Abstract

This study aimed to determine the knowledge and attitudes of healthy snack children through snake and ladder games in Lubuk Pakam sub-district. This research is a quantitative study with a quasi-experimental design of two groups of the pretest-posttest system. The results showed that by using the statistical test, the value of p = 0.000 <0.05. Based on the pretest and post-test results on 54 students, the average change in knowledge before the intervention was 12.8, and the closest intervention was 15.5. The shift in attitude before the intervention was 10.2, and after the intervention was 12.8. In conclusion, there is the influence of snake and ladder game counseling on healthy snack foods on elementary school children's knowledge and attitudes. Abstract

The frequent occurrence of drug abuse and premarital sex which is indicated from the frequent occurrence of raids on drug cases in Langkat District, the high number of early childhood marriages that still occur. This is compounded by the inactivity of religiously oriented adolescent activities, where previously youth groups tended to be active in empowering adolescents. School is one of the places for adolescent interaction and in one day many teenagers spend their time in school. The form of community facilitation activities with counseling activities, peer education training and mentoring through whatup media groups and also conducting counseling to parents aimed at increasing the knowledge and role of parents as agents of socialization to adolescents, peer education training aimed at increasing the role of adolescents as peer educators and assistance aimed at assisting adolescent peer educators in planning for, and dealing with problems related to the dangers of drugs, HIV/AIDS and reproductive health. An increase in students' knowledge after getting counseling and training about the dangers of drugs, HIV/AIDS and adolescent reproductive health. Suggestions for further activities are the need for traning of trainers for adolescent doctors and assistance in making adolescent health programs.

Abstract

Family Medicinal Plants (FMP) have benefits and properties for the health of the body. However, this plant is only used as a kitchen spice alone without knowing other properties. Thus, then created an innovation or new product from the family medicinal plant. The goal is to find out the benefits of herbal beverage products through Organoleptic tests as the body's immunity during the Covid-19 pandemic for the people of Pulau Sejuk Village. This product is called Jakusema Herbal, which consists of ginger, turmeric, lemongrass, and honey. The research design uses a Pre-Experimental Design type One-Shot Case Study with nine panellists as research subjects. The study parameters used organoleptic and qualitative tests of vitamin C with potassium iodine (betadine) to see whether or not vitamin C was present in herbal beverage products. The results showed the best treatment was P2 treatment with consumer-preferred levels reaching: (1) colour 7,055>6,23 (2) texture 9,475>6,23, (3) taste 28,003>6,23, and (4) scent 7,617>6,23. Based on the results of organoleptic tests obtained that P2 treatment has a real influence on herbal beverage products. Furthermore, herbal beverage products were tested qualitatively. Then, P2 treatment has a higher vitamin C content than other treatments seen from discolouration in the product. Due to time constraints, vitamin C testing is only done qualitatively. It is recommended for further research using quantitative tests so that the data of research results are more detailed and accurate.

Abstract

Coastal communities are people who live and carry out socio-economic activities that depend on coastal resources, one of which is fishermen. The cultural identity of coastal communities as a whole is formed from the culture of fishermen who are directly related to the management of coastal and marine resources. Nutritional problems arise not only from health problems but also influenced by social culture and religion. The design of this study uses quantitative research with a Cross Sectional.The sample is the total population selected by the purposive sampling method, which is 71 students from five schools. The instrument in this study used a questionnaire. Techniques and data processing are carried out by using a computer program to present data in the form of frequency and then the results are presented in the table. It is known that there is a relationship between nutritional status and socio-culture in coastal communities because the nutritional status of school-age children is below the threshold of 25.4%, and 12.7% is very thin. This happens because most parents of students have daily work as fishermen so that the lack of income from parents causes children's nutritional intake to decrease, while seen from the cultural tribes of the coastal community there are more Javanese tribes which result in low nutritional status due to lack of variety in food intake.

Abstract

Overweight and obesity are increasing in Indonesia, and these conditions pose a growing threat to people with non-communicable diseases. This study aimed to show the difference in obesity among respondents who consume snacks compared to respondents who have the habit of eating breakfast with three choices to select from: always, sometimes, or never. This comparison was done to analyze the relationship between breakfast habits and snack consumption. This cross-sectional study collected data using a survey on 26 – 27 November 2021. The sample population included the entire academic community of the Universitas Islam Negeri Sumatera Utara, Medan. The sample was determined by an accidental sampling technique. Research instruments were used in the form of questionnaires, microtoise and weight scales to measure the anthropometrics of height and weight. Descriptive data analysis used normality tests and because the data were not normally distributed, the Kendall and Kruskal Wallis tests were done. The results of this study indicated that 38 respondents have overweight status (17.9%), 36 respondents (17.0%) obesity I, 18 respondents (8.5%) obesity II, and 26 respondents (12.3%) underweight. There was no significant difference in obesity among respondents who have the habit of eating breakfast always, sometimes, and never, with p-value of 0.793.There was a significant difference in obesity among respondents who have the habit of eating snacks never, sometimes, and always with a p-value of 0.014. Although snacking can sometimes lead to obesity, generally the fatting types of snacks consumed are cakes and fried foods. In conclusion, limiting snack foods such as cakes and fried foods can reduce obesity. It is recommended to replace the consumption of these snacks with fruits and vegetables.

