Abstract

The results obtained as follows: 400 L didestilasi fermented sap fractionation and at a temperature of 82 °Cdestilat began to drip. At the end of the distillation process, is obtained destilat as much as 86 L 35% ethanol.Then the results obtained diredestilasi returned 36 L 78% ethanol, then the results added lime and then backdidestilasi results obtained is 28 L 96% ethanol. The next Prosess purification with the addition later inanhidrous compounds using zeolite filtration to obtain 99% ethanol. From purified bioethanol chromatogram inFigure 5, shows that the peak that appears only one (single) at the retention time of 3.03 minutes with a 99.5%level. Chromatogram of bioethanol palm juice samples in Figure 5 shows that the peak with retention time of3.02 minutes is the most dominant peak levels of 96.77%. Peak with retention time of 3.02 minutes for thesample destilat similar retention time for bioethanol Purified (3.03 minutes). This shows that the largestcomponent in the sample is ethanol destilat. Peak with retention time 2.45 minutes on the chromatogram image5 (sample bioethanol) with levels of 2.174%, the sample is expected ester compounds. This is supported by theresults of the determination of sample density, higher destilat (0.8288 g/mL) from the weight of pure ethanol(0.79 g/mL). While the results of an infrared spectrophotometer for pure ethanol and the sample obtained asfollows; Based on the spectrum of pure ethanol in Figure 6, shows the existence of prolonged vibration of theOH absorption at 3232.99 cm-1. In the absorption region 2968.71 cm-1 and 2901.11 cm-1 indicate a prolongedvibration of CH of CH2 and CH3. In the absorption region 1450.46 cm-1 showed a prolonged vibration of CH2.Prolonged vibration of the CH3 region is also shown on the uptake 1383.09 cm-1 and 1332.93 cm-1 absorption inthe region 1045.51 cm-1 indicate a prolonged vibration of CO of alcohol.

Abstract

Eichhornia crassipes is a weeds to people. The objectives of this research were to analyze phytochemicalcontent and photoreduction activity. Phytochemical content that analyzed were total phenolic, total flavonoidand condenced tannin. Photoreduction activity were done using reduction of Fe3+ to Fe2+. The highest totalphenolic, flavonoid and condenced tannin were extracted with water in leaves, 26.327, 3.191, 25.300 mg/kgrespectively. Photoreduction activity of enceng gondok decreases Fe3+ concentration from 9,111 to 1,500 ppm.Enceng gondok posses photoreduction activity because it has phenolic, flavonoid and condenced tannincontent.

Abstract

Telah dilakukan penelitian untuk menentukan aktivitas antioksidan dari santan kelapa di Sulawesi Utara. Santan kelapa dibuat dengan cara kelapa dikupas, dibuang kulit coklat yang menempel pada daging kelapa, selanjutnya daging kelapa diparut, diperas, dan disaring. Penentuan kandungan total fenol menggunakan metode Folin-Ciocalteu dan aktivitas antioksidan menggunakan metode serapan radikal 1,1-difenil-2-pikrilhidrazil (DPPH). Hasil Pengujian menunjukkan kandungan total fenol tertinggi terdapat pada SKG sebesar 34,80 mg/Kg diikuti SKH dan SKD dengan nilai 30,03 mg/Kg dan 26,16 mg/Kg. Aktivitas penangkal radikal bebas paling tinggi terdapat pada SKG dengan nilai presentase sebesar 73,48% diikuti SKD dan SKH dengan nilai 58,17% dan 37,88%. Hasil ini menunjukkan bahwa santan kelapa yang ada di Sulawesi Utara berpotensi sebagai antioksidan alami. ABSTRACTA research had been conducted to determine the antioxidant activity of coconut milk in North Sulawesi. Coconut milk is made by coconut peeled, discarded brown skin on the meat of coconut, further shredded coconut meat, squeezed and filtered. The determination of phenolic content was using Folin-Ciocalteu method and the antioxidant activity was done using diphenylpycrylhydrazil (DPPH) radical scavenging. The result showed phenol content was found highest in SKG amounted to 34.80 mg/kg followed by SKH and SKD with a value of 30.03 mg/kg and 26.16 mg/Kg. Highest free-radical scavengers activities found in SKG with a percentage of 73.48% value SKD and SKH followed with a value of 58.17% and 37.88%. These results indicate that the coconut milk in North Sulawesi has potential as natural antioxidants.

Abstract

ABSTRAKIkan laut merupakan sumber makanan penghasil terbesar asam lemak omega-3. Senyawa ini telah banyak dibuktikan memberikan efek positif bagi kesehatan. Telah dilakukan penelitian untuk mengetahui  kadar lemak dan komposisi asam lemak omega-3 pada badan ikan kakap merah (Aphareus furca). Pengujian kadar lemak dilakukan menggunakan metode ekstraksi rendering. Ekstrak minyak ikan yang diperoleh ditransesterifikasi basa menggunakan metode derivatisasi dan diinjeksikan pada alat kromatografi gas. Bagian badan ikan kakap merah mengandung lemak sebesar 0,06%. Kandungan asam lemak omega-3 sebesar 26,8% yang terdiri dari asam linolenat 2,4%, eikosatrienoat 4,3%, eikosapentaenoat (EPA) 0,9% dan dokosaheksaenoat (DHA) 19,2%. ABSTRACTFishes are the biggest food source of omega-3 fatty acids. This compound has been proven to have many positive effects on health. Research has been conducted to determine the fat content and composition of omega-3 fatty acids in the body of red snapper (Aphareus furca). Fat content testing is done using the rendering extraction method. Fish oil extract that was obtained were transesterified base using the derivatization method and injected on a gas chromatography device. The red snapper's body contains 0.06% fat. The omega-3 fatty acid content is 26.8% consisting of 2.4% linolenic acid, 4.3% eicosatrienoic acid, 0.9% eicosapentaenoic acid (EPA) and 19.2% docosahexaenoic acid (DHA).Â
