Abstract

This study aims to determine the effect of adding kepok banana skin juice (Musa Acuminate) on the softness and protein content of beef rendang after cooking. This type of study is experimental with a complete randomized controlled trial (RAL) consisting of 4 treatments 5 times. The treatment used is P0 (0% / 500g meat) as control, P1 (5% / 500g meat), P2 (10% / 500g meat), P3 (15% / 500g meat). The research parameters were the softness of meat and protein after cooking, the data were analyzed using Anova (Variant Analysis) and Duncan further test with 0.05 level. The results of the softness test showed that the addition of kepok banana skin juice (Musa Acuminate) had an effect on the softness with Fhitung greater than Ftabel (3.51> 3.24). the same results produced by protein test analysis results showing Fhitung is larger than Ftabel (34.07> 3.24). Followed by further tests Duncan at the level of 0.05 softness preference test showed that P0, P1, P2 treatment had no real effect, and at P3 treatment there was a significant effect. Further tests of Duncan protein after cooking show that each treatment is very different. It can be concluded that the addition of kepok banana skin juice has a real effect on the tenderness of softness and protein from beef rendang.

Abstract

The research begins June – July 2021 at the Laboratory of the Faculty of Animal Husbandry, Balitar Islamic University. This study used an experimental method using a completely randomized design (RAL) with a 2x5 factorial pattern with 5 replications. Factor A is room temperature and temperature <10°C, Factor B is storage for 0 days, 1 day, 3 days, 7 days and 14 days. The changes observed were the value of egg white index, egg yolk index and haugt unit. The results showed that temperature and storage had a significant effect (P<0.05) on the egg white index, the interaction between temperature and storage time had no significant effect (P>0.05) on the egg white index. temperature and storage time had a significant effect on the yolk index and haugt unit index values. The interaction between temperature and storage time had a significant effect (P<0.05) on the index value of egg yolk and egg white. The effect can be seen from the decrease in the value of the egg yolk index, egg white index and haugt unit. The conclusion of this study is that eggs stored at room temperature are not stored for more than 3 days because on the 7th day there is a significant decrease in value, while those stored at temperatures <10°C can maintain egg quality in the good category until a shelf life of 14 days.

Abstract

This study aims to determine the nature of the economic value for breeders in maintenance because it does not really need a large area of land, the source of feed is easy to obtain, besides that the advantages of this Sapera goat are fast breeding and relatively high milk production, ranging from 1.5 - 2 liters. per day. In addition, the advantage of this Sapera dairy goat business is that it can provide the availability of community milk and income for farmers. The need for animal protein in Indonesia continues to increase. According to Anonymous (2021), that the average annual per capita milk consumption in 2019 was 2.44 liters/capita/year, in 2020 it was 16.27 liters/capita/year and has increased from 2019. In livestock business goats, of course there are many obstacles that must be faced. The obstacles that must be faced in the maintenance of dairy goats, among others, the emergence of diseases that attack goats. Therefore, health management is one of the most important roles in goat farming. In livestock health management, disease prevention is still the best course of action.

Abstract

Eggs easily experience a decrease in quality caused by physical damage, as well as evaporation of water, carbon dioxide, ammonia, nitrogen, and hydrogen sulfide from inside the egg. This study aims to find out the effect of giving banana peel extract (Musa paradisiaca L). effect on egg shrinkage, egg pH, and percentage of rotten eggs. The data was analyzed using RAL with treatment 4 and repeat 5. In the extract of banana peel by spraying several doses each experiment (4, 8.5, 12, 16) gr / 100 ml. The results of the study for the best value of each variable from 0-14 days are only treated at (P2) with a value (1,57 ± 0,29 ), this indicates that the extract dose of 8.5 gr / 100 ml is better. In this study it can be concluded that egg preservation with the utilization of banana peel extract with the addition of different extracts and storage for 14 days has not been able to inhibit the quality of eggs shown by the value of egg weight shrinkage, egg pH, and percentage of rotten eggs. It can be used as a reference base for future research, and further research is needed on the use of banana peel extract as a utilization of banana skin extract as a preservative of laying breed chickens