Abstract

Stunting is a condition where a person has a height and body length that is less / not in accordance with body conditions in general. The impact of stunting itself is a decrease in learning and cognitive achievement abilities. The World Health Organization or WHO states that around 20% of stunting begins when the baby is still in the womb. This is also caused by the intake of the mother when it is of poor quality and not nutritious, which results in the fetus being malnourished and this is also continuous during the period of stunted growth until the time of birth. The solutions needed to overcome stunting include specific nutrition interventions, namely pregnant women. The purpose of this study is an effort to prevent stunting in pregnant women through a health seminar in Silau Malaha Village. This method of community service is with a pre-test before the class meeting of pregnant women and providing counseling, training and education to pregnant women during their pregnancy is carried out after that a post test is carried out in order to find out the success of the class for pregnant women. The results showed that some of the seminar participants did not know about stunting prevention before the seminar was held, especially for young mothers who had just become pregnant, but after the counseling from the post test results almost all participants knew about stunting prevention after the seminar was held. It is proven by the results of the table obtained from the questionnaire given to the stunting seminar participants.

Abstract

Coronaviruses can cause disease in humans and animals including covid-19, that can spread through droplets from the nose or mouth when coughing or sneezing. Therefore, knowledge and good community behaviour are needed in preventing Covid-19. The purpose of the study was to describe the knowledge and behavior of the Batu Bara community in preventing Covid-19. The research was carried out in August 2020 using an online platform in Batu Bara community. This is a quantitative descriptive method, with a cross sectional research design. The population is residents who live in Batu Bara. As many as 30 respondents were obtained by accidental sampling technique. It was found that the respondent's knowledge were 3 respondents (10%) had poor knowledge in preventing Covid-19. Meanwhile, 29 respondents (96.6%) used masks and hand sanitizers. 26 respondents (86.6%) used antibiotics and 27 respondents (90%) had controlling the environment using disinfectants to prevent Covid-19. Eventhough the covid19 case in Batu Bara was 0%, they still adhered to health protocols and used masks when going out. Good personal healthy life always takes precautions to be free from transmission of the Covid-19 virus, and those who have not behaved according to the recommendations of the Ministry of Health in preventing Covid-19 should improve their behavior in order to suppress the spread of Covid-19 disease

Abstract

Jamur tiram dipilih sebagai bahan baku pembuatan nugget karena memiliki nilai gizi yang baik, sifat fisik yang kenyal menyerupai daging dan rasanya yang enak sangat cocok sebagai pengganti bahan utama pembuatan nugget yaitu daging. Selain itu penggantian bahan baku nugget yang berasal dari bahan hewani diganti menggunakan bahan nabati karena rendah lemak dan tinggi serat. Tepung tapioka memiliki kandungan karbohidrat yang tinggi dan bagus untuk mengatasi masalah pencernaan. Penelitian ini bertujuan untuk mengetahui daya terima nugget jamur tiram putih (Pleurotus Ostreatus) dengan penambahan tepung tapioka. Penelitian ini bersifat eksperimental dengan rancangan acak lengkap (RAL) menggunakan 3 perlakuan. Jenis perlakuan pada penelitian ini adalah penambahan jamur tiram putih 200 gr dengan tepung tapioka 200 gr (perlakuan A), jamur tiram putih 200 gr, tepung tapioka 150 gr (perlakuan B), jamur tiram putih 200 gr, tepung tapioka 50 gr (perlakuan C). Penilaian uji organoleptik dilakukan oleh 25 subjek panelis tidak terlatih. Hasil penelitian menunjukkan bahwa nugget yang disukai panelis dari segi warna, tekstur, aroma dan rasa adalah perlakuan B yaitu penambahan jamur tiram putih 200 gr, tepung 150gr. Perlu disosialisasikan kepada masyarakat tentang substitusi nugget jamur tiram dapat menjadi makanan sehat yang beranekaragam lainnya, serta pemanfaatan tepung tapioka sebagai pengganti bahan karbohidrat dalam pembuatan nugget.

Abstract

Community understanding of clean and healthy living behavior is still lacking, especially in the use of latrines. The research objective was to analyze rural sanitation programs in the use of latrines in Simpang Lancang Village, Bener Meriah Regency. This type of research is descriptive qualitative with a case study design. There were 9 research informants. Data collection techniques with interviews, observation, and visual images. The research results obtained are the community's seriousness in planning the construction of quality, sustainable, and environmentally sound sanitation infrastructure and facilities as well as increasing public awareness of Clean and Healthy Behavior (PHBS). The conclusion of the research is that the rural sanitation program has succeeded in making use of latrines in the village through several important stages of activity starting from the preparation stage, the construction implementation stage, and the post-construction stage. The recommendation of this research is that it is hoped that there will be continuity of programs in the same or other similar forms that are community-based in order to improve public health status

Abstract

Purple Sweet Potato (Ipomea Batatas L.Poiret) is a local plant that has potential as a functional plant that riches in nutrition and active components such as anti-oxidants, anthocyanin. The purple sweet potato also has a lower index of glycemic level until it is suitable for snacks suchs as soes cake. The objective of this research is to formulate the soes cake that has the highest anthocyanin with dragon-fruit jams that are accepted organoleptically. The method of this research is true experiments by the design of Post-Test Only Control Group Design that is analyzed descriptively. This research is conducted by using three ways. There are; levels of development of products that are divided into three levels which are involved in the process of production of purple sweet potato flour, the making of soes cake, and the filling of dragon fruits. Next, it will be tested by acceptance test and the test of anthocyanins contents. The result of this research have obtained the levels of anthocyanins with the sample of 1 gram of sweet potato flour for each content and the dry-base is 113,55 mg/100 grams, the productions of soes cake are 25,63 mg/100 grams and the dragon fruit jams has the anthocyanins levels are 88,67 mg/100 grams. Based on the whole of the acceptance result of soes cake, sweet potato flour is accepted by peoples from the side of colors, flavour, textures, and taste.
