Abstract

Obese is a situation where someone have weight which is heavier than body weight ideally. Consumption enough fiber could prevent obese. There are most fiber in vegetables and fruit. The aim of this research is to know school age children’s vegetables and fruits consumption pattern who experiencing obese at Catholic Elementary School Don Bosko 1 Kupang. The kinds of this research is analitic observational with the cross sectional study. The location of this research conducted at Catholic Elementary School Don Bosko 1 Kupang. Research conducted within six months from July 2010 to January 2011. The size of samples are 19 peoples taken based on the method of purposive sampling. The analysis of data with Fisher exact. The result of this research to indicated that, have the relation between vegetables consumption frequency (p = 0,0369), amount of vegetables and fruits consumption (p = 0,002) with event of obese on school age children. But there are not relation between consumptioned vegetables type (p = 0,351), consumptioned fruits type (p = 0,5603), fruits consumption frequency (p = 0,207) with event of obese on school age children

Abstract

The aim of this observation is for knowing the levels of mother knowledging on breast feeding and pattern of breast feeding for baby in Sikumana District. This research used to survey approach with cross sectional design. The number of sample are 68 samples, consist of ; 34 samples from baby groupes at 0-6 ages month and 34 samples from baby group at 7-12 ages month.The result of the observation mother’s characteristic indicated that 82,35% mother at 20-35 ages, 61,76% educating ≥ 9 ages, 77,94% housewife, 64,71% has enough knowledge on breast feeding. The result for breastfeeding patterns indicated just 2,94% breastfed the children > 20 minutes and breasting infants ≥ 12x/day, 67,65% gave exclusive breastfeeding, 88,24% gives suck by sitting position, 2,94% gives suck by using nipple/glass. the statute of health indicated that 7,35% of mother having the disturbance of health during the last month and 7,35% baby has a poor nutrient.

Abstract

Food is always related to people’s effort or that of household to survive. The problem here is whether people or household can affroad preparing adequate food to fulfill their nutritions need optimally. This research is aimed at finding out factors influencing availabilityof staple food of farmer household in Meotroi Village of Kecamatan Laen Manen of Belu Regency. The research of a analytic survey of a Cross Sectional Design. 78 household have been sampled for the research, by Simple Random Sampling technique. The level of significance is α = 0,1. Each variable is measured by multiple linear regression test to find out factors which influence the avaibility of staple food in the Meotroi is 201.980.060 KCal/year or as much as 1.503,72 KCal/capita/day. It can be concluaded that the avaibility of staple food for farmer household in Meotroi Village is still under Nutritional Adequacy Rate (NAR), which in terms of avaibility rate it is suggested to be 2.200 KCal/capita/day or 2.000 KCap/capita/day in terms consumption rate. Regression test shows that significant variable (p<0,1) to staple food avaibility of farmer household is the number of family members, food production and rice purchases.

Abstract

The aim of this research was to study the consumption pattern and nutrient status of student-athletes in Center of Construction and Sport Practice at Province East Nusa Tenggara. The method of research was a survey method with cross-sectional design study. The research was done in the Center of Construction and Sport Practice for student East Nusa Tenggara Province at Oebufu, from October 2009 until January 2010. Using census, there were 30 athletes had been interviewed. The results showed that the pattern of consumption of athletes was (1) frequency of eating third times a day and snack once a day in the evening, (2) variety of food consumption was classified as good with 7-8 types of food/day, weekly 8-10 types and monthly more than 10 types. The energy sufficiency level of athletes on the average were 73,37% which included insufficient category, which spread in boxing 78,15% (sufficient level), athletics 66,92% (under level), traditional self-defence arts 75,37% (sufficient level), and rattan plaited into a rough ball 65,59% (under level). While the mean of protein sufficiency level of athletes were 64,06% which in under category, which spread in boxing 69,38% (under level), athletics 57,61% (very low level)

Abstract

The processing of tuna fish in East Nusa Tenggara province is still very simple. For this reason, it needs a sort of processing which can increase the economic value and the variety of fishery products as well. One way is to make fish nugget. An experimental study had been applied in this research with steaming time on the fish nugget as treatment of the research. Completely Randomized Design (CRD) was used and there were 4 (four) treatments for the length of steaming time as followed: 15 minutes, 30 minutes, 45 minutes and 60 minutes respectively. Each treatment has 3 (three) times replication. The parameters of the experiment that had been observed were: protein, fat and water content, while the organoleptic test was used in order to know the people acceptance of the product in terms of aroma, colour, and texture. Analysis of variance (ANOVA) and Least Real Different test was used to analyze the observed data. Based on the result of Anova and the Least Real Different test showed that the best treatment on the organoleptic test was on 60 minutes steaming time treatment in terms of aroma, colour, and texture

Abstract

One of the factors which have an important role to increase human resources is giving breastfeeding in the early life of a baby. Babies and children under five years old who get breastfeeding have a low risk of diarrhea compare with those who do not get breastfeeding. Based on the data from the Provincial Health Service Office of East Nusa Tenggara Timur, during January-December 2008, there are 77,741 babies got diarrhea and 16 of them died. The aim of the research is to know the probability of having diarrhea case between babies who got breastfeeding with those who did not have in Puskesmas Bakunase working area during 2009. There were 60 babies have been taken as samples which consisted of 30 babies had diarrhea case and 30 babies were not. Mother’s age, education attainment, outside home job, income, knowledge about breastfeeding, age and nutrition status of the baby were observed as variables in this research. An analytical survey with a retrospective scheme had been used in this research.

