras a filler material did not influence the viability of P.acidilactici U318 in inoculum powder. Any filler materialused in production of the powder gave same protective actionon its viability. The viability of P. acidilactici U318decreased during storage period. After storage of 4 weeks theaverage of viable P. acidilactici U318 was about 2,54x1010cfu/g which decreased one log cycle from the initial ofstorage.

Abstract

The aims of the research were to find out the content of nutrition, and to detect the borax and formalin on beef meat balls (bakso sapi) sold in Denpasar. Samples taken from five brands of bakso sold in 8 supermarkets. Analysis was undertaken for the content of ash, fat, water and protein, and also a qualitative analysis to detect borax and formalin. The results showed that many samples did not fulfill the standards (SNI) particularly on fat and water content. None of the samples contained borax, but samples from two brands contained of formalin.

Abstract

As this far Indonesia which well-known as agrarian country is still undertaking massive import of rice considering the undeniable disaster; therefore, the farmer exchanging value in Indonesia is experiencing a sharp decrease where many farmers gain financial loss. The aim to optimize is to determine the grained-rice price (win-win solution) in which it is the fair solution for both sides by eliminating the price difference that occurs form not linier programme optimizing method by Fibonacci technique. The agreement of grained-rice price on December 2001 (s=1%) is Rp 1540,00/kg ; (s=5%) is Rp 1490,00/kg and on (s=10%) is Rp 1420,00/kg. on January 2002 (s=1%) is Rp 1610,00/kg ; (s=5%) is Rp 1550,00/kg and on (s=10%) is Rp 1480,00/kg; on March 2002 (s=1%) is Rp 1900,00/kg; (s=5%) is Rp 1850,00/kg and on (s=10%) is Rp 1770,00/kg.

Abstract

Tujuan penelitian ini adalah untuk mengetahui pengaruh kolin defisiensi terhadapaktivitas enzim antiokasidant pada hati. Penelitian ini menggunakan tikus putih jenisWistar sebagai hewan percobaan yang diberikan pakan mengandung kolin 2,5 g cholinebitartrate /kg diet (CS) dan tanpa kolin (CD).Hasil penelitian menunjukkan bahwa total lipid, triacylglicerol, colesterol, danpospolipid pada hati meningkat dengan nyata pada CD. Kolin defisiensi (CD)menyebabkan menurunnya kandungan triacylglicerol, colesterol, pospolipid danmeningkatnya aktivitas enzim ornithine carbamoyltransferase pada serum. Aktivitasenzim superoxide dismutase, katalase, glutathione peroxidase dan kandungan ?-tocoperolpada hati menurun dengan nyata pada kolin defisiensi. Menurunnya aktivitas enzim dankandungan non-enzim antioksidan merupakan respon dari meningkatnya superoxideanion pada hati yang disebabkan oleh meningkatnya kandungan lemak hati. Disampingitu, meningkatnya aktivitas enzim ornithine carbamoyltransferase disebabkan karenameningkatnya kandungan triacylglicerol pada hati yang menandakan bahwa terjadikerusakan hati karena kekurangan kolin.

Abstract

The objective of this research was to determine the shelf life of the traditional snack food “rengginang” using the Labuza Model (the accelerated storage studies method (ASS Method)), as well as comparing the results with the extended storage studies (ESS) method. The rengginang was packed with the polyethelene plastic 0.03 mm, and store at room temperature with 75% of RH. The shelf life was determine using the accelerated storage studies method with Labuza Model, and extended storage studies method. The parameters observe in determination of shelf life were initial moisture content, critical moisture content, equilibrium moisture content, slope of sorption isotherm curve, moisture permeability of plastic used, ratio of plastic package are and product weight, and saturated pressure of storage condition. The result showed that the shelf life of rengginang calculated using Labuza Model (ASS Method) was 39 days, while the ESS method resulted 46 days. These was indicating that the Labuza model can be used to predicting the shelf life of rengginang like snack food.

Abstract

Frying is one of fast and practical mean of cookingprocess of food using fat or oil media. The aims of theresearch were to find out, to test and to apply the model of oilabsorption in potatoes during frying. Frying temperatureswere adjusted at 140oC, 160oC and 180oC, with interval timeof analysis at 0, 30, 90, 150, 300, dan 600 seconds. Freshpotatoes were cut in cylinder shaped with diameter of 0.9 cmand 4 cm long. The result showed that the higher fryingtemperature, the higher absorption of fat during frying. Therate of fat absorption could be analogically expressed as theNewton model for cooling, to predict the absorption of fatduring frying of fresh potatoes in other temperature.

Abstract

This  research  objective  was  to  know the  level  polutan  of NH3and  H2S  from  aerobic  composting  process.  Modified  Briski method  was  use  to  identification NH3 and   H2S.  Pada  metode Briski  et al. (2003)  tidak  ada  pengukuran  gas  NH3 and  H2S. Both  polutan  were  colect  at  solvent  BaCL2 and  H2SO4 0.1  N along  one  week,  than  the  level  of    concentration  at  air  were identificated by chromatography method. The level concentration of NH3 at the air was 0.092 ppm to 0.25 ppm, and the level polutan of H2S to the air  was 0.3 ppm to 1.1 ppm. Both polutan were below from standard of SNI.

Abstract

The objectives of this research were to determine effectof rosella preparation and cooking time on antioxidantactivity of rosella syrup. Three repetition of CompletelyBlock Design with two factors of factorial experiment wasused in this research. The first factor was two levels ofrosella preparation namely fresh and dried rosella, and thesecond factor was three levels of cooking time 10, 20, and 30minutes. Testing comprised measurement on the ability oncapturing DPPH free radical, scoring and hedonic tests.The research results indicated that using fresh rosellaimproved the antioxidant activity of rosella syrup and itsvalue was 0.026%, while rosella syrup from dried rosella was0.020%. Until cooking time of 20 minutes, antioxidantactivity of rosella syrup still increased, but longer cookingtime than 20 minutes showed no significant effect.Preparation and cooking time affected significantly on colourof syrup, but not on aroma, taste and the overall acceptance.

Abstract

The aim of this research is to study the effect of vibration in human display interface on operator subjective complaint at PT ?EJ? in South Denpasar. Methods used in this research are observations and measurements on the operators and environmental conditions. Variables involved in this research are namely: the operators? age, weight and height, dry and wet bulb temperatures, humidity and noise level. The results showed that the average age, weight and height of the operators were 26,71 (? 7,13) years, 58 ,4 ( ? 1,1) kg, and 164, 14 (?3,43) cms respectively. The wet and dry bulb temperature were 26?C and 30?C. The humidity was 86 % and the noise level was > 80 dB. The operator complaints were: severe low backpain, pressure on breathing, feeling thirsty, tremor, feeling unhealthy and feeling stiff at the eyelid. The effect of vibration on human display interface depended on the operator position at work. The operators who were sit while working, vibration occurred at the axis of the seat. But, the workers who were standing while working, vibration occurred at 8-10 Hz resonance.
