Abstract

Abstract.North Sumatera is the central production of purple passion fruit in Indonesia. Passion fruit was processing into beverage product that produced passion fruit peel waste. The passion fruit peel has potential effect as a sources of medicine which is need to be examined such as its antibacterial effect. The purpose of this study was to determine the characterization of simplicia, phytochemical screening and antibacterial activity of ethanol extract of purple passion fruit peel against Staphylococcus aureus and Escherichia coli. The simplicia powder was examined its characteristic include water content, water soluble extract, ethanol soluble extract, total ash and acid insoluble ash assay. The extraction was process by percolation method using ethanol 96% , then tested antibacterial activity against Staphylococcus aureus and Escherichia coli using agar diffusion method with paper discs.The result showed that the simplicia characteristic of passion fruit peel were water content of 8.64%, water soluble extract of 31.69%, ethanol soluble extract of 13.02%, ash total of 7.89%, and insoluble ash in acid of 0.816%. The phytochemical screening simplicia and ethanol extract showed the presence of flavonoid, glycoside, saponin, tannin and steroid/triterpenoid.The antibacterial activity test showed that the ethanol extract has an effective inhibition at the concentration of 300 mg/ml against Staphylococcus aureus and Escherichia coli, it showed dose dependent manner. Abstract

Yellow cooked rice is a traditional food in some regions in Indonesia. Yellow cooked rice with the addition of turmeric and flavoring which can longer shelf life of savings because it has antibacterial activity and flavor. The purpose of this study was to determine the effect of turmeric extract (Curcuma domestica Val) to extend shelf life of yellow cooked rice. The samples used were made of yellow cooked rice with handmade and without any seasoning flavored with turmeric extract concentration of 1.8% and 2.4%. Organoleptic testing were conducted every 3 hours, test of microbial growth daily and inhibition of turmeric extract with a concentration of 1.8% and 2.4% of fungi isolated from yellow cooked rice with a total plate count method. Research showed that turmeric extract concentration and the addition of herbs affect the longer shelf life of yellow cooked rice store. High more and more concentration of the turmeric extract can made longer the shelf life of yellow cooked rice either through organoleptic and also total plate count. Yellow cooked rice without seasoning with turmeric extract concentration of 1.8% and 2.4% were 30 and 33 hours respectively, while the yellow cooked rice was flavored with the same concentration of turmeric extract were 36 and 39 hours respectively.

Abstract

One of the medicinal plants is the areca nut (Areca catechu L.) from the Arecae family which has the potential as an anticancer having antioxidant and antimutagenic, astringent, and anthelmintic effects. Areca nut seeds contain alkaloids, such as arekoline, arekolidine, arekain, guvakolin, guvasine and isoguvasine. This study aims to determine the characteristics of the betel nut (Areca catechu L.) simplicia, class of compounds, and the antibacterial activity of the ethanol extract of areca nut (Areca catechu L.) against the growth of Escherichia coli, Shigella dysentriae, and Salmonella typhi bacteria. The method used is the ethanol extract of areca nut (Areca catechu L.) obtained from the maceration process with 96% ethanol. The results of phytochemical screening showed that the ethanolic extract of areca nut (Areca catechu L.) contains a group of alkaloid compounds, tannins, flavonoids, saponins, and triterpenoids. The effect of giving young betel nut ethanol extract to Escherichia coli, Shigella dysentriae, and Salmonella typhi bacteria was indicated by the formation of an inhibition zone of optimum concentration. The ethanol extract of old betel nut against Escherichia coli, Shigella dysentriae, and Salmonella typhi bacteria was characterized by the formation of an optimum concentration inhibition zone. Based on the results, it can be concluded that the ethanol extract of areca nut (Areca catechu L.) has antibacterial activity against Escherichia coli, Shigella dysentriae, and Salmonella typhi.

Abstract

Diabetes is a non-communicable degenerative disease that will increase in number in the future. This is evidenced by the increasing incidence of diabetes every decade. Bitter gourd and aloe vera are an alternative in treating Diabetes Mellitus because these plants contain saponins, flavonoids, and polyphenols (strong antioxidants), as well as glycosides cucurbitacin, momordicin, and charantin that can lower blood sugar, saponins, flavonoids, and alkaloids. This study aims to determine secondary metabolite compounds, anti-diabetic activity, and the combination of aloe vera extract and bitter melon extract that has antidiabetic activity. The method used in this study is an experimental method, namely testing the antidiabetic effect of extracts obtained from ethanol of bitter melon and aloe vera leaves on alloxan-induced mice. The results obtained from the research are that the administration of aloe vera extract 150 mg/kg BW and 200 mg/Kg BW, the group with the ethanol extract of bitter melon 150 mg/kg BW and 200 mg/Kg BW showed a very good effect on reducing BGD. This means that aloe vera extract 150 mg/kg BW and 200 mg/Kg BW, the group given ethanol extract of bitter melon 150 mg/kg BW and 200 mg/Kg BW had good antidiabetic activity.

Abstract

Breast milk (ASI) is the best food for babies. Breast milk has advantages compared to other milk, including guaranteed cleanliness, the composition of breast milk is also very suitable for digestion, growth, and development of babies, one of the compositions contained in breast milk is protein. Currently, many mothers cannot breastfeed their own babies, so they choose infant formula as a substitute for breast milk. The purpose of this study was to determine differences in protein levels in infant formula and breast milk. Determination of protein content was carried out using the Kjeldahl method which is a simple method for determining total nitrogen in protein and other nitrogen-containing compounds. The Kjeldahl method is carried out through 3 processes, namely: the destruction process, the distillation process, and the titration process according to the procedures and tools used in the Chemistry Laboratory of the Sari Mutiara Indonesia University. The results of the determination of protein levels using the Kjeldahl method contained a protein with average levels in infant formula brand A (10.10 -+ 0.96) %, infant formula brand B (10.95 -+ 2.43) %, infant formula brand C (11.0666 -+ 1.6932) %, and breast milk (20.5733 -+ 3.1828) %.

Abstract

Fish containing mercury will have a bad impact on the health of the human body. The maximum limit of mercury levels in fish that has been determined by SNI (2009) on fish is 0.5 mg/kg. This study aims to determine the presence or absence of mercury (Hg) metal contamination in several types of freshwater fish, namely catfish (Clariasgariepinus), catfish (Pangsiushypophthalmus), tilapia (Oreochromis mossambicus), tilapia (Oreochromis niloticus), pomfret (Colossomamacropomum) and giant prawn (Macrobrachiumrosenbergii), by Atomic Absorption Spectrophotometry (AAS). Quantitative analysis of mercury used atomic absorption spectrophotometry (Shimadzu AA-6200). Measured at a wavelength of 253.7 nm. The results of this study were white pomfret containing mercury with levels of 0.2043 -+ 0.0079 mg/kg, catfish containing mercury with levels of 0.4116 -+ 0.1105 mg/kg, catfish containing mercury with levels of 0.4088 -+ 0.1076 mg/kg, tilapia fish contains mercury with levels of 0.4034 -+ 0.1443 mg/kg, tilapia fish contains mercury with levels of 0.4191 -+ 0.0750 mg/kg, and giant prawns contain mercury with levels of 0, 3928 -+ 0.0521 mg/kg. The calculation results show that all types of fresh water fish contain mercury <0.5 in accordance with the requirements set by SNI No.7387 (2009) on fish, namely 0.5 mg/kg.