Abstract

Tujuan penelitian ini adalah untuk mengkaji tingkat kecukupan energi, protein dan zat besi serta status anemia pada remaja putri di Kelurahan Kabola Kabupaten Alor. Jenis penelitian ini adalah penelitian deskriptif dengan rancangan cross sectional study. Cara penentuan sampel dilaksanakan secara simple random sampling di mana semua individu dalam populasi mempunyai kesempatan yang sama untuk diseleksi sebagai sampel. Total sampel adalah 91 orang. Variabel yang diteliti adalah karakteristik keluarga (Tingkat Pendidikan, Pekerjaan, Pendapatan), pengetahuan, tingkat kecukupan gizi (Energi, Protein dan Fe) dan status anemia. Hasil penelitian menunjukan bahwa sebagian besar responden berumur 18 tahun (27,47%) dengan tingkat pendidikan orang tua sebagian besar berpendidikan SMP (39,56%), dan bekerja sebagai nelayan (58,24%) serta berpendapatan yang termasuk dalam kategori kurang (73,62%). Tingkat pengetahuan gizi remaja putri sebagian besar termasuk dalam kategori cukup (49,45%). Tingkat kecukupan energi, protein dan zat besi remaja putri masih banyak yang berada pada kategori kurang dari normal atau defisit di mana tingkat kecukupan energi mencapai 39,6%, kecukupan protein mencapai 38,5% dan kecukupan zat besi mencapai 36,14%. Status anemia remaja putri menunjukan bahwa 64,83% mengalami anemia yang terdiri dari anemia ringan 38,46%, anemia sedang 17,58% dan anemia berat 8,79%.

Abstract

Iodine is a type of mineral element of the second micro after iron substance which very important to human body. Iodine can be obtained by consuming daily food containing vegetables and meat essences. The research is aimed to discover the the influence of food processing manner towards the contents of iodine in food consumed by babies in the endemic area of gaki in the sub-district of miomaffo barat of ttu regency. A type of descriptive research is used with the method of cross sectional study. The amount of sample is 34 people gathered by means of purposive sampling method. The result of the research shows that (1); Food consumption pattern pervades the type, amount and food distribution frequency of baby which is in good category whereas, 61,76% of respondents possess a variety of sufficient food, the amount of food distributed is in the rate of 0,73-280,58 gr/capita/day and the common frequency of food is 3 times/day (100%), (2); Methods of food processing are; poaching and sauteing 31,83%, frying 26,32%, and dining a dish of raw vegetables and spicy sauce 10,52%, (3).

Abstract

Susu Goreng is a traditional output product of milk from one of the district of Nusa Tenggara Timur province, namely Rote Ndao district, consists of boilded buffalo fresh milk and palm sugar which sells in some industries central in Lobalain sub-district. This research aimed to identify the comparison of nutrient content and organoleptic characteristic of Susu Goreng. To support this research, the methodology used is Descriptive method with One Way Anova Formula and followed by Least Significant Difference (LSD). The sample collected from three biggest industry central of Susu Goreng in Lobalain sub-district: Melati Shop, Maluku Shop, and Letelangga Shop. The collected data consists of carbohydrate nutrient content, Fat, Protein, Water, Ashes, and Calcium, The research taken place at the Chemical and husbandry Food laboratory, Almira Kupang. While the Organoleptic characteristics data of texture, taste, aroma, and color processed at the Public Health Faculty of Nusa Cendana University. The period of time of this research is from September 2010 to February 2011. The result shows that the nutrients content in Susu Goreng, which are carbohydrate, Fat, protein, ashes and calcium of the three industry central mentioned above has least significant different (P>0,05).

Abstract

Meat as a food is a good source of nutrition and prospective. However the meat is very easily damaged if contaminated microbe and will cause poisoning (foodborne diseases) if contaminated pathogen such as Salmonella sp. and Escherichia coli. This research was aimed to analyze the quantity of microbe contamination and identify of Salmonella sp. and Escherichia coli in chicken meat in several marketing areas of Kupang city. While the particular aim is to (1) analyze the quantity of microbe contamination in chicken meat was sold in several marketing areas of Kupang city, (2) identifying the bacteria Salmonella sp. in chicken meat sold in market of Kupang city, (3) identifying bacteria Escherichia coli in chicken meat was sold in market of Kupang city, and (4) to find out the quantity of microbe contamination in chicken meat was sold in three marketing areas. The research design is cross-sectional study using average test to know the differences in the samples, where samples were taken from 3 places of chicken meat market such as Oeba Market, Oebobo Market and Naikoten Market. The data analyse are using a colony counter, anova and the identification.
